ROASTED VEGETABLE & QUINOA HARVEST BOWLS

Roasted Vegetable & Quinoa Harvest Bowls image

Hearty and flavorful harvest bowls with roasted vegetables, quinoa, and a creamy, 3-ingredient tahini dressing! A healthy, plant-based, gluten-free meal!

Provided by Minimalist Baker

Categories     Entree

Time 30m

Number Of Ingredients 15

4 medium whole carrots ((peeled and quartered // large pieces halved))
1 1/2 cups quartered baby yellow potatoes
2 Tbsp maple syrup ((divided))
2 Tbsp olive oil ((divided))
1 healthy pinch each sea salt + black pepper
1 Tbsp chopped fresh rosemary ((or dried))
2 cups halved Brussels sprouts
1 cup white quinoa (well rinsed + drained)
1 3/4 cups water
1 pinch sea salt
1/2 cup tahini
1 medium lemon, juiced ((yields ~3 Tbsp or 45 ml as original recipe is written))
2-3 Tbsp maple syrup
Fresh herbs (parsley, thyme, etc.)
Pomegranate arils

Steps:

  • Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (or more baking sheets if increasing batch size).
  • Add the carrots and potatoes to the sheet and drizzle with half of the maple syrup, half of the olive oil, the salt, pepper, and rosemary (as original recipe is written, 1 Tbsp maple syrup and 1 Tbsp olive oil // adjust if altering batch size). Toss to combine. Then bake for 12 minutes.
  • In the meantime, heat a saucepan over medium-high heat. Once hot, add rinsed quinoa to lightly sautée before adding water to evaporate leftover moisture and bring out a nutty flavor.
  • Cook for 2-3 minutes, stirring frequently. Then add water and a pinch of salt. Bring to a low boil over medium-high heat. Then reduce heat to a simmer and cover. Cook for 18-22 minutes or until liquid is absorbed and quinoa is fluffy. Then open lid and fluff the quinoa with a fork. Tilt the lid, remove from the heat, and set aside.
  • When the veggies are at the 12-minute mark, remove pan from the oven and add the Brussels sprouts. Top with remaining 1 Tbsp olive oil, 1 Tbsp maple syrup, and another pinch each salt and pepper (amounts as original recipe is written // adjust if altering batch size). Loosely toss to combine.
  • Return pan to oven and roast for 10-12 minutes more or until Brussels sprouts are golden brown and the carrots and potatoes are fork tender. (This ensures that the potatoes and carrots are cooked through and the Brussels don't get too soft.)
  • Lastly, prepare dressing by adding tahini, lemon juice, and maple syrup to a small mixing bowl and whisking to combine. Add 2 Tbsp (30 ml) warm water at a time and whisk until thick but pourable. Taste and adjust flavor as needed, adding more maple syrup for sweetness or lemon juice for acidity.
  • To serve, divide quinoa and vegetables between serving bowls and top with a generous drizzle of tahini sauce. Top with garnish of choice, such as pomegranate arils or fresh herbs.

FARRO AND ROASTED VEGETABLE GRAIN BOWLS

Farro and Roasted Vegetable Grain Bowls image

I love this grain bowl because I can prep each component of the recipe-the cooked farro, roasted vegetables and vinaigrette-in advance, and hold them separately in the refrigerator. When it's time to eat, it's as easy as putting all the components together and serving! It's equally as delicious served cold as a salad or reheated as a grain bowl. If I want some protein, I can easily serve it up with some roasted salmon, shredded rotisserie chicken or even a fried egg but it also works great as a side dish. This recipe also travels well since it can be served cold, room temperature or hot, so it's the perfect addition to your next picnic or outdoor gathering.

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 14

2 1/2 cups 1-inch-diced winter squash, such as acorn, kabocha or butternut (about 10 ounces)
1 large red bell pepper, seeded and cut into 4 planks
1 medium bulb fennel, cored and cut into 1/4-inch slices, fronds reserved
1/4 cup plus 2 teaspoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 bunch greens, such as dandelion, kale or chard, cut into 1-inch pieces (about 4 cups packed)
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
2 teaspoons honey
2 teaspoons Dijon mustard
2 1/2 cups farro recipe follows
1/2 cup crumbled feta
Kosher salt
1 1/2 cups farro (about 9 ounces)

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the squash, bell pepper and fennel each in their own section on a baking sheet. Drizzle with 2 tablespoons of the olive oil and sprinkle with 1 teaspoon salt and 1/4 teaspoon black pepper. Toss the vegetables to coat them, keeping each in its own section. Roast for 20 minutes.
  • Meanwhile, toss the greens with 2 teaspoons of the olive oil, 1/2 teaspoon salt and a pinch of black pepper on another baking sheet. Set aside.
  • After 20 minutes, remove the roasted vegetables and flip them over. The vegetables will be brown on the first side and almost tender. Place back in the oven along with the greens and roast until the greens are wilted and the vegetables are completely tender but still hold their shape, about 10 minutes more. Let cool.
  • While the vegetables cool, make the vinaigrette. Whisk together the orange and lemon juice, honey, Dijon and 1/2 teaspoon salt in a small bowl. Slowly stream in the remaining 2 tablespoons olive oil while whisking until the dressing is emulsified. Store the dressing in an airtight container in the refrigerator for up to 1 week.
  • Once cooled, dice the roasted peppers and fennel into 1/2-inch pieces. In a medium bowl, toss together the roasted vegetables, greens, Big Batch Farro and vinaigrette. At this point you can store the mixture in an airtight container in the refrigerator for 2 to 3 days. When ready to serve, add to a serving bowl and top with the feta, fennel fronds and freshly cracked black pepper to taste.
  • Bring a large pot of water (about 3 quarts) to a boil and add 2 tablespoons salt; the water should be well seasoned like you are cooking pasta. Pour in the farro and stir. Lower the heat slightly so the water is at a rapid simmer. Cook the farro until tender with a slight chew, 13 to 15 minutes. Immediately drain the farro and run under cold water to cool completely. Drain again to remove excess liquid. Makes 4 cups.

ROASTED VEGETABLE DIRT BOWL

Roasted Vegetable Dirt Bowl image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 18

1 pound shishito peppers
1 pound baby bell peppers
2 tablespoons olive oil
Kosher salt
Watermelon radish, cut into batonettes or sticks, sugar snap peas, cherry tomatoes or other vegetables of your choosing for the "vegetable garden"
Fennel fronds, for garnish
1 cup clarified butter or ghee
1/2 cup pitted black olives
1/4 cup unsweetened cocoa powder
1 ounce dried seaweed
2 cloves garlic
Kosher salt
4 cups panko breadcrumbs
1 package firm tofu, drained and patted dry
2 tablespoons Dijon mustard
2 tablespoons soy sauce
2 tablespoons olive oil
Kosher salt

Steps:

  • For the vegetables: Preheat a pizza oven or regular oven to 350 degrees F.
  • Add the shishitos and baby bell peppers to a baking sheet, drizzle with the olive oil, sprinkle with salt and toss to combine. Roast, flipping halfway, until slightly charred on all sides, about 15 minutes.
  • For the "dirt": Add the butter, olives, cocoa powder, seaweed, garlic cloves and salt to taste to a blender and process until fully blended. Pour over the panko in a large bowl and thoroughly mix until combined and the breadcrumbs look like "dirt". Pour this mixture onto a silicone mat-lined sheet tray. Bake until dried out and crunchy, about 20 minutes.
  • For the tofu sauce: Meanwhile, add the tofu, Dijon, soy sauce and olive oil to a blender and blend until smooth and the consistency of mayonnaise. Season with salt to taste.
  • Spoon some of the tofu sauce into the bottom of a large bowl. Add your desired vegetables to the bowl plus the roasted peppers, standing up the vegetables as if they are growing out of the ground. Liberally spoon the "dirt" on top of the vegetables and sauce. Garnish with fennel fronds and serve with extra sauce and dirt on the side.

  • Place the onions and sweet potatoes on the baking sheet, turning the sweet potatoes cut sides up. Drizzle with 2 teaspoons olive oil, making sure the flesh of the sweet potatoes is well coated. Sprinkle with 1 teaspoon chili powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Rub and toss to coat, and then arrange on the baking sheet. Bake for 10 minutes.
  • While the sweet potatoes cook, chop the broccoli or cauliflower into florets (you should have about 5 cups total). Remove the baking sheet from the oven and flip the sweet potatoes so that they are cut sides down. Push the sweet potatoes and onions to one side and add the cauliflower or broccoli to the open side of the pan. Drizzle with 2 teaspoons olive oil and sprinkle with 1/4 teaspoon salt, 1/4 teaspoon pepper, and the remaining 1 teaspoon chili powder. Carefully toss to coat, and then return the baking sheet to the oven. The pan will be very crowded, and the veggies will overlap somewhat. Return to the oven and bake for an additional 20 to 25 minutes, until the sweet potatoes are soft and the other vegetables are crisp-tender.
  • Remove the sheet pan from the oven and place the kale on top of the vegetables. Drizzle the kale with the remaining 2 teaspoons olive oil and sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Lightly rub the kale to coat, and then arrange the kale in a single layer over the whole pan. Return the pan to oven and bake for 5 additional minutes, until the kale is very lightly crisp and softened. Remove the whole pan from the oven and set it aside to cool.

Caramelized (it means the sugars in the vegetables were intensified, just like, well, caramel) vegetables plus the browned bits stuck to the sheet pan all translate to big flavor. If meat is a must for you, some cooked sausage would work well with this dish.
