Roasted Red Pepper Tomato Feta Dip image

This warm, savory dip combines roasted red peppers and cherry tomatoes with feta and cream cheese in an easy but elegant appetizer that's perfect for any occasion.

Number Of Ingredients 9

1 (8 oz.) block feta cheese (crumbled will work too)
2 cups cherry tomatoes
2-3 cloves garlic, sliced
3 tablespoons olive oil
Salt and pepper, to taste
8 ounces cream cheese, softened
1 teaspoon Italian seasoning
3/4 cup jarred roasted red peppers, coarsely chopped
Fresh basil, for garnish

Steps:

  • Preheat oven to 400 degrees. Lightly grease an 8 or 9-inch baking dish. Place the feta cheese in the center of the dish and the tomatoes and garlic around the feta. Drizzle with the olive oil and sprinkle with salt and pepper.
  • Bake for 25-30 minutes, or until tomatoes are tender and starting to burst. With an electric mixer, beat cream cheese and Italian seasoning until smooth. Add roasted feta and red peppers and mix to combine.
  • Transfer the feta and cream cheese mixture to the baking dish with the tomatoes. Stir gently, being careful not to crush the tomatoes, until combined. If desired, return to the oven and heat until hot and bubbly, or serve immediately. Garnish with fresh basil before serving.

1/4 cup extra-virgin olive oil
2 garlic cloves, peeled

  • Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and quarter peppers. Puree peppers, oil, garlic, and cheese in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

4 tablespoons butter, divided
3/4 cup panko bread crumbs
1 shallot, finely chopped
1 package (8 ounces) cream cheese, softened
2 cups (8 ounces) crumbled feta cheese
1/2 cup mayonnaise
1 jar (12 ounces) roasted sweet red peppers, well drained and chopped
Sliced French bread baguette or baked pita chips

Steps:

  • Preheat oven to 350°. In a large skillet, melt 3 tablespoons butter over medium heat. Add bread crumbs and toss to coat evenly; cook and stir 2-3 minutes until golden brown. Remove from pan., In same pan, heat remaining butter. Add shallot; cook and stir 1-2 minutes or until tender. Cool slightly., In a large bowl, beat cream cheese, feta cheese and mayonnaise until blended. Stir in peppers and shallot. Transfer to an 8-in. square baking dish. Sprinkle with toasted bread crumbs., Bake 30-35 minutes or until bubbly. Serve with baguette slices.

Trying to recreate a feta dip we like from a local Greek restaurant, I ran across a recipe similar to this on the internet and adjusted it to come up with this. Eat with tortilla chips or pita bread or cut up veggies.

Taste, and add additional cayenne pepper (up to 1/4 teaspoon more) if you want it to be extra spicy. Blend briefly to combine.
  • Transfer the mixture to a serving bowl. Smooth the top and create a few swooshes with a spoon. Lightly drizzle some olive oil on top, and sprinkle with red pepper flakes if desired.
