I don't make these very often because when I do, we just can't stop eating them. Another one of those foods that my family thinks I don't make often enough, but these are real appetite spoilers when even the cook can't refrain herself! I've never had any left over to bring home after a potluck. They are always the first to disappear.

Number Of Ingredients 18

1/3 cup cocoa
2 cups sugar
1 cup butter or 1 cup margarine
4 eggs
1 1/2 cups flour
1 dash salt
1 1/2 cups black walnuts or 1 1/2 cups butter nuts, broken chunks (not chopped)
2 teaspoons vanilla
1 (10 ounce) package miniature marshmallows
1/4 cup butter or 1/4 cup margarine
1/3 cup cocoa
1/3 cup half-and-half or 1/3 cup evaporated milk
3/4 lb powdered sugar
1 dash salt
2 cups sugar
2/3 cup milk
1/2 cup butter or 1/2 cup margarine
2 ounces baking chocolate (may substitute 6 tablespoons cocoa + 2 tablespoons butter, margarine, or shortening)

Steps:

  • Brownies: Melt butter, cocoa and sugar together.
  • Beat in eggs one at a time.
  • Blend in flour, salt and vanilla.
  • Fold in nuts.
  • Bake at 350 deg F for 25 minutes in 12 x 15 jelly roll pan.
  • When removed from oven,[b]while hot[/b], cover completely with miniature marshmallows.
  • Return to oven until marshmallows are soft but not brown.
  • Cool and ice.
  • Frosting# 1: Mix butter, cocoa, cream, powdered sugar and salt.
  • Let brownies set for 12 hours with this icing.
  • Frosting# 2: Bring sugar, milk, butter and baking chocolate to softball stage.
  • Pour over the marshmallows.
  • Sets immediately and may be cut when cool.

These are ridiculously fudgy and rich. It looks even better if you double or triple the amount of marshmallows, but it will be insanely sweet.

6 tablespoons unsalted butter, cut into pieces
2 ounces unsweetened chocolate, chopped
4 ounces bittersweet chocolate, chopped
1 cup sugar
2 large eggs
3/4 cup all-purpose flour
1/2 teaspoon salt
1 cup walnuts, toasted and chopped coarse
3 cups miniature marshmallows
1/2 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F and line a 9-inch square baking pan with nonstick tin foil, crimping to create a 4" 'collar'. Spray with nonstick cooking spray.
  • In a heavy 1 1/2-quart saucepan (or microwave on Medium), melt butter, unsweetened chocolate, and bittersweet chocolate, stirring, until smooth and remove pan from heat. Cool mixture 10 minutes.
  • Stir in sugar. Add eggs, 1 at a time, beating well with a wooden spoon until mixture is glossy and smooth.
  • Mix flour, walnuts and salt separately, then gently stir into chocolate mix.
  • Spread batter evenly in pan and bake in middle of oven 20 minutes.
  • Remove pan from oven and add chocolate and marshmallows evenly over brownies.
  • Bake brownies until marshmallows are puffy and pale golden, 7 to 10 minutes.
  • Remove from oven, quickly swirl just the top chocolate/marshmallow with a skewer.
  • Cool brownies completely in pan on a rack, then refrigerate until firm.
  • Trim edges, then cut into 16 squares with a buttered knife.

1/2 cup sugar
1 tablespoon vanilla
1/2 cup cocoa powder, sifted
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup flour
1 cup marshmallow cream

Steps:

  • Preheat oven to 325 degrees.
  • Prepare a 9x13 pan with cooking spray and flour.
  • In a mixing bowl, combine baking powder, cocoa powder, salt, and flour.
  • In another mixing bowl, combine egg whites, sugar, vanilla, and marshmallow cream.
  • Mix dry ingredients with wet ingredients.
  • Bake for 18 minutes.

DELICIOUS ROCKY ROAD BROWNIES

I first tasted these when my mom used to make them when I was a child, and although that was many moons ago, they still make me feel like a kid when I eat 'em! The melted chocolate drizzle at the end makes these brownies rich and very chocolaty!!

3 ounces unsweetened chocolate
1/2 cup butter or 1/2 cup margarine (I use butter)
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup all-purpose flour
1/2 teaspoon salt
3 tablespoons butter
8 ounces semisweet chocolate pieces
2 cups miniature marshmallows
1/2 cup coarsely chopped walnuts

Steps:

  • For the brownies, melt chocolate and butter in a saucepan over very low heat, stirring constantly.
  • Remove chocolate/butter mixture from heat and stir in the sugar.
  • Beat in the eggs, one at a time.
  • Be sure to mix well.
  • Blend in the vanilla.
  • Combine flour and salt, add to mixture and blend together.
  • Spread the batter into a buttered 9 inch square baking pan.
  • Bake in a pre-heated 350 degree oven for 45-50 minutes.
  • Cool brownies in the pan on a rack for 10 minute.
  • Topping:.
  • While brownies are cooling, melt butter and chocolate in saucepan for topping.
  • Sprinkle brownies evenly with marshmallows and walnuts.
  • Return brownies to oven and bake another 3 minutes.
  • Remove brownies and drizzle with the melted chocolate.
  • Cool in pan, then cut into squares or rectangles.
  • Enjoy!
  • Tip:.
  • If you want to reduce the calories, just cut the marshmallows to 1 cup, and omit the walnuts, but if your gonna eat brownies WHY would ya do that?

3 cups miniature marshmallows
1 1/2 cups chopped pecans
1 (6 ounce) package semi-sweet chocolate chips

Steps:

  • Melt 12 ounce package chocolate chips in medium saucepan over medium-low heat, stirring occasionally; cool.
  • In mixer bowl, beat chocolate mixture, eggs and sugar. Blend in flour, baking powder, salt and vanilla. Spoon into greased 9x13" baking pan.
  • Bake in a preheated 375 degree oven 25 minutes. Remove from oven, sprinkle with marshmallows, pecans and remaining chocolate chips, in that order. Continue baking until golden (15-20 minutes). Cool. Cut with knife dipped in warm water.
