ROASTED VANILLA & HONEY CRèME BRûLéE
Make Tom Kerridge's decadent honey and vanilla crème brûlée with just five ingredients. It's a special dessert to enjoy after a cosy dinner for two

- Heat the oven to 200C/180C fan/gas 6. Split the vanilla pod, scrape out and reserve the seeds, and put the pod on a baking tray. Roast until dried and brittle, about 15 mins, remove from the oven and leave to cool.
- Pour the honey into a saucepan and gently heat until it starts to caramelise. Pour in the cream and reserved vanilla seeds, return to the boil and whisk to dissolve the honey. Remove from the heat and set aside to infuse for 20 mins. Crush the roasted vanilla pod into a fine powder using a pestle and mortar, then stir through the honey mixture.
- Return the mixture to the heat and bring to the boil. Whisk, then remove from the heat and gradually pour the mixture over the egg, whisking constantly. Return the mixture to the pan and cook over a low heat, stirring constantly, until it reaches 86C on a cooking thermometer or has thickened to a smooth custard. Pass the custard through a fine sieve and leave to cool slightly. Pour into a blender and blitz for 30 seconds or until smooth. Strain into a small dish, then put in the fridge to chill overnight.
- Sprinkle over the sugar and caramelise with a kitchen blowtorch, then serve with the shortbread on the side.

- Preheat oven to 350°F (177°C). In a small saucepan, add the heavy cream and honey. Place pan over medium-low heat. Stir to dissolve honey. Heat cream just until starting to steam and gently bubble. Add the vanilla bean paste, extract (or seeds). Turn off heat and allow to steep and cool for 10 minutes.
- In a medium mixing bowl, add the egg yolks. While whisking, add one ladleful of the cream mixture. Repeat, whisking well to combine. Add the remaining cream mixture and whisk. Custard can be strained now through a sieve for an extra smooth texture (optional).
- Place ramekins in a baking dish and have a kettle of hot water ready. Fill ramekins about halfway full with custard. Add enough hot water to come halfway up the sides of the ramekins. Bake for 25 or 30 minutes until custard appears set but still slightly jiggly in the center. Remove ramekins from baking dish and allow to cool. Once cool enough to handle, wrap and chill in the refrigerator for at least 4 hours.
- To Brulee with a Torch: sprinkle 1 teaspoon fine, granulated sugar to the top of one ramekin in an even, thin layer. Ignite flame and torch the sugar until molten and browned. Optional: add another teaspoon of sugar and torch again for even more crunchy caramel. Immediately sprinkle one tablespoon of chopped pistachios over the top. Garnish with a pinch of flaky sea salt, if desired.To Brulee using a Broiler: have an oven rack directly under broiler. Preheat broiler on high. Sprinkle 1 teaspoon fine, granulated sugar to the top of one ramekin in an even, thin layer. Watching very closely, broil until sugar is melted and browned. Remove from oven and sprinkle 1 tablespoon chopped pistachios over the top. Garnish with a pinch of flaky sea salt, if desired.

- Place egg yolks in a stand mixer with a whisk attachments. Add the 3/4 cup of sugar and turn on low for 10 seconds and then turn to high for 2-3 minutes until the yolks or pale and fluffy. Meanwhile cut in half the vanilla bean, scrape the seeds and place seeds and pod in pot along with the cream. Bring the cream until it just starts to boil. Then temper the egg mixture with the hot cream by adding 4 oz of cream at a time to the stand mixer while it is on low. Continue that same process 2 more times, then after that point you can add the rest of the cream. Scrape the sides of the bowl and mix for 20 more seconds. This recipe will make 4 large ramekin or about 10 small cups like the picture. Preheat your oven to 275 degrees. You will need a deep baking dish that the ramekins or cups can all be place in. - Take the creme brulee out of the refrigerator. Sprinkle a tsp or two of sugar on the top of each ramekin making sure to distribute the sugar evenly. Then take a blow torch and slowly caramelize the sugar on top making sure not to get the torch too close to the sugar. The closer you are the hotter the flame which means the faster the sugar can burn. You don’t want burnt sugar, a golden dark brown is perfect, not black. Continue to torch all the ramekins making sugar to caramelize all the sugar. Wait 30 seconds then serve and enjoy!
