Steps:
- Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
- Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
- When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
- Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.
HOW TO MAKE TOMATO BISQUE
You don't need a whole basket of vine-ripened tomatoes to make a delicious tomato bisque. We're going to use canned tomatoes. Rice makes this soup silky, not starchy.

- Heat olive oil in a large pot over medium heat; cook and stir onion and celery with a pinch of salt until onion is translucent, 5 to 8 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Pour chicken broth and tomatoes into onion mixture. Bring to a simmer and season with paprika, black pepper, and cayenne pepper. Turn heat to low and stir rice into soup; skim foam occasionally and simmer until rice and vegetables are very tender, 35 to 45 minutes. Add sugar.
- Blend soup with an immersion blender in the pot until smooth. Whisk 1/2 cup cream into soup and adjust levels of salt, cayenne pepper, black pepper, and sugar. If soup is too thick, add more broth; if soup is too thin, cook, stirring often, until reduced and slightly thickened, about 10 minutes. Ladle into warmed bowls; garnish each bowl with a drizzle of cream and top with about 1 teaspoon chopped basil.

CREAMY TOMATO BASIL BISQUE
A bowl of creamy tomato basil bisque is the perfect comfort food to indulge in at the end of a long day, with a grilled cheese sandwich.

- To make the basil oil, puree basil leaves together with oil in a high-speed blender until smooth.
- Strain through a fine mesh sieve or chinois twice. Do not press down on the mixture or you'll end up with a bitter note to the oil.
- Let sit for 2 hours before storing in an airtight container. While the basil oil is resting, start on the soup.
- Bring a large pot of water to a boil. On the blossom end of each tomato (opposite the stem), score with an "X" with a paring knife. Add tomatoes to the boiling water.
- Boil for 30 seconds to 1 minute. Remove from the water to a bowl filled with ice water. Remove the tomatoes from water and gently peel.
- Remove the seeds from each tomato. Add tomato pieces to a large bowl. Add the seeds and goop that you remove to a sieve placed over the bowl of tomatoes. Mash the innards through a bowl to get all the flavor from those, without the seeds. Set aside.
- Heat olive oil in a large soup pot over medium-high heat. Add the garlic and onion, stirring occasionally until the onion has softened, approximately 7 minutes.
- Add tomatoes, chicken stock, and sugar. Bring the mixture to a boil, then reduce heat and simmer until the liquid reduces by one quarter, approximately 20 minutes.
- Turn off heat and cool the mixture for about 10 minutes. Using a stick blender, puree the soup until it is smooth. If you don't have a stick blender, you can also use a blender or food processor, working in batches.
- Bring the pureed soup to a simmer over medium heat, then add cream and basil. Season with salt and pepper to taste.
- Ladle into bowls, and garnish with an extra drizzle of heavy cream and basil oil.

- In a large saucepan, cook celery, carrots, onion, and garlic in butter until vegetables are tender, but not brown.
- Add tomato juice, chicken broth, undrained tomatoes, tomato paste, basil, oregano, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 30 minutes or until slightly thickened.
- Place half of the soup in a blender container or food processor bowl. Cover; blend or process until smooth. Repeat with remaining mixture.
- Return all of the mixture to the saucepan. Stir in whipping cream and sugar; heat through. Stir in fresh basil. Ladle into warm soup bowls. Top each serving with some of the pesto and garnish with fresh basil leaves, if you like. Makes 8 side-dish servings.

ROASTED TOMATO-BASIL BISQUE

- Preheat two ovens to 450°F. If you only have one oven, arrange the racks so that they're evenly spaced to accommodate a good air flow.
- Lightly grease one sheet pan with extra virgin olive oil and assemble the cut tomatoes onto the pan in a single layer. Roast the tomatoes for 30-35 minutes, or until they are browned on the edges.
- Toss the celery, carrots, and onions in 2 tablespoons of olive oil. Nestle the head of garlic (cut side up) in a square piece of heavy-duty aluminum foil and pour the remaining olive oil over it. Tightly wrap up the garlic in the foil and place the garlic onto the pan with the veggies.
- Roast the veggies for 30-35 minutes as well. When roasted they should look brown and nicely caramelized.
- Once the vegetables are finished roasting, transfer everything except the garlic to a dutch oven.
- Pour a 1/2 cup of the chicken stock onto the sheet pans and use a wooden spoon to scrape up the browned bits from the pans. Add this liquid to the dutch oven along with the tomatoes, the veggies, and the bay leaf.
- Add the sugar, salt, pepper, and the rest of the chicken stock to the pot. Bring the mixture up to a boil, and reduce the heat to low and simmer, covered, for 15 minutes.
- Once the soup has finished cooking, use an immersion blender to puree the mixture*. After a few pulses with the immersion blender, take the head of garlic, and squeeze half of it into the pot, then continue blending until smooth.
- Remove the pot from the heat and stir in the chopped basil and the cream. Stir the cream in well. If you're using very cold cream, you may have to return the pot to the stove and heat it until warmed through. Be sure to avoid boiling the bisque once the cream has been added.

BASIL TOMATO BISQUE

- Pour tomatoes and chicken broth into pot. Chunk up butter a bit and add to pot, along with basil and sugar.
- Heat over medium heat until butter is melted.
- Turn heat to medium-low and blend with hand blender. Keep blending until the soup is at the texture and consistency that you like.
- Add a little bit of heavy cream slowly to the soup, while stirring. Then slowly add the rest of the cream, so as not to affect the temperature of the soup too drastically.
- Garnish with a sprinkle of basil, parsley, shaved Parmesan or top with croutons.
EASY TOMATO BASIL BISQUE RECIPE

- In a large dutch oven, cook the bacon over medium heat until crisp.
- Remove with a slotted spoon and transfer to a paper towel lined plate.
- Add the onion to the pot and cook until translucent.
- Stir in the garlic and cook for one minute.

- Melt the butter in a 4-quart saucepan. Add celery and onions.
- Allow the onions and celery to cook for a few minutes until they turn semi-translucent.
- Add the flour to the pan to make a roux.
- Let the roux mixture cook for 5-7 minutes over low heat (the flour should begin to smell a little like bread).Don't let the roux get dark or burn.
- Heat the stock in another saucepan.
- Add the stock to the roux, using a wire whip, and mix well.
- Add the tomatoes and seasonings and allow to simmer for 15- 20 minutes.
- If you have an immersion blender after the bisque has simmered, use your immersion blender to puree as much of the product as possible. You can also transfer it to a food processor or blender, just be very careful with the hot bisque.
- After you have either used an immersion blender or food processor, strain your bisque to remove all the bits and pieces of celery, onions, and tomatoes.
- Return the bisque to the pot and add the heavy cream and fold in the shredded cheddar.
- At this time if the bisque appears to thick you can either add more vegetable stock, milk, or just plain water.
- Taste the soup and re-season if necessary, then allow the soup to simmer over low heat for 15-20 minutes. Serve and enjoy!

- Preheat oven to 400 degrees. Cut tomatoes in half and arrange on a baking sheet. Roast in oven for 20 minutes.
- Heat olive oil in heavy dutch oven or soup pot. Add onion and cook until just translucent. Add garlic and cook about 30 seconds until fragrant. Stir in sugar and tomato paste and continue cooking another minute or so.
- Carefully add roasted tomatoes and their juices, stir and cook, breaking up tomatoes with wooden spoon. Simmer for 10 minutes.
- Add the chicken broth and bring to a steady simmer for another 5 minutes. Stir in about 1 tablespoon of fresh chopped basil. Carefully insert immersion blender into pot and process until smooth.

- Preheat the oven to 400 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- Combine the tomatoes, olive oil, light brown sugar, carrots, shallots, garlic, dry sherry and some salt and pepper in a mixing bowl and toss to coat. Place the vegetables on the prepared baking sheet and roast until caramelized, 30 to 40 minutes.

- Score, blanch, and peel the tomatoes. Cut in half, scoop out and discard the seeds. Chop the peeled and seeded tomatoes. Roughly chop onion and garlic.
- Heat the pan on the stove over a medium flame. Once it's hot, add the olive oil and heat an additional minute.
- Stir in the onions. Cook 5 minutes, stirring occasionally. When the onions are fragrant and starting to turn a translucent golden color add the garlic and cook 1 minute longer.
- Add the salt, pepper, tomatoes, vegetable stock, vinegar, and bay leaves. Stir to combine.
- Bring to a boil over high heat. Cover, drop heat to low, and simmer for 30 minutes, stirring occasionally.

- Serve garnished with additional parmesan or a drizzle of cream and a sprig of fresh basil.

- Warm oil over medium high heat in a pot. Add in salt, thyme, garlic, and basil. Let it cook for a minute before adding the remaining soup ingredients.
- Lower heat to medium once soup begins to simmer. Let it cook for half an hour before removing the thyme and garlic.
- Lower heat to low and once soup begins to cool, gently blend with a hand immersion blender until the soup is creamy and has thickened.
- To make the roux, melt butter over medium high heat in a small pan. Once butter melts, add flour and cook for 2 minutes -stirring occasionally. Once flour cooks, slowly whisk in milk, and keep adding heavy cream until the roux is creamy and soft, like Greek yogurt.

- 1. Bake squash upside down on cookie sheet. Cool.
- 2. In large pot, saute onions, red pepper and garlic until onions and peppers are soft.
- 3. Dip Tomatoes in boiling water; peel & core and cut up in chunks.
- 4. Add tomatoes, tomato paste, chicken stock, basil and thyme. (I couldn't find tomato paste with roasted garlic, so roasted some in the oven and added to the tomato paste)
- 5. Peel and Cut cooled butternut squash in chunks and add to pot.
- 6. Bring to a boil; then simmer for 35 minutes, stirring often.
- 7. Puree in blender or food processor and return to pot. Splash in the Tobasco, salt and pepper and stir in the cream.
- 8. FOR CANNING: Do not add the cream! Process quarts for 30 minutes at 10 lb. in presssure cooker. We used this recipe, multiplied by 10, and got 21 quarts. (plus some left over to sample!) When serving, heat the soup first and then stir in cream before serving.
