4 tablespoons (1/2 stick) unsalted butter
4 cups chopped yellow onions (2 large)
1/4 cup flour
1/4 teaspoon grated nutmeg
1 cup heavy cream
2 cups milk
3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages)
1 cup freshly grated Parmesan cheese
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper. Transfer the spinach to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot.

2 slices lemon slices
2 slices onion slices
1 teaspoon butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Layer the spinach in the bottom of a 2 quart baking dish. Lay the rockfish atop the spinach. Scatter the tomatoes around the fish. Pour the broth into the dish. Season the fillet with the dill, garlic powder, lemon pepper, onion powder, salt, and pepper. Place the lemon, onion, and butter on the rockfish. Cover the entire dish with aluminum foil.
  • Bake in preheated oven until the fish flakes easily, 20 to 25 minutes.

This recipe is based on a traditional Provençal salt cod and spinach gratin. I use fresh rock fish, like snapper or cod. Fish symbolizes good luck in many cultures, and the greens represent money. The dish tastes rich and creamy, but there is no cream or butter in it.

Number Of Ingredients 11

2 pounds spinach, stemmed and washed thoroughly, or 1 pound baby spinach, rinsed
3 tablespoons extra virgin olive oil
2 tablespoons finely chopped shallot or onion
2 tablespoons all-purpose flour, sifted
2 cups low-fat milk
Salt
freshly ground pepper to taste
1 garlic clove, green shoot removed, finely minced or pureed
Pinch of nutmeg
1 pound snapper or other rock fish fillets
1/4 cup fresh or dried bread crumbs

Steps:

  • Bring a large pot of generously salted water to a boil, and add the spinach. Blanch for 30 seconds, and transfer to a bowl of ice water. Drain and squeeze dry, taking the spinach up by the handful. Chop finely, and set aside.
  • Heat 2 tablespoons of the olive oil in a medium saucepan over medium heat, and add the shallot. Cook, stirring, until tender, about 3 minutes, and stir in the flour. Cook, stirring, for several minutes, until the mixture begins to color slightly. Remove from the heat. Whisk in the milk all at once. Return to the heat, and cook, stirring constantly, until the mixture simmers and thickens. Turn the heat to low, and simmer, stirring or whisking often, for 15 minutes. There should be no floury taste. Add salt and freshly ground pepper to taste, and stir in the garlic and a touch of nutmeg if desired. Stir in the chopped spinach. Taste, and add more salt and pepper as desired.
  • Preheat the oven to 425 degrees. Oil a 2-quart gratin or baking dish. Place the fish fillets in a steamer above 1 inch of boiling water and steam for 5 minutes. Remove from the heat. The fillets should be opaque. Break the fish into small pieces, and remove any bones.
  • Spoon a thin layer of the creamed spinach over the bottom of the dish, and top with the fish in one layer. Season the fish with salt and pepper. Spoon the remaining creamed spinach over the fish. Top with the breadcrumbs. Drizzle on the remaining tablespoon of olive oil. Place in the oven, and bake for 20 minutes until it is sizzling and beginning to brown.

4 5 oz thick pieces of skinless white firm fish fillet (such as grouper, bass or halibut)
1 tablespoons extra virgin olive oil
1 tablespoon salted butter
1 cup red bell pepper chopped
2 cloves garlic minced
9 ounces fresh baby spinach (from two bags)
2 ounces 1/3 less fat cream cheese (I like Philadelphia)
¼ cup half & half cream
3 tablespoons grated Parmesan cheese
kosher salt
fresh black pepper

Steps:

  • In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes.
  • Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
  • Add cream cheese, half & half and parmesan cheese mix well until cream cheese is melted and resembles creamed spinach.
  • Heat a separate skillet on medium high heat, add remaining oil and butter.
  • Season fish on both sides with salt and pepper and place on the hot pan.
  • Cook 6 minutes on first side and flip fish over and cook other side an additional 5 minutes, until cooked through and browned.
  • Divide the spinach mixture on the bottom of each plate and top with piece of fish.

1 lb white mushroom
1 1/2 tablespoons unsalted butter, plus more for buttering the dish
salt
1 lb spinach, stemmed, washed and drained (about 2 bunches)
1 1/4 cups heavy cream
fresh ground black pepper
sea salt

Steps:

  • Clean the mushrooms and cut them into one-eighth-inch slices.
  • In a medium skillet, heat the butter over high heat just until melted, then add the mushrooms and sauté them until golden, about 10 minutes. Drain any liquid from the mushrooms and set them aside.
  • Place 2 quarts of water in a medium stock pot with one-half teaspoons salt.
  • Bring the water to a boil over high heat, then stir in the spinach and blanch for just a few seconds, until wilted and bright green in color.
  • Remove the spinach using a slotted spoon to a large bowl of ice water until cool. Drain the spinach well, squeezing out any excess water.
  • Heat the oven to 350 degrees F.
  • Reduce the cream to one-half cup in a small saucepan over low heat.
  • Strain the cream into a small bowl and season with a pinch each of salt and pepper.
  • Butter a small (2-quart) baking dish, and spread the spinach in the bottom in an even layer.
  • Sprinkle the top of the spinach with one-eighth teaspoons salt.
  • Arrange the mushroom slices over the spinach in a fish-scale pattern.
  • Spoon the cream evenly over the top and bake for 5 to 10 minutes, until heated through. Serve immediately.

⅓ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Place artichokes in the bottom of a 1 1/2 quart baking dish.
  • In a mixing bowl, beat together the cream cheese and butter until smooth. Blend in milk and stir in spinach. Mix together until smooth.
  • Pour into baking dish and sprinkle top with cheese, salt and seasoned pepper; refrigerate for 24 hours.
  • Preheat oven to 350 degrees F (175 degree C), bake for 30 minutes or until heated through. Place under broiler to brown the cheese topping.
