Very simple 4-ingredient recipe for tomatoes topped with sharp cheddar cheese and roasted with a little seasoning. Gluten-free and Vegetarian.

4 medium tomatoes
1 cup shredded extra-sharp cheddar
½ teaspoon Italian seasoning
Freshly ground pepper to taste

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil.
  • Cut tomatoes in half along the equator. Place cut-side up on the baking sheet.
  • Divide the cheddar among the tomatoes. Sprinkle with Italian seasoning and pepper.
  • Roast until the tomatoes are soft and starting to sag under their own weight, and the cheddar is bubbling and starting to brown, 15 to 20 minutes. Let cool about 5 minutes before serving.

Number Of Ingredients 7

4 large or 6 medium beefsteak tomatoes
1/4 cup olive oil
3/4 cup plain breadcrumbs
3/4 cup blue cheese
2 tablespoons chopped fresh basil
2 cloves garlic, finely chopped
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Cut the tomatoes in half. Remove the flesh and seeds and spoon into a bowl. Brush the outside surfaces of the tomatoes with some of the olive oil. Add the bread crumbs, cheese, basil and garlic to the tomato flesh and seeds. Add the remaining olive oil and salt and pepper to taste. Spoon the mixture into the tomatoes. Place the filled tomatoes on a cookie sheet. Bake for 18-20 minutes or until the tomatoes are tender and the stuffing is golden brown. Serve hot or at room temperature.

Tomato Sandwiches with Blue Cheese Mousse image

1 loaf ciabatta, sliced in half horizontally
Olive oil
1/2 stick unsalted butter, at room temperature
8 ounces blue cheese (something really good, not prepackaged crumbles)
4 ounces whipped cream cheese
2 teaspoons Worcestershire sauce
2 teaspoons red wine vinegar
4 ounces heavy cream
2 large heirloom tomatoes
Kosher salt and freshly ground black pepper
1/2 medium white onion, thinly shaved on a mandoline

Steps:

  • Preheat the oven to 500 degrees F.
  • Drizzle the cut-side of the bread with olive oil, then put on a sheet tray and place in the oven to toast, 3 to 5 minutes. Evenly spread the butter between the 2 pieces.
  • In a non-reactive bowl, combine the blue cheese, cream cheese, Worcestershire and vinegar until well mixed. Add the heavy cream slowly and whip with a rubber spatula or whisk until smooth and mousselike. Reserve until ready to use.
  • Slice each tomato into four thick slices, then sprinkle with salt and pepper.
  • Spread a thick layer of the blue cheese mousse on the bottom half of the prepared loaf. Add the sliced tomatoes and liberally spread the shaved onion. Top with the top piece of bread and slice into servings.
  • Serve with plenty of napkins.

1/2 cup fine dry breadcrumbs
1 tablespoon olive oil
12 medium tomatoes
3/4 cup crumbled blue cheese (about 3 ounces)

Steps:

  • Prepare barbecue (high heat), leaving opposite side unlit if gas grill or without coals if charcoal grill. Mix breadcrumbs and olive oil in small bowl, mashing to coat. Cut top 1/4 from each tomato. Sprinkle tomatoes with salt and pepper. Top each with 1 tablespoon blue cheese. Sprinkle with breadcrumb mixture.
  • Arrange tomatoes (topping side up) on unlit side of grill. Cover grill and cook tomatoes until slightly soft and cheese melts, about 13 minutes. Serve immediately.

1 large sweet onion, halved and thinly sliced
1 cup grape tomatoes, halved
1/2 teaspoon kosher salt, divided

6 ounces cream cheese, softened
3/4 cup crumbled blue cheese
3 garlic cloves, minced
16 slices French bread baguette (1/2 inch thick)
2 beef ribeye steaks (3/4 inch thick and 8 ounces each)
1-1/2 teaspoons Montreal steak seasoning
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400°. In large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until softened. Reduce heat to medium-low; cook until golden brown, 25-30 minutes, stirring occasionally., Toss tomatoes with 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; spread in a 15x10x1-in. pan. Roast until softened, 10-15 minutes. Stir tomatoes into onion, mashing lightly. In small bowl, mix cream cheese, blue cheese, garlic and the remaining salt and pepper., Brush bread slices with remaining oil; grill, covered, over medium heat until lightly toasted, 1-2 minutes per side. Sprinkle steaks with steak seasoning. 12 medium plum tomatoes (about 2 1/4 pounds)
1 1/2 teaspoons freshly ground black pepper
3/4 teaspoon coarse kosher salt
1/2 teaspoon dried crushed rosemary
8 tablespoons olive oil, divided
2 large garlic cloves, minced
1 4-ounce piece Stilton cheese, crumbled
1 bunch watercress, thick stems trimmed

Steps:

  • Cut tomatoes lengthwise in half; remove seeds and membranes. Place tomatoes, cut side down, on platter; let drain 15 minutes. Mix pepper, salt, and rosemary in large bowl. Add 6 tablespoons olive oil and garlic and whisk to blend. Add tomato halves and toss to coat. Let marinate 15 minutes.
  • Position rack in center of oven and preheat to 375°F. Brush large rimmed baking sheet with remaining 2 tablespoons olive oil. Arrange tomato halves, cut side up, on prepared baking sheet. Drizzle any oil mixture remaining in bowl over tomatoes. Roast until tomatoes are slightly softened and browned on bottoms and around edges, about 65 minutes. Arrange tomatoes on platter; sprinkle with crumbled cheese. DO AHEAD Can be made 3 hours ahead. Cover tomatoes loosely and let stand at room temperature.
  • Tuck watercress in between tomatoes. Serve warm or at room temperature.
