MACERATED STRAWBERRIES WITH MASCARPONE WHIPPED CREAM AND MINT

- In a mixing bowl, stir together the strawberries and sugar. Set aside, and let sit for at least 10 minutes.
- Meanwhile, using a hand-mixer or stand-up mixer with the whisk attachment, on medium speed, blend together the mascarpone cheese and 1 tbsp of the powdered sugar until light and fluffy. Spoon into a separate bowl and set aside.
- Pour the cream and the remaining sugar into the original mixing bowl and blend on high-speed just until stiff peaks form, about a minute or two. Turn the mixer off and carefully fold the whipped cream into the mascarpone mixture. Add the lemon zest and gently stir to combine.
- Divide the strawberries among four small plates or bowls and top with the mascarpone cream and a sprinkle of fresh mint. Serve immediately.
STRAWBERRIES WITH MASCARPONE AND BALSAMIC VINEGAR
From a BBC program called Saturday Kitchen. Its very rich, I doubled the strawberries and the balsamic vinegar to suit our taste, feel free to halve it if you think it is nicer.

- Place the hulled strawberries and whole strawberries in a bowl and crush lightly with a fork or potato masher, mix with the grenadine and set aside.
- Place peppercorns in a frying pan, dry roast on a stove for a few minutes, allow to cool and then coarsely crush using a mortar and pestle.
- In another bowl mix the caster sugar with the balsamic, vanilla and the liqueur or vodka, mix in the single cream.
- Beat the mascarpone until smooth and mix into the single cream mixture.
- Spoon a little of the crushed strawberries into the bottom of Martini glasses, wineglasses or Knickerbocker Glory glasses. Spoon over a little of the cream mix and sprinkle with some of the peppercorns.
- Repeat until the glasses are full, finishing with the cream and the final sprinkle of pepper.
- Garnish with whole or cut strawberries.
BALSAMIC STRAWBERRIES WITH WHIPPED MASCARPONE CHEESE
My neighbor brought this over one evening for my husband and I to sample. We just happened to be entertaining some guests, and hadn't planned a dessert. When the meal ended, I brought out the two portions and divided it carefully amongst the group. We practically licked our bowls clean, this was so wonderful. He had pulled the recipe from epicurious. Makes a beautiful presentation, very simple, very good. just be certain to use a good-quality balsamic.

- Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan.
- Stir over medium heat until sugar dissolves.
- Boil until syrup is reduced to scant 1/4 cup, about 3 minutes.
- Transfer to small bowl; cool completely.
- (Can be made 2 days ahead. Cover and refrigerate.) Combine mascarpone, cream, vanilla, and 2 tablespoons sugar in medium bowl.
- Whisk until thick soft peaks form.
- Cover and refrigerate up to 4 hours.
- Combine berries and remaining 2 tablespoons sugar in large bowl; drizzle with balsamic syrup and toss to blend.
- Let stand 30 minutes, stirring occasionally.
- Divide berries and syrup among 6 goblets.
- Top with mascarpone mixture.
