These roasted chickpeas make such a delicious and healthy snack! They're perfectly seasoned, a bit spicy, and super easy to prepare. They're perfect for parties, snacking in front of the TV, road trips, and so much more!

2 cans chickpeas
2 tablespoons olive oil
1 teaspoon smoked paprika powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Drain the canned chickpeas. Then dry them really well using a clean dishtowel. Just gently roll them between the dishtowel. You could also use paper towel.
  • In a medium bowl, toss the chickpeas with olive oil. We'll add the spices after baking because they have a tendency to burn. So don't worry about them for now.
  • Preheat your oven to 350 °F. Line a baking sheet with parchment paper. Spread the chickpeas on the baking sheet and bake for 25 minutes.
  • Then take the chickpeas out of the oven and place them in the bowl you used before. Add the spices and toss well until the chickpeas are coated evenly.
  • Return them to the baking sheet and bake for another 10 minutes until they're browned and crunchy.

A chile-flecked, honey-imbued marinade spiked with fresh citrus juice gives this chicken its fiery, syrupy character. Dates and carrots give the sauce texture and additional sweetness while a garnish of fresh herbs and pistachio nuts lends freshness and crunch. It's dinner party food at its most flavorful and convenient; its honey marinade makes it a particularly wonderful main course for Rosh Hashana, the Jewish New Year. The ingredients can be assembled up to 24 hours in advance, then all you need to do is pop it in the oven just before your guests arrive, and garnish it at the last minute. Serve it with couscous, polenta, rice or another soft grain to soak up the sauce.

1 lemon, plus 3 tablespoons freshly squeezed lemon juice
2 1/2 teaspoons kosher salt, more for pot
3 tablespoons freshly squeezed orange juice
4 tablespoons olive oil
1 1/2 tablespoons whole grain mustard
3 tablespoons honey
1 bay leaf
1/2 to 1 teaspoon crushed red pepper flakes, to taste
Black pepper, to taste
1 4-pound chicken, cut into 8 pieces
3 cups sliced carrots (1/4-inch thick)
1 onion, halved and thinly sliced
2/3 cup sliced dates
1 tablespoon fresh thyme leaves
1/4 cup chopped cilantro or parsley, for garnish
2 scallions, thinly sliced, for garnish
1/4 cup chopped toasted pistachio nuts, for garnish

Steps:

  • Quarter the lemon lengthwise, removing any seeds. Thinly slice crosswise into small wedges and add to small pot of boiling, salted water. Blanch for 2 minutes and drain. Reserve slices.
  • In a saucepan, whisk together lemon juice, orange juice, oil, mustard, honey, salt, bay leaf, red pepper flakes and black pepper to taste. Bring to a boil and simmer for 5 minutes. Let cool.
  • Put chicken in a bowl and add honey mixture. Add carrots, onion, dates, thyme and blanched lemon slices. Turn mixture several times to coat. Let marinate for at least 30 minutes at room temperature, but preferably overnight in the refrigerator.
  • Heat oven to 425 degrees. Transfer all ingredients, including marinade, to a sheet pan with a rim. Chicken should be skin side up. Roast until chicken is browned and cooked through, about 20 to 30 minutes for breasts and 30 to 40 for legs and wings (remove the pieces as they are done cooking). When the chicken is done, give the carrot mixture in the pan a stir; if the pan looks dry add 2 to 3 tablespoons water. Continue roasting the carrots until they are tender, about 7 to 12 minutes longer.
  • Spoon carrots over chicken and top with cilantro, scallions and pistachio nuts.

From the kitchen of Community Cook Jolene Martinelli of Fremont, New Hampshire: My guys are allergic to nuts so I don't keep them in the house. I found roasted chickpeas are a great substitute. They're spicy, sweet, crunchy and so good!

1 can chickpeas
2 teaspoons extra virgin olive oil
2T Gustus Vitae spicy chocolate cinnamon cane sugar

Steps:

  • Heat oven to 425°. Drain and rinse chickpeas, remove any loose skins. Add chickpeas to rimmed baking pan in a single layer with a little room to move. Drizzle with oil and shake pan to coat evenly. Sprinkle with spicy chocolate cinnamon sugar. Roast for approximately 45 mins to 1 hour, stirring occasionally, until they reach your desired crunchiness.

1 x 400g can chickpeas, drained
1tsp rapeseed oil
2tsp smoked paprika
2tsp ground cumin
2tsp ground coriander
½tsp cayenne pepper

Steps:

  • Heat oven to 200C/180C fan/gas 4. Tip the chickpeas into a bowl and toss with the rapeseed oil, smoked paprika, cumin and coriander along with a big pinch of salt. Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 35 mins, moving them round the tray halfway through so they dry out evenly and are crunchy. Leave to cool, then store in an airtight container.

  • Prep chickpeas: For crispier chickpeas, dry out canned or cooked chickpeas that have been storied or cooked in liquid for at least 1 hour before cooking. To do this, drain chickpeas from their liquid (save the aquafaba liquid for other uses) on a sheet pan on your counter or in your refrigerator for at least 30-60 minutes before roasting. The drier the chickpeas, the crispier they'll be after cooking.
  • Season chickpeas: When chickpeas have dried, add them to a medium mixing bowl with 1 tablespoon of maple syrup, cumin, turmeric, cayenne pepper, and pinch of salt and pepper. Mix well to combine all ingredients, making sure the maple syrup lightly coats all chickpeas so that the spices stick to them.
  • Roast in oven: Spread the seasoned chickpeas onto a sheet pan, spacing them out so that they're all in one single layer (this will help them to become crispier). Bake in the oven for a total of 20-30 minutes, stirring every 10 minutes to evenly roast on all sides. Taste them throughout baking to test out how done they are; when chickpeas are browned and have a crunchy outside and soft inside then they're done.
