Steps:
- Melt 2 tablespoons butter in a saucepan over medium heat. Add 1 each sliced Vidalia onion and red onion; cook, stirring, until soft, about 15 minutes. Add 1/4 cup ketchup, 1 tablespoon red wine vinegar, 2 teaspoons sugar, 1/2 teaspoon hot sauce, and salt and pepper to taste and heat through, 2 to 3 more minutes. Stir in 3 chopped scallions.

- Using sharp knife, make three 1/4-inch-deep, 2 1/2-inch-long diagonal cuts in skin of each fish fillet. Arrange fillets in single layer, skin side up, in 15x10x2-inch glass baking dish. Pour Sherry and 1/4 cup olive oil over; sprinkle with freshly ground black pepper. Cover and refrigerate at least 4 hours and up to 6 hours, turning occasionally.
- Preheat oven to 425°F. Combine butter and garlic in heavy medium saucepan. Cook over medium heat until butter melts and garlic begins to brown, about 12 minutes, stirring occasionally. Discard garlic clove. Add panko to butter (mixture will bubble); cook until golden brown, about 3 minutes. Add lemon juice; remove from heat. Stir in pimentón. Season sauce to taste with salt and pepper. Cover to keep warm while preparing fish.
- Remove fish from marinade and drain. Sprinkle fish with coarse salt. Heat remaining 1 tablespoon oil in large ovenproof skillet over medium-high heat. Add fish fillets, skin side down, and cook until lightly browned, about 1 minute. Turn fillets over; place skillet in oven and roast until fish is just opaque in center, about 2 minutes.
- Spoon Roasted Sweet-and-Sour Onions into center of 6 plates. Top each serving with 1 fish fillet. Spoon sauce over and serve.

Caramelized on the outside and super-soft within, these are delicious alongside almost any meat or fish. Serves three to four as a side dish.

- Preheat the oven to 190C/375°F Peel the onions and cut them in half from root to tip. Put into a small oven dish, so they fit snugly in one layer.
- Heat the olive oil in a small saucepan over a medium heat and add the celery and garlic. Fry gently for about 10 minutes, until soft. Remove from the heat, add the rosemary, tomato paste, vinegar and sugar, and stir so the sugar dissolves.
- Season generously, then pour over the onions and mix well. Roast for an hour, until soft and caramelized, stirring halfway through. Serve hot, warm or cold.

SWEET AND SOUR ROASTED ONIONS
I have adapted this from a Hugh Fernley-Whittingstall recipe posted in the Guardian Weekend Magazine. These onions are unbelievably good if I may say so and make a fabulous side dish to go with most fish or meats. They even taste great cold. The original recipe calls for celery, I have added it as an optional ingredient as I have left it out myself when I made this, because I'm not very keen on it.

Steps:
- Preheat your oven to 190°C/375°F/Gas 5.
- Put your onions in an oven dish that will fit them neatly in one layer. You might want to line the dish with baking paper, as the sauce will caramelise, which can make it quite a pain to clean.
- Heat the oil in a frying pan and sauté the celery over medium heat until soft, for about 5 minutes. If you're not using any celery, just start with the next step, but shorten the frying time to two minutes.
- Add the garlic and sauté for a further five minutes.
- Remove the pan from the heat and add all the other ingredients, apart from the onions and stir until the sugar has dissolved.
- Season liberally with salt and pepper and pour the mixture over the onions.
- Mix well until all the onions are coated evenly.
- Place in your oven and roast for about one hour, stirring once halfway through.
- You might want to check after 45 minutes, the onions are done, when they are soft and caramelised. The time depends a bit on their size.

- Preheat the oven to 375*F.
- Wrap each onion securely in foil. Place the onions in a roasting pan and roast until they are very tender when pierced with a knife, about 1 1/2 hours.Cool. Trim and remove onion peels. Halve onions lengthwise, then slice thinly lengthwise. Move to a medium bowl. Add the vinegar and lemon juice and toss to blend. Let the onion mixture stand at room temperature at least 1 hour and up to 3 hours.
- Mix 1/2 cup sherry or vermouth and currants in a small saucepan. Bring to a boil. Remove from heat. Cover and let steep at least 1 hour and up to 3 hours.
- Stir the currant mixture, oil, and 1 tbls. sherry or vermouth into onion mixture. Season with salt and pepper. See Note. Stir in pine nuts.
- Note: this can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.
- This is good served over Black Cod with Roasted Sweet and Sour Onions.

- Cut each onion into 8 wedges, leaving the stem end, don’t cut it off as this keeps the wedges somewhat intact. Then remove the peel – it’s easier to remove the peel when the onions are in wedges rather than whole but if preferred, peel them whole. Place on baking sheet.
- Add the oil, half the balsamic, thyme, salt and pepper and toss gently to coat the onion. Roast for 40 minutes. Sprinkle with half the sugar, turn the onion and sprinkle with remaining sugar.
