1 package (6 ounces) long grain and wild rice mix
1 medium onion, chopped
1/2 pound sliced fresh mushrooms
1/4 cup chopped celery
2 tablespoons canola oil
1/2 cup chopped pecans, toasted
2 tablespoons minced fresh parsley
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
4 Cornish game hens (20 to 24 ounces each)
2 tablespoons butter, softened
CURRANT SAUCE:
1 tablespoon butter
1/2 cup currant jelly
2 tablespoons lemon juice
1/4 cup cider vinegar
1 tablespoon cornstarch
1 teaspoon salt
3 whole cloves

Steps:

  • Prepare rice according to package directions. In a large skillet, saute the onion, mushrooms and celery in oil until tender. Remove from the heat; add the rice, pecans, parsley, thyme and marjoram. Stuff hens; rub skin with butter. , Place on a rack in a shallow baking pan. Bake, uncovered, at 350° for 30 minutes. , Meanwhile, for sauce, heat the butter, jelly and lemon juice in a small saucepan until butter and jelly are melted. Combine the cornstarch, vinegar, salt and cloves until smooth; add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. , After hens have baked for 30 minutes, baste and bake 30 minutes longer or until juices run clear. Place extra stuffing in a greased 1-qt. baking dish; cover and bake at 350° for 30 minutes.

2 tablespoons honey
2 tablespoons brown sugar
¼ teaspoon ground clove or cinnamon (optional)
2 apples (1 Granny Smith and 1 Red Delicious)

Steps:

  • In a microwave-safe bowl, add ½ cup of butter and 2 tablespoons of honey.
  • Microwave for 20 seconds, or until the butter is melted.
  • Add 2 tablespoons brown sugar and mix with a spoon

1 tablespoon poultry seasoning

6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. 1/2 teaspoon cinnamon
2 rock cornish game hens, halved
1 (6 ounce) box long grain and wild rice blend
salt
2 teaspoons apple jelly
1 1/2 cups red seedless grapes, halved or 1 red apple, cored and coarsely chopped
1/2 cup thinly sliced celery
1/3 cup unsalted cashews

Steps:

  • Combine 1/4 cup of jelly and cinnamon in a small sauce pan.
  • Heat and stir until melted; set aside.
  • Place hen halves, skin side up on a rack in a shallow roasting pan; sprinkle with salt.
  • Roast in 350 degree oven for 20 minutes.

1/2 cup apple cider
1/4 cup apple jelly
1 teaspoon five-spice powder

  • Spray the broiler rack with nonstick spray; preheat the broiler. Broil the hens 7 inches from the heat, skinned side down, 15 minutes. Turn the hens and broil until cooked through, 5-10 minutes more.

4 Cornish game hens
salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
