2 slices bacon
24 unopened, fresh, live medium oysters
1 ½ cups cooked spinach
⅓ cup bread crumbs
¼ cup chopped green onions
1 tablespoon chopped fresh parsley
½ teaspoon salt
1 dash hot pepper sauce
3 tablespoons extra virgin olive oil
1 teaspoon anise flavored liqueur
4 cups kosher salt

Steps:

  • Preheat oven to 450 degrees F (220 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Clean oysters and place in a large stockpot. Pour in enough water to cover oysters; bring the water and oysters to a boil. Remove from heat and drain and cool oysters. When cooled break the top shell off of each oyster.
  • Using a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley. Add the salt, hot sauce, olive oil and anise-flavored liqueur and process until finely chopped but not pureed, about 10 seconds.
  • Arrange the oysters in their half shells on a pan with kosher salt. Spoon some of the spinach mixture on each oyster. Bake 10 minutes until cooked through, then change the oven's setting to broil and broil until browned on top. Serve hot.

Feel free to use any vegetables you like here. I like onions, carrots and zucchini for the taste and color but feel free to improvise. The sprinkling of herbs with the lemon slices which lend color and flavor. This is a no fuss dinner that can be cooked in the oven or on the grill. Sometimes I like to place the fish on a bed of potatoes and onions. Potatoes are one vegetable that needs to be precooked before you prepare the packet so I'll slice the potatoes into rounds, mix them with the onions, a bit of olive oil and roast or zap them in the microwave until they are barely soft then continue with the rest of the recipe.

2 pounds of fresh Rockfish (halibut, snapper or other mild white fish.)
1 Cup Small onion (very thinly sliced (about 1 ))
2 carrots julienned
1 medium Zucchini (seeded and julienned)
4 Tablespoons of Olive oil
4 Tablespoons of White Wine
½ cup fresh herbs: Parsley (fennel, basil)
½ lemon thinly sliced
salt and pepper as needed

Steps:

  • Preheat the oven to 450*.
  • Pat the fish dry and cut it into even serving pieces, if desired. Set aside. Place the vegetables in a large bowl, sprinkle with salt and pepper then drizzle with 2 tablespoons of olive oil, mix well.
  • On a baking sheet, spread out a large sheet of heavy-duty aluminum foil. Make sure the foil can wrap around the fish and vegetables with enough room for the steam to circulate as the package bakes. Spread the vegetables down the center of the foil, lay the fish filets over the vegetables, sprinkle the fish with salt and pepper, lay the lemon slices over the fish then top with ¼ cup of the fresh herbs. Drizzle the white wine and the remaining olive oil over the fish then seal the packet by folding the foil down the center over itself then seal the ends.
  • Bake the fish in the oven on the baking sheet for 20 - 40 minutes depending on how thick your filets are. To test the fish, gently open the packet and test the fish with a fork. If it flakes easily then it's done, if not carefully seal up the packet, return it to the heat and try again in about 5 minutes.
  • When the fish is done gently open the packet taking care not to spill the juices or burn yourself, then slide the fish, vegetables and juices onto a serving dish. Sprinkle this with sea salt, pepper and the remaining herbs and serve immediately.

  • Make the salsa: In a small bowl, combine all the salsa ingredients, season with salt & pepper (pepper is optional). Set aside while preparing everything else.Start the rice: Melt the butter in a large saucepan over medium heat. Add onion and 1/2 t. salt. Cook until softened, about 5 minutes. Add the rice and coconut and saute about 3 minutes, until rice starts to become translucent at the edges. Add the water, bring to a boil, then reduce heat to low and cover. Cook about 15 minutes, until the water is absorbed and rice is tender. Remove pan from heat and let sit, covered for 10 minutes. Gently fluff the rice with a fork. Add the cilantro and lime juice and pepper to taste.Make the fish: Meanwhile, pat the fish fillets dry and season with salt and pepper. In one dish place the flour, in another dish, beat the eggs and 1 T. water until mixed, and in another mix together the coconut and panko. Working with one fillet at a time, dredge fish in the flour, then pat off the excess, dip in the egg, letting any excess drip back into the bowl, then coat in the coconut-panko mix, pressing the coating onto the fish to be sure it adheres.Heat the oven to 200 degrees f. (to keep the fish warm between batches). Heat the oil in a large nonstick skillet over medium-high heat until the oil shimmers and just starts to near the smoking point. Add 2 of the fillets and cook about 3 minutes per side, until the fish is golden and cooked through. Drain briefly on paper towels and place in the warm oven while cooking the remaining fish. Serve the fish and rice with the mango salsa and lime wedges.

1 cup heavy cream
1/2 cup prosciutto ham, sliced and diced
3 ounces Parmesan cheese
10 gulf oysters
1 cup fish stock
Pinch saffron
2 ounces Pernod
Sea salt and pepper, to taste
Arrowroot, if needed
6 ounces local rockfish
2 garlic cloves, minced
2 shallots, chopped
3 sweet potatoes, one sliced on mandoline
1 zucchini
1 summer squash
1 turnip
Butter
1 bulb fennel, thinly sliced
Chervil sprigs

Steps:

  • Make Rockefeller mixture: Saute spinach. Mix in cream, ham and Parmesan cheese. Poach the oysters in fish stock, then add to spinach mixture.
  • To make the sauce: Reduce fish stock, add garlic, shallots, saffron and Pernod. Season with salt and pepper. Thicken with arrowroot, if needed.
  • Preheat oven to 350 degrees. Prepare the fish: Use 2 pieces of fish. Leave 1whole and cut a slit in the middle of the second. Place stuffing on whole piece. Lay the second piece over the stuffing so the stuffing shows through the slit. Bake in oven for about 15 minutes.
  • Make the Sweet Potato Napoleon: Deep-fry the 1 sliced sweet potato until crisp. Boil the rest of the potatoes until soft. Put through food mill. Plate by layering the sweet potato chips and pureed potatoes.
  • Make the Parisian Vegetables: Make Parisian balls with a melon scoop out of the zucchini, summer squash, and turnip. Blanch and toss in butter.
  • Deep-fry the fennel flames.
