BAKED PEARS (NO ADDED SUGAR)
Baked pears are an elegant dessert that's easy enough to make for family dinners. This recipe has no added sugar, and you're not going to miss it!

- Preheat your oven to 350 degrees F. Lightly butter the bottom of a 9 X 13 baking dish.
- Peel the pears, halve and core them. You can core them with a melon baller, with a metal measuring spoon, or with a paring knife, as I do in the video below. I like to leave the stems on - they make for a pretty presentation. But you can cut them off if you wish. You can also shave a thin slice off the bottom of each pear half, enabling them to stay upright in the baking dish.
- In a small bowl, whisk together the butter, vanilla, and cinnamon. Brush the pears with the mixture on both sides.
- Arrange the pears in the prepared baking dish, cut side down. Bake them until fork-tender, about 30 minutes per side, basting every 15 minutes with the pan juices.
- Brush the pears one last time with the pan juices and serve warm.

Steps:
- Core pears but do not peel.
- Place in greased 9" square pan.
- Combine oats, sugar, spices and butter until crumbly.
- Stuff pears letting excess fall into pan.
- Pour 3/4 cup apple juice into pan.
- Bake at 350 degrees for one hour, basting after 30 minutes. Add more juice if necessary.
- Cool 30 minutes before serving.
ROASTED PEARS WITH BLUE CHEESE
Steps:
- Preheat the oven to 375 degrees F.
- Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
- Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
- In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
- Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.
ROASTED STUFFED SECKEL PEARS
Seckel pears are ideal for this recipe because they are small and still firm even when they are fairly ripe. For the stuffing, I like to combine almonds with figs, or walnuts with prunes, but any other combination is good too. If you use larger pears, you will need to double the stuffing.

- Preheat the oven to 400 degrees F (200 degrees C). Pour wine into a baking dish.
- Core pears carefully using an apple corer.
- Toast almonds in an ungreased pan over medium-low heat until lightly browned, 3 to 5 minutes. Let cool.
- Combine almonds, figs, honey, and gingerbread spice in the bowl of a food processor; pulse until smooth, scraping down the sides of the food processor as needed. Spoon the stuffing into the pears and place them in the prepared baking dish.
- Bake in the preheated oven until the filling is browned and the pears are soft but not falling apart, 20 to 25 minutes. Serve warm with whipped cream.
