1 medium zucchini, sliced
2 -3 medium potatoes, sliced or diced
1 lb fresh green beans
1 medium onion, diced or sliced
3 -4 carrots, sliced
2 tablespoons minced garlic
2 -4 tablespoons sesame oil (More or less to your taste)
Italian dressing (again, to taste)
pepper
salt

Steps:

  • In a large bowl, put all of your vegetables, onion, garlic, salt and pepper.
  • Add the sesame oil and enough Italian Dressing to coat the vegetables well.
  • Let the vegetables marinate for 15-30 minutes, then place the vegetable and marinade into a large baking dish in a 350 degree oven and roast until the vegetables are cooked through and are soft.
  • These are great served over basmati rice.
  • Option: You can cook the vegetables on an outdoor grill rather than in the oven.
  • Use the left over marinade from the bowl to baste the vegetables while they are cooking.

12 asparagus spears, cut into 2 inch pieces
4 plum tomatoes, quartered
1 carrot, cut into 1/4 inch thick rounds
1 fennel bulb, cut into eight chunks, reserve the fronds
1 tablespoon extra virgin olive oil
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
6 cups baby spinach leaves, washed and spun dry
Sesame-citrus Vinaigrette:
2 tablespoons lemon juice
2 tablespoons sesame oil
3 tablespoons extra virgin olive oil
1 tablespoon soy sauce
1/2 teaspoon freshly grated ginger
1 shallot, minced
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons white sesame seeds, lightly toasted

Steps:

  • Preheat oven to 350°F. Arrange the asparagus, tomatoes, carrot rounds and fennel chunks in a single layer on a large baking sheet. Drizzle the vegetables with olive oil, salt and the pepper. Using your hands, toss the vegetables to evenly coat. Roast in the oven for 15 minutes. Place the spinach leaves in a large bowl. Immediately stir the hot roasted vegetables into the spinach to wilt the spinach slightly. To prepare the dressing, in a small bowl whisk together the lemon juice, oils and soy sauce until well combined and slightly thickened. Stir in the ginger, shallot, honey, salt pepper and sesame seeds. Pour the dressing over the vegetables in the bowl and gently toss to coat. Evenly divide the salad onto serving plates and garnish if desired with the reserved fennel fronds.

250g pumpkin
300g orange sweet potato
1 large red capsicum
500g baby red or new potatoes
8 small onions
1 Tbsp olive oil
2 cloves garlic, crushed
1 Tbsp honey
2 Tbsp sesame seeds, toasted
1 Tbsp fresh rosemary sprigs
Cracked black pepper

Steps:

  • Preheat oven to 200C or 180 C if fan-forced. Peel pumpkin and cut into large pieces. cut sweet potato into large pieces. Remove seeds and membrane from the capsicum and cut into large pieces. Toss the prepared vegetables together with the potatoes and onions in a large baking dish. Drizzle the combined oil, garlic and honey and toss to combine. Bake for 30 mins or until the vegetables are tender. Remove from oven and sprinkle with sesame seeds and rosemary sprigs. Season with cracked black pepper.

3 tablespoon(s) olive oil
4 tablespoon(s) fresh lemon juice
2 teaspoon(s) oriental sesame oil
4 teaspoon(s) soy sauce
3 tablespoon(s) vegetable oil
4 teaspoon(s) sesame seeds, toasted
1 teaspoon(s) ground ginger
1/2 teaspoon(s) minced garlic
pinch(es) sugar

Steps:

  • In a bowl, toss the broccoli with the olive oil until it is coated well. Roast in a jellyroll pan at 500 degrees, turning it occasionally with tongs, for 10-12 minutes or until crisp tender.
  • While the broccoli is roasting, in a blender or food processor, blend the lemon juice, sesame oil, soy sauce, vegetable oil, sesame seeds, ginger, garlic and sugar until the dressing is smooth.
  • Transfer broccoli to a serving dish and pour the dressing over it.
