Roasted Red Potatoes Catalina was One of the Thousand Islands image

I knew I wanted roasted potatoes, but couldn't decide on one from 'Zaar, so opened the fridge and came up with this. It was well received by the family. Hope you enjoy it, too.

Ingredients

1 1/2 lbs red potatoes, quartered
1/2 cup thousand island dressing
1/4 cup Catalina dressing
2 tablespoons canola oil
2 tablespoons horseradish sauce (to taste)
7 garlic cloves, sliced

Steps:

Preheat oven to 375°F Line a jelly roll pan with heavy duty foil. Spray heavily with non-stick spray.
Combine everything except the potatoes and garlic.
Beat mixture thoroughly. When well combined, add potatoes and garlic.
Pour out onto prepared jelly roll pan in single layer.
Roast for 45 minutes.

This is the potato salad my mom always made while I was growing up, and it is SOOO good! I always get asked for the recipe when I bring it to parties.

Ingredients

12 potatoes, cooked, peeled and diced
6 hard-boiled eggs, diced
1 sweet onion, diced small
1 cup celery, chopped
1 cup sweet gherkin, chopped
1/2 cup mayonnaise
1/4 cup thousand island dressing
1/4 cup French dressing
1/4 cup mustard
salt and pepper

Steps:

Mix the potatoes, eggs, onion, clery and pickles in a large bowl.
In a separate bowl, whisk together the remaining ingredients.
Add the dressing mixture in small amounts to the potato mixture and stir gently.
Keep adding dressing mixture in small amounts to taste - you may not use the entire batch. Leftovers make great deviled eggs!
This is best when prepared the day before and allowed to refrigerate overnight.
