Steps:
- Preheat the oven to 475 degrees F.
- Toss the potato wedges with the olive oil, garlic powder, salt and pepper in a bowl. Lay the potatoes on a baking sheet and cook until golden brown on each side, flipping halfway through, about 12 minutes per side. When both sides are golden and the potatoes can be pierced easily with a fork, the taters are done.

Steps:
- To prepare your vegetables:
- Preheat the oven to 200°C/400°F/gas 6. Halve and deseed the pepper, then cut each half into 4 pieces. Peel the red onion and cut into 8 wedges. Carefully cut the squash in half then scoop out and discard the seeds. Cut each half into 2cm chunks. Wash and trim the baby leeks. Halve the courgettes lengthways then slice into 2cm chunks. Top and tail the aubergine, cut it into quarters, then into 2cm chunks. Quarter the tomatoes. Leave the cloves of garlic in their skins but squash them with the heel of your hand.
- Put all the veg in an extra large roasting tray, or 2 smaller ones. Crush the coriander seeds in a pestle and mortar then scatter over the veg with a good pinch of salt and pepper. Pick and roughly chop the rosemary leaves. Pick the thyme leaves. Scatter all of the herbs over the veg. Drizzle it all well with olive oil, then toss to coat.
- To cook and serve your vegetables: Roast your veg in the hot oven for around 50 minutes, or until soft, golden and cooked through. Serve with anything from roast chicken to grilled meats or fish, or try tossing with pasta or couscous for a simple veggie meal.
- Jamie's top tips:
- If the vegetables seem crowded in a single roasting pan, divide them between two. Overcrowding the pan will stop enough heat getting to the vegetables and they will steam rather than roast.
- Turning the vegetables as they roast helps them to cook evenly. If you're using two roasting pans, swap them round half way through cooking. Roasting is a great way to make veg taste delicious, and it works for just about any combo - just make sure your oven is fairly hot, the veg are roughly the same size and that they get a good stir every now and again.
- You can also make this ahead of time and eat it cold - it's just as delicious!

Steps:
- Gather the ingredients. Preheat the oven to 400 F.
- Trim and peel the onions, removing and discarding their stem and root ends along with their papery peels. You can leave the smallest onions whole, but you will want to cut most onions into halves or quarters, depending on how big they are. Bigger than bite-size is fine, but you don't want diners wrestling with giant whole onions that are tricky to cut.
- Put the onions in a large baking dish (they should easily fit in a single layer for the best, most even roasting).
- Drizzle the onions with the oil and toss to coat them thoroughly and evenly. If you've cut them, arrange the onions so the cut-side is down, facing the pan (this will help them brown nicely).
- Sprinkle the onions with salt (sprinkle from a few inches above the onions so the salt falls more or less evenly over them).
- Bake the onions, turning them once or twice if you think of it until they're completely tender to the bite and browning on the edges-about 30 minutes total.
- Drizzle the onions with vinegar before serving, if you like. Start with a smaller amount of vinegar and add more to taste if you like the effect.

HERB-ROASTED ONIONS
Steps:
- Preheat the oven to 400 degrees F.
- Remove the stem end of each onion and carefully slice off the brown part of the root end, leaving the root intact. Peel the onion. Stand each onion root end up on a cutting board and cut the onion in wedges through the root. Place the wedges in a bowl.
- For the dressing, combine the lemon juice, mustard, garlic, thyme, salt, and pepper in a large bowl. Slowly whisk in the olive oil. Pour the dressing over the onions and toss well.
- With a slotted spoon, transfer the onions to a sheet pan, reserving the vinaigrette that remains in the bowl. Bake the onions for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking. Remove from the oven, and drizzle with the reserved dressing. Sprinkle with parsley, season to taste and serve warm or at room temperature.
ROASTED ONION TARTS
Yield Makes 16 tarts
Number Of Ingredients 5
Steps:
- Preheat oven to 425° F. and lightly grease 2 large baking sheets.
- Slice enough of red and yellow onions to measure 5 cups each and in a large skillet cook in 3 tablespoons oil with salt and pepper to taste, covered, over moderate heat, stirring occasionally, until golden and tender, about 15 minutes. Stir in cream and cool.
- Trim remaining onions and cut lengthwise into sixths, keeping wedges intact, and arrange, narrow sides up, 1/2 inch apart on baking sheets. Sprinkle onion wedges with salt and pepper to taste and roast in middle and lower thirds of oven 20 minutes, or until tender. Cool onion wedges.
- On a lightly floured surface with a lightly floured rolling pin roll out 1 pastry sheet into a 13-inch square. Using an inverted 6-inch plate as a guide, cut out four 6-inch rounds, discarding scraps. Cut out 12 more rounds from remaining 3 pastry sheets in same manner to make a total of 16 rounds.
- Fold in edge of each pastry round to form a 1/4-inch-wide border. (If pastry becomes too soft to work with, chill until firm.) Transfer rounds to 2 large baking sheets and chill until firm, about 10 minutes. Top each round evenly with a scant 1/4 cup sliced onion mixture. Arrange roasted onions on their sides decoratively (alternating yellow and red) on top of tarts and season with salt and pepper. Bake tarts in middle and lower thirds of oven, switching positions of pans halfway through baking, 20 to 25 minutes, or until bottoms are golden brown and roasted onions are very tender. Transfer tarts to racks to cool. Tarts may be made 1 day ahead and chilled, covered loosely with plastic wrap. Bring tarts to room temperature before serving or heat in a preheated 350° F. oven until heated through.
- Brush tarts with additional oil and serve whole or halved.
