The Next Best Thing to Robert Redford Dessert is full of layers of creamy, chocolaty goodness on top of a pecan shortbread crust. This throwback to the 70's dessert is a fun choice for parties and potlucks.

1 ¼ cups all-purpose flour
10 tablespoons butter (melted)
1 cup finely chopped pecans or walnuts
8 ounces 1/3 less fat (Neufchatel) or regular cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
16 ounces whipped topping (2 8-ounce containers) (like Cool Whip)
5.1 ounces vanilla instant pudding
5.9 ounces chocolate fudge instant pudding
3 cups milk
¼ cup grated semi-sweet chocolate bar
additional finely chopped nuts (for garnish (optional))

Steps:

  • Preheat oven to 350 degrees F. Coat a 13- x 9-inch baking dish with nonstick cooking spray.
  • In a medium mixing bowl, combine flour, melted butter, and chopped nuts until well combined and crumbly. Press into the prepared baking dish and bake for 20 to 25 minutes, or until lightly golden brown around edges. Remove from the oven and set aside to cool.
  • In a separate bowl, use an electric mixer to beat cream cheese, powdered sugar, and vanilla extract. Fold in 1 container of Cool Whip and stir to combine well. Spread over cooled crust.
  • In a clean bowl, whisk both the vanilla and chocolate pudding mix with 3 cups cold milk. Whisk together until smooth and thickened and spread over cream cheese layer. Spread remaining container of Cool Whip over the top.
  • Cover dish with plastic wrap and refrigerate for at least two hours or overnight. Garnish with the grated chocolate and additional finely chopped nuts, if desired, before serving.

This is my Grandma's recipe for a yummy dessert. Since I don't like using things with preservatives, artificial flavors, ect. I use Trader Joe's instant pudding mixes and Tru Whip brand nautral whipped topping.

1/2 cup butter, softened
1 cup all-purpose flour
1 cup pecans, chopped
8 ounces cream cheese, softened
1 cup powdered sugar
1 (10 ounce) container frozen whipped topping, thawed
2 cups prepared chocolate pudding
2 cups prepared vanilla pudding
chopped pecans and grated chocolate, for garnish

Steps:

  • Preheat oven to 350 degrees. In a large mixing bowl with an electric mixer on medium speed cream butter. On low speed gradually add the flour and mix just until blended. Stir in pecans. Press into a 13 by 9 inch pan and bake for 15 minutes. Let cool completely.
  • In a medium mixing bowl with an electric mixer on medium speed beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread cream cheese mixture over cooled crust.
  • Spread chocolate pudding over cream cheese mixture. Then spread vanilla pudding over chocolate pudding. Then spread the remaining whipped topping over vanilla pudding. Sprinkle with chopped pecans and grated chocolate. Chill for several hours before serving.

3 cups milk
⅛ cup grated semisweet chocolate

Steps:

  • Combine flour, butter, and chopped nuts. Press into the bottom of a 9 x 13 x 2 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes, or until golden brown.

1 c chopped pecans or walnuts
1 c flour
1/2 c softened butter
1 c powdered sugar
8 oz cream cheese softened
1 large tub cool whip thawed
3 1/2 c milk
Two-16 oz packages instant lemon, chocolate or vanilla pudding

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray a 9 x 13 pan with cooking spray. In medium bowl, mix together flour, pecans, and butter to form coarse crumbs. Press firmly into the 9 x 13 pan. Bake in 350 oven for 10-14 minutes until lightly browned. Remove from oven and let cool for 15 minutes or more. You can place this in the freezer while preparing other ingredients.
  • 2. In the same bowl you used for the crust beat together powdered sugar and softened cream cheese with the electric mixer (it is very important that cream cheese is at room temperature or you will get lumps). After it is fluffy fold in 1/2 tub cool whip mixing lightly until combined.
  • 3. After crust is completely cooled, spread cream cheese/cool whip mixture over crust. This is tricky so do it in smooth motions. Put in refrigerator while preparing pudding.
  • 4. To prepare pudding, put both packages of pudding mix in a bowl and whisk in 2 cups cold milk and whip by hand until smooth. Make sure everything is combined well and pudding is very smooth.
  • 5. Spread pudding over cream cheese layer. Top with remaining cool whip. Chop up a few nuts finely and sprinkle over top. Cool in refrigerator for two hours or overnight covered with plastic wrap.

Usually cakes are named for famous people who like them. There's a flourless chocolate cake named after the late queen mother. (It was served to her once at tea in a private house, and, the story goes, she began featuring it at royal parties.) There is even a cake, a genoise layered with kirsch-flavored crème mousseline and strawberries, named after a bandleader, Ray Ventura, who was popular in France just after World War II. This cake was developed by the legendary baker Maida Heatter. Robert Redford was reported to have been wild about a chocolate cake sweetened with honey he ate in a Manhattan restaurant, so Heatter procured the recipe and gave it his name.

1 1/2 sticks unsalted butter, plus additional for greasing pan
Fine breadcrumbs or flour for dusting
1 cup blanched hazelnuts or almonds
12 ounces semisweet chocolate
1/2 cup honey
10 eggs, separated
1/4 teaspoon salt
3/4 cup heavy cream
12 ounces semisweet chocolate

Steps:

  • Preheat oven to 375 degrees. Butter a 10-by-3-inch round or springform cake pan. Line bottom with parchment. Butter parchment. Dust with fine breadcrumbs or flour. Shake out excess.
  • To make cake: Grind nuts to a powder in a food processor. Set aside.
  • Break up chocolate and melt in the top of a double boiler over shallow, warm water on moderate heat. Transfer to a bowl and let cool.
  • Meanwhile, in the bowl of an electric mixer, beat butter until soft. Gradually add honey; beat until smooth. Add egg yolks, two or three at a time, beating until mixed after each addition. (The mixture will look curdled, but it is O.K.) Add nuts and chocolate mixture.
  • In another bowl, beat egg whites with salt until whites barely stand up when the beater is raised. Fold egg whites into chocolate in three batches. Pour into pan. Bake at 375 degrees for 20 minutes. Reduce temperature to 350. Bake for 50 minutes more, until a cake tester comes out clean. Remove and let cool. Remove from pan. With a long sharp knife, level top.
  • To make frosting: Break up chocolate. In a saucepan over medium heat, cook cream until it forms a skin on top. Add chocolate, reduce heat to low and stir with a whisk until smooth. Transfer to a bowl and stir occasionally until cool and slightly thick. Pour icing over cake and smooth top and sides until covered. Serve immediately, or store overnight at room temperature.
