Roasted Vegetable Bowl with White Beans and Garlic-Balsamic Dressing image

This recipe, which appeared in Allrecipes magazine's Dec/Jan 2020 issue, comes from Ellie's new cookbook, "Whole in One: Complete, Healthy Meals in a Single Pot, Sheet Pan, or Skillet." Potatoes, zucchini, and dressing can be made up to 3 days ahead and chilled in separate airtight containers.

¼ cup pine nuts
1 ¼ pounds Yukon Gold potatoes, cut into 1-inch cubes
4 cloves garlic, unpeeled
¼ cup olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground black pepper, divided
2 zucchini, quartered and cut into 1-inch slices
1 ½ teaspoons chopped fresh rosemary
1 tablespoon balsamic vinegar
1 (15 ounce) can cannellini beans, drained and rinsed
3 cups baby arugula
1 cup grape tomatoes, halved

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Spread pine nuts on a sheet pan; roast until golden and fragrant, 2 to 3 minutes. Transfer to a plate to cool.
  • Put potatoes and garlic on the sheet pan. Drizzle with 2 tablespoons oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Bake 20 minutes. Add zucchini and rosemary, toss, then continue roasting until vegetables are tender and browned, about 20 minutes. Let cool.
  • Squeeze roasted garlic out of its skin into a small bowl, mashing it slightly with a fork. Add remaining 2 tablespoons oil, balsamic vinegar, and remaining 1/4 teaspoon each salt and pepper; whisk to combine.
  • Toss roasted potatoes and zucchini in a large bowl with beans, arugula, tomatoes, and dressing. Serve in bowls sprinkled with toasted pine nuts.

10 medium potatoes, peeled and cubed, or more to taste
4 large carrots, peeled and cut into 1/2-inch chunks
1 medium onion, cut into 1/4-inch slices
⅓ cup balsamic vinegar
¼ cup unsalted butter, melted
8 sprigs fresh thyme
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Mix potatoes, carrots, onion, balsamic vinegar, butter, thyme, garlic, salt, and pepper together in a large glass bowl. Spread mixture into the prepared pan in an even layer. Cover with foil.
  • Roast in the preheated oven, giving the pan a shake every 15 minutes to ensure even cooking, for 45 minutes.
  • Remove foil and continue to roast, uncovered, stirring occasionally, for another 30 minutes.

2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
3 garlic cloves, pressed
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped fresh basil
2 large red onions, halved, thinly sliced
1 yellow bell pepper, cut into 1/2-inch-wide strips
1 red bell pepper, cut into 1/2-inch-wide strips
1 orange bell pepper, cut into 1/2-inch-wide strips
1 1-pound eggplant, quartered lengthwise, cut crosswise into 1/2-inch slices
1/2 pound yellow squash (about 2 medium), cut into 1/3-inch-thick rounds
1/2 pound zucchini (about 2 medium), cut into 1/3-inch-thick rounds
Coarse kosher salt

Steps:

  • Whisk vinegar and mustard in medium bowl. Gradually whisk in oil. Stir in garlic, thyme, and basil. Season to taste with salt and pepper. DO AHEAD: Dressing can be made 1 day ahead. Cover and chill.
  • Preheat oven to 450°F. Toss onions and next 6 ingredients in large bowl; sprinkle with coarse salt and pepper. Add dressing; toss to coat. Divide between 2 large rimmed baking sheets. Roast until vegetables are tender and slightly brown around edges, about 35 minutes.

For Balsamic Vegetables:
Cooking spray
1 tbsp balsamic vinegar
1 tsp dijon mustard
2 cloves crushed garlic
1 tsp dried Italian herbs
1 tsp kosher salt
2 tbsp olive oil
2 cups broccoli florets
8 oz sliced mushrooms
1 seeded and cut into 1" pieces red bell pepper
1 cut into ¼" thick rounds medium zucchini
1 cut into ¼" thick rounds medium yellow squash
1 pint halved dry cherry tomatoes
1 cut into 1" pieces red onion
For Pasta:
⅓ cup or homemade skinny Basil Pesto Delallo pesto
½ lb Delallo fusilli
15 oz (1can), drained and rinsed cannellini beans
¼ cup freshly grated parmesan cheese
Drizzle balsamic vinegar
for serving, optional red pepper flakes

Steps:

  • Preheat oven to 425 degrees F.
  • Spray 2 sheet pans with cooking spray. Set aside.
  • In a small bowl, whisk together balsamic vinegar, mustard, garlic, Italian herbs, and 1 teaspoon salt.
  • Add 2 tablespoons oil and whisk until emulsified.
  • In a large bowl, add vegetables, and dressing and toss to evenly coat.
  • Spread vegetables out in an even layer onto prepared sheet pans.
  • Roast for 30 minutes, tossing halfway through.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Add pasta and cook according to the package directions, reserving a little water before draining.
  • Combine the cooked pasta, pesto and beans adding 2 tablespoons of the reserved water as needed, toss with the roasted veggies, 1/4 cup parmesan and toss well to coat.
  • Drizzle with balsamic vinegar and top with red pepper flakes, if using.
  • Serve hot, cold or at room temperature.

8 ounces Brussels sprouts, trimmed and halved
1/2 medium butternut squash, peeled and diced
8 ounces carrots, peeled and cut on the bias into 1-inch slices
8 ounces fingerling potatoes, halved
1 head garlic, cloves separated and left unpeeled
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup vegetable broth
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons honey
2 teaspoons country Dijon mustard (see Cook's Note)
1 teaspoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • For the roasted vegetables: Preheat the oven to 400 degrees F.
  • In a large bowl, toss the onions, sweet potatoes, Brussels sprouts, butternut squash, carrots, fingerling potatoes and garlic with the oil, salt and pepper on a large jelly roll pan. Spread the vegetables in an even layer and roast, stirring once halfway through, until tender, 40 to 45 minutes. Remove the garlic from the skins before serving.
  • For the glaze: Meanwhile, in a small saucepan, combine the vegetable broth, oil, vinegar, honey, mustard, lemon juice and some salt and pepper. Cook over low heat until the glaze is reduced by half, about 10 minutes. Serve over the vegetables or as a dipping sauce.
