WORLD'S GREATEST VEGETABLE BROTH
This makes a broth that is slightly thick with a rich color and full flavor. The broth can be frozen in one or one and a half cup blocks for later use. This recipe also leaves you with a bowl full of delicious cooked vegetables, I love to snack on them cold.

- Preheat oven to 450 degrees F (230 degrees C).
- Remove leaves and tender inner parts of celery and set aside.
- Toss onions, carrots, tomatoes, bell peppers and turnips with olive oil. Place vegetables in a roasting pan and place them in the 450 degrees F (230 degrees C) oven. Stir the vegetable every 15 minutes. Cook until all of the vegetables have browned and the onions start to caramelize, this will take over one hour.
- Put the browned vegetables, celery, garlic, cloves, bay leaf, pepper corns, Italian parsley and water into a large stock pot. Bring to a full boil. Reduce heat to simmer. Cook uncovered until liquid is reduced by half.
- Pour the broth through a colander, catching the broth in a large bowl or pot. The liquid caught in the bowl or pot is your vegetable broth it can be used immediately or stored for later use. Although the vegetables are no longer necessary for your broth they are delicious to eat hot or cold, don't waste them!

- Preheat oven to 400 degrees F (200 degrees C).
- Cut the top off the head of garlic. Arrange the garlic, carrots, celery, onion, pepper, and tomato on a large baking sheet in a single layer. Drizzle the olive oil over the vegetables; season with salt and pepper.
- Roast the vegetables in the preheated oven, turning every 20 minutes, until tender and browned, about 1 hour.

- Line two 15x10x1-in. baking pans with foil; coat the foil with cooking spray. Place eggplant, zucchini, peppers, mushrooms, potatoes and leek on pans; generously coat with cooking spray. - Preheat the oven to 400°F (200°C).
- In a large roasting pan, combine the onions, onion peels, carrots, celery, and garlic cloves.
- In a small bowl, mix together the miso paste and 1/3 cup of water. Stir this into the vegetables, coating them lightly.
- Roast, tossing the vegetables once or twice during cooking, until everything is brown, fragrant, and toasty, 45 to 60 minutes. Keep a close eye on the vegetables towards the end so as not to let them take on a scorched taste.☞TESTER TIP: If your vegetables look like they're drying out or the miso is beginning to burn, drizzle an additional 1/3 cup water over the vegetables while they are roasting.
- Pile the roasted vegetables and aromatics in a large pot. Add the shiitake, rosemary, thyme, bay, peppercorns, and kombu, and then pour a little of the 3 quarts of water into the roasting pan, scraping up the caramelized bits stuck to the pan, then pour all that into the saucepan. Add the remaining water.
- Bring to a boil, and then reduce the heat and simmer, partially covered with a lid, until the broth is a deep brown color and has a rich flavor, 45 to 60 minutes
- Pour the broth through a sieve into a heatproof bowl and let cool.
- Cover and refrigerate and use as necessary. It will keep for up to 1 week in the fridge or can be frozen for up to 3 months.

- Heat oven to 450°F.
- Toss the vegetables with the olive oil, until gently coated.
- Place the vegetables in a roasting pan or on a foil-lined baking sheet and roast for about half an hour, turning them occasionally (They should be nicely browned and very aromatic).
- Place all the vegetables in a large pot, scraping all the good brown stuff from the roasting pan into the pot with the herbs and peppercorns.
- Fill with water and place on the stovetop on medium high heat.
- Bring to a boil, lower the temperature, and boil gently for 2-3 hours (watch the water level--if it boils down too much, add more water).
- Strain, pressing down on solids to extract as much liquid as possible; discard the solids and place the remaining liquid in a sauce pan.
- Simmer until reduced by three quarters; this could take about an hour.
- You should end up with about one and a half to two quarts of stock.

- Preheat oven to 450°F.
- Place vegetables and mushrooms in a large, unlined roasting pan and toss lightly with olive oil, spreading them out evenly in the pan in a single layer. Roast for 20 to 30 minutes. Transfer to slow cooker and turn heat to Low (or 8 to 10 hours). Add tomato paste, herbs, peppercorns, optional cheese rind, salt and water.
- Add wine to the still-very-hot roasting pan and deglaze, scraping up as much of the browned vegetables bits as you can, and simmer until most of the wine has evaporated. Add everything - bits and juices - to the slow cooker and give the stock a quick stir. Cover and cook the stock for 8 to 10 hours on Low.
- Scoop the vegetables into a sieve or fine-mesh colander, and drain the vegetables into a large bowl, pressing firmly on the vegetables to extract every last drop of juice. Remove the spent vegetables to another container (or discard). Then strain the liquids from the slow cooker through a fine sieve into the large bowl, too.
- Use the strained broth immediately, store in the fridge for one week, or freeze for up to 4 months.

- Preheat oven to 400 degrees F.
- In a large bowl toss the oil with onions, carrots, garlic, leeks and arrange them in a roasting pan.
- Place pan in oven and roast, stirring once, for 45 minutes or until golden brown and tender.

ROASTED VEGETABLE STOCK
Steps:
- Put oven rack in middle position and preheat oven to 425°F.
- Toss together mushrooms, shallots, carrots, bell pepper, garlic, parsley and thyme sprigs, and oil in a flameproof roasting pan. Roast, stirring occasionally, until vegetables are golden, 35 to 40 minutes.
- Transfer vegetables with a slotted spoon to a 4-quart saucepan. Straddle roasting pan across 2 burners, then add wine and deglaze pan by boiling over moderate heat, stirring and scraping up brown bits, 1 to 2 minutes. Transfer to saucepan and add bay leaf, tomatoes, water, and salt. Bring to a boil, then reduce heat and simmer, covered, stirring occasionally, 45 minutes. Pour stock through a large fine-mesh sieve into a bowl, pressing hard on and then discarding solids.
BASIC RECIPE: ROASTED VEGETABLE STOCK
Steps:
- Preheat oven to 400 degrees. Place the onion, mushrooms, tomatoes, carrot and garlic, and any other vegetables, in a roasting pan. Drizzle with the grapeseed oil and toss to coat the vegetables. Place in the oven, uncovered, and roast for about 45 minutes, stirring occasionally. Watch the vegetables so they don't char (the leek greens will be especially vulnerable.) You are looking for browning and caramelization, not burnt. If some of the vegetables start to char before the others are done, remove them from the roasting pan.
- When the vegetables are done, remove from oven and scrape into a 4-quart sauce pan or Dutch oven. Place the roasting pan over a burner (or two, depending on the size of your pan) and add the wine. Bring to a simmer and deglaze the pan, scraping up any stuck bits. Empty the contents of the roasting pan into the pot with the vegetables and add 6 cups of water, the bay leaves and peppercorns. Bring to a simmer and cook gently for about 1/2 hour or so.
- Strain through a cheesecloth-lined sieve and use as needed.

- Preheat the oven to 425° F. In a large roasting pan, toss together first 5 ingredients. Add in 4 parsley springs and 3 thyme sprigs. Drizzle olive oil over the veggies, and stir to coat. Roast in 425° oven for 30 minutes, stirring occasionally.
- Take roasted veggies, and place them in a large stock pot. Add remaining parsley and thyme, peppercorns, bay leaf, leeks, and any other veggie bits. Cover with cold clean filtered water. Cover pan, and bring to a boil. Reduce heat, and simmer with the lid slightly ajar stirring occasionally, for about 60 minutes, or until the veggies are soft.
- Strain the broth through a fine mesh sieve to remove all the solids. If you want a super fine clear stock, run the strained broth through a wet coffee filter. Add salt. It may not taste as salty as you’re used to, but it will add good flavor to whatever you’re making. And, if you’re eating it straight, adjust salt and pepper to taste.
- Store the broth in the fridge, or if you aren't going to use it right away, store it in the freezer. It can be frozen in ice-cube trays, and then toss those broth cubes in a large plastic bag.
