Leggy Peggy told me I had to post more of Robby's secrets...so here's one of my favorite appetizers. The steak fries are drenched in a wonderful roast beef gravy (with a few tidbits of beef) and a yummy cheese sauce. Simple but scrumptious!!! Make this when you have leftover roast beef and gravy.

1 lb frozen french fries, steak-style
1 (12 ounce) can beef gravy, leftovers from your roast works great
1 cup cheese sauce, cheddar (or nacho)
salt and pepper

Steps:

  • You can always use frozen potatoes (baked), canned beef gravy (heated), and canned cheese sauce (heated) but it will be much better if you don't go that route and actually use the home-made stuff.
  • To assemble: Place steak fries on an oblong plate, cover with beef gravy (it's even better if there are bits of beef thrown in) and cheese sauce.
  • Give everyone a fork and knife and let them eat right off the platter. It's great fun! (:.

EASIER FRENCH FRIES - COLD OIL METHOD (COOK'S ILLUSTRATED)



Easier French Fries - Cold Oil Method (Cook's Illustrated) image

These delicious, slender fries have a crisp exterior and a creamy interior, contain 1/3 less oil than traditional methods, and could not be easier to make. Recipe is from Cook's Illustrated (July, 2009) and the method is attributed to Michelin-starred French chef Jöel Robuchon. It skips the usual rinsing and soaking and you only need to fry once. You must use Yukon golds (Russets are too starchy).

2 1/2 lbs yukon gold potatoes, scrubbed, dried, sides squared off, and cut length-wise in 1/4-inch batons (strips) (about 6 medium)
6 cups peanut oil, for frying
kosher salt

Steps:

  • Combine potatoes and oil in large Dutch oven. Cook over high heat until oil has reached a rolling boil, about 5 minutes. Continue to cook, without stirring, until potatoes are limp but exteriors are beginning to firm, about 12-15 minutes.
  • Using tongs, stir potatoes, gently scraping up any that stick, and continue to cook, stirring occasionally, until golden and crisp, 5-10 minutes longer.
  • Using skimmer or slotted spoon, transfer fries to thick paper bag or paper towels. Season with salt and serve immediately.

2 lbs frozen plain French fries
plain flour
1 cup boxed pancake mix
2 cups club soda
1/2 teaspoon black pepper
1/2 teaspoon ground ginger
1/4 teaspoon dry mustard
2 tablespoons seasoning salt

Steps:

  • Prepare batter.
  • Combine seasoning mixture and store in a tightly covered container.
  • Allow 1 teaspoons seasoning for each cup of prepared batter.
  • POTATOES- Without thawing, open bag of fries and dust them lightly but evenly in flour, letting them dry on waxed paper lined cookie sheet for a few minutes.
  • Coat the floured French fries evenly in the batter and fry in small portions at a time in 385 oil at least 2" deep in an electric fry pan.
  • Turn fries once to brown evenly.
  • Remove with tongs to drain on paper towel lined plate.
  • Serve at once.
  • **The batter can be repeated as needed to coat the frozen fries.
  • **Recipe is easily doubled or however much you want to make.
  • FOR FAJITA FRIES-Add 1/2 ts ground cumin in each cup of prepared batter that includes the seasoning mix given above.

Leave that bag of frozen french fries in the freezer because these fries are just about as easy to make. They just might become your new favorite fries. An ice-cold bottle of beer is the perfect side kick.

2 tablespoons extra-virgin olive oil
1 ½ tablespoons seafood seasoning (such as Old Bay®)
1 teaspoon onion powder
½ teaspoon hot sauce
½ teaspoon garlic powder
2 large russet potatoes
1 tablespoon malt vinegar, or to taste
sea salt to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with aluminum foil; spray with cooking spray.
  • Mix oil, seafood seasoning, onion powder, hot sauce, and garlic powder together in a bowl.
  • Cut potatoes into spirals using a spiralizer fitted with a large shredder blade; snip long spirals into smaller lengths.
  • Place potatoes into a large bowl; drizzle with oil mixture. Toss until potatoes are evenly coated.
  • Spread coated potatoes in a single layer onto the baking sheets, leaving 1/4-inch of space between potato spirals.
  • Bake in the preheated oven until bottom of potatoes are browned, 8 to 9 minutes. Flip potatoes with a spatula. Bake until potatoes are browned and crisp on top, about 6 minutes.
  • Sprinkle malt vinegar and sea salt over potatoes.

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

6 Yukon Gold potatoes, cut into thick fries
1 tablespoon white sugar
¼ cup extra-virgin olive oil
1 teaspoon garlic powder, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
  • Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.

You know a potato side dish is going to be good when 75% of the name refers to fat or meat. These super-crusty, oven-fried potato wedges, or 'steak fries' as they call them where I'm from, are done with rendered duck fat, and while I'm a big fan of ones done with olive oil and/or butter, these really are better.

2 large russet potatoes, each cut into 8 thick steak fry-size wedges
1 tablespoon chopped fresh thyme
1 pinch cayenne pepper
salt and ground black pepper to taste
2 tablespoons duck fat, melted, or more to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil.
  • Place potato wedges in a bowl; sprinkle thyme, cayenne, salt, and black pepper over the top. Drizzle melted duck fat over potatoes and toss to coat.
  • Transfer potatoes, skin-side down, to the prepared baking sheet. Season wedges again with salt.
  • Bake in the preheated oven for 40 minutes. Increase oven temperature to 450 degrees F (230 degrees C). Turn potatoes onto their sides and bake for 10 minutes. Flip over and cook on the other side until golden brown, about 10 minutes more.
