ROASTED TOMATILLO AND GARLIC SALSA

Roasted Tomatillo and Garlic Salsa image

Tomatillos, lots of garlic and spicy jalapenos charred under the broiler give this salsa a rich, earthy flavor. If you like your salsa very hot, added roasted Jamaican scotch bonnets instead of the jalapeno.

Time 40m

Yield 20

Number Of Ingredients 6

1 pound fresh tomatillos, husks removed
1 head garlic cloves, separated and peeled
3 fresh jalapeno peppers
1 bunch fresh cilantro
½ cup water, or as needed
salt and pepper to taste

Steps:

  • Preheat the oven's broiler. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet. Place under the broiler, and cook for a few minutes. Remove garlic cloves first, as soon as they are toasted, to avoid developing a bitter flavor. Continue to roast jalapenos and tomatillos until evenly charred, turning occasionally. Set aside to cool. Don't remove the charred parts of the tomatillos or the peppers. They add a really nice flavor.
  • Place peppers and tomatillos in a blender with the garlic and cilantro. Add a little water to the mixture if necessary to facilitate blending. Season with salt and pepper to taste. Refrigerate until serving.

ROASTED TOMATO AND TOMATILLO SALSA

Roasted Tomato and Tomatillo Salsa image

This is a delicious Salsa to add to your repertoire! It uses both tomatoes and tomatillos to create a completely unique flavor. Yum!!

Provided by Mexican Please

Time 30m

Number Of Ingredients 8

2 roma tomatoes
4-5 tomatillos
1/3 small onion
1 garlic clove
1-2 jalapenos (or serranos)
10-12 sprigs cilantro
pinch of salt
squeeze of lime

Steps:

  • Husk the tomatillos and then rinse both the tomatoes and tomatillos. I usually remove the stems from both of them knowing that any juices leftover in the roasting pan will go into the blender.
  • Roast the tomatoes and tomatillos in a 400F oven for 20-25 minutes. Here's why roasting tomatillos is better than boiling them.
  • Add the roasted tomatoes and tomatillos to a blender along with 1/3 small onion, 1 peeled garlic clove, 1 rinsed and de-stemmed jalapeno (or less for a milder version), 10-12 sprigs rinsed cilantro. Combine well (I usually leave it a bit chunky.)
  • Take a taste for seasoning. I added another 1/2 jalapeno, a pinch of salt, and a generous squeeze of lime.
  • Serve immediately or chill in the fridge for a bit before serving.
  • Store leftovers in an airtight container in the fridge where they will keep for a few days.

Provided by Dancer

Categories     Sauces

Time 30m

Yield 2 cups

Number Of Ingredients 9

3/4 lb tomatillo, husks removed
2 poblano chiles or 2 other fresh chilies, of choice (or 2 jalapeno peppers)
1 medium onion, unpeeled
3 cloves garlic
1/2 cup cilantro leaf, packed
3 tablespoons lime juice
1/2 teaspoon ground cumin
salt, to taste
unbleached cane sugar, optional

Steps:

  • On a non-stick cookie sheet, place the tomatillos, poblano chiles, and onion, and place them under the broiler.
  • Broil the vegetables for 3 to 5 minutes per side, turning them as their skins begin to char.
  • The entire process should take around 15 minutes.
  • After 12 minutes of broiling time, add the cloves of garlic.
  • Remove the cookie sheet from the oven and set aside to cool.
  • When the tomatillos and poblano chiles are cool to the touch, remove their skins, stems, and seeds, and discard.
  • Remove and discard the onion skin, as well.
  • Transfer the tomatillos, poblano chiles, onion, and garlic to a food processor or blender, and pulse a few times to roughly chop the vegetables.
  • Add the cilantro, lime juice, and cumin, and continue to pulse to form a chunky puree.
  • Add salt to taste and a little unbleached cane sugar, if desired.
  • Transfer the mixture to an airtight container and store in the refrigerator for up to 1 week.
  • Serves as a sauce for Mexican and Southwestern style dishes, as a sauce for steamed vegetables and grains, or as a dip with raw veggies or tortilla chips.

ROASTED TOMATILLO OR GREEN TOMATO SALSA

Roasted Tomatillo or Green Tomato Salsa image

Use up those garden tomatillos or green tomatoes with this easy & flavorful roasted salsa to preserve by canning or freezing.

Provided by Jami Boys

Categories     Condiments

Time 1h30m

Number Of Ingredients 9

5 cups chopped tomatillos or green tomatoes, (about 2 pounds, washed, husks removed from tomatillos)
3 cups coarsely chopped hot peppers: a combination of jalapeño and long green Anaheim or Poblano chilies (to your taste*)
3 cups coarsely chopped onions
6 medium cloves garlic, (chopped)
1 cup bottled lime juice ((or lemon))
2 tablespoons dried oregano (or to taste)
1 tablespoon salt (or to taste)
1 tablespoon ground cumin (or to taste)
2 teaspoons black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Place tomatillos or green tomatoes in a large roasting pan. Add chilies, onion, garlic and mix.
  • Roast vegetables for 30-35 minutes, stirring at the halfway mark, until the tomatillos/tomatoes are starting to break down.
  • Scrape the roasted vegetables into a large stockpot and add the remaining ingredients. Bring to a boil and simmer, uncovered, about 10 minutes. While simmering, prepare water bath canner, lids & 4 pint or 8 half-pint jars if planning to can (wash freezer-safe jars or containers for freezing, or use freezer baggies)
  • Blend the salsa further, if desired, with an immersion blender and the ladle into prepared jars leaving 1/2-inch headspace for canning (you'll need a good 1+ inch headspace for freezing to account for expansion).
  • To Can: Wipe rims, seal, and process in a boiling water bath for 15 minutes, turn off burner, remove lid and let sit for 5 minutes. Remove jars to a cloth-lined surface and let cool 12-24 hours before testing the seals, labeling, and storing for up to a year.
  • To Freeze: let salsa cool and then transfer to clean freezer containers. Label and freeze for a year.

  • Preheat the oven to 425 degrees. Peel the paper off of the tomatillos, shallots, and garlic cloves. Place the tomatillos, poblanos, jalapeños, and shallots on a baking sheet and drizzle with olive oil. Place the garlic on a piece of foil, drizzle with oil, and wrap into a little packet. Place on the baking sheet. Roast everything for 40 minutes, stirring halfway through to prevent burning. Pulse all the roasted ingredients in a food processor with the broth, salt, and cilantro.
  • Cook the rice according to package directions. Meanwhile, heat a little bit of oil in a large skillet and add the chicken. Sprinkle with salt and pepper; flip once when chicken is lightly browned on the outside. Add the tomatillo sauce to the chicken and let it gently simmer over very low heat for 15-20 minutes to finish cooking. Remove the chicken, shred with two forks, and return to pan. Stir in the half and half and extra water if necessary. (I’ve also added sour cream which is delicious!)
  • In a heavy skillet, heat oil over medium low heat (oil should be about one inch deep). Cut the tortillas into small strips. Test the oil with by letting a drop of water fall in the pan – if it sizzles, the oil is ready. Add the tortilla strips in batches, flipping or stirring occasionally to prevent burning. When the tortilla strips are crispy and golden, remove and set on a paper towel lined plate. Sprinkle with salt. Repeat until all tortillas are done.
