- Place all ingredients through the crushed red pepper in the bowl of a food processor. Pulse until completely smooth. Add 3 tablespoons Silk Original Cashewmilk and pulse again until combined and creamy. Transfer dip to a small bowl, cover, and refrigerate for at least an hour or until ready to serve.
- Sprinkle with pine nuts and serve with warm toasted naan and assorted chopped vegetables.

CREAMY WHITE BEAN DIP WITH CHARRED PEPPERS

- To make the bean dip: Combine the beans, lemon rind, garlic cloves, chiles and 1 teaspoon kosher salt in a 3- to 4-quart pot and add enough water to cover the beans by about 2 inches. Bring to a boil, lower to a simmer, cover and simmer for 1 1/2 to 2 hours, or until the beans are very tender. Discard the lemon rind and chile pepper and drain.
- Combine the beans, garlic and lemon juice in a food processor. Season with a couple pinches of kosher salt and black pepper. Puree until smooth, 2 to 3 minutes. While the motor is running, drizzle in the olive oil. Adjust the seasoning with kosher salt and black pepper, as needed. Reserve in the refrigerator.
- To serve, schmear some white bean dip on a plate. Pile on the Charred Baby Bell Peppers, squeeze on some of the charred lemon and drizzle with extra-virgin olive oil. Season with black pepper and garnish with a sprinkle of flakey salt.
- Heat a 12-inch cast-iron skillet over high heat until smoking. Add the olive oil and swirl it around to coat. When the oil is hot and shimmery, add the peppers and cook, tossing occasionally, for 3 to 4 minutes. Place the lemon cut-side down in the skillet and char simultaneously until deeply browned.
ROASTED RED PEPPER WHITE BEAN DIP | TRAEGER GRILLS
Roasted bean dip is a great party appetizer that will have guests digging in for more. It's bean and vegetable dip infused with a smoky flavor for a delicious bean side dish.

- When ready to cook, set the Traeger temperature to 400°F and preheat with the lid closed for 15 minutes.
- Peel away the outside layers of the garlic husk. Cut off the top of the garlic bulb, exposing each of the individual cloves. Place the bulb on a piece of foil. Drizzle the garlic with 1 tablespoon of olive oil, and wrap the foil around the garlic to seal it.
- Place the wrapped garlic and the bell peppers directly on the grill grates. Close the lid and roast the garlic for 25-30 minutes, and the peppers for 40 minutes. Rotate the peppers a quarter-turn every 10 minutes until the exterior is blistered and blackened.
- Remove the peppers and garlic from the grill. Place the peppers in a bowl and cover with plastic wrap. Let sit for 15 minutes to steam. Let the garlic cool in the foil.
- Remove and discard the skin, stems, and seeds, from the peppers.
- Squeeze out the individual cloves of garlic as needed. Reserve extra for garnish, if desired.
- Make the white bean dip. In a blender, combine 2 roasted red peppers, 4 cloves of roasted garlic, dill, parsley, cannellini beans, 2 tablespoons of olive oil, lemon juice, and salt. Blend until the dip is smooth and creamy, scraping down the sides of the blender. Add additional olive oil or lemon juice until the dip is desired consistency.
- Chop the remaining red pepper. Pour the dip into a bowl and serve topped with the chopped pepper and additional roasted garlic, if desired. Enjoy!
WHITE BEAN DIP

- In a food processor, combine the beans, roasted garlic, olive oil and lemon juice and process until smooth. Season, to taste, with salt and pepper. Garnish with fresh parsley leaves and serve with your favorite vegetables.
ROASTED RED PEPPER AND GARLIC BEAN DIP
Steps:
- Preheat the oven to 375 degrees F.
- Slice off the top 1/3 of the garlic head with a serrated knife, exposing the cloves. Drizzle the oil over the cloves and with some salt. Tightly wrap the head in aluminum foil and transfer it to the oven. Roast until the garlic is very soft and deep golden brown, about 45 minutes. When cool enough to handle, remove 4 cloves for the dip and reserve the rest for another use.
- Put the cannellini beans, garbanzo beans, roasted peppers, cumin, tahini, lemon juice, granulated garlic, granulated onion, cayenne and the 4 roasted garlic cloves in a food processor and pulse until chunky. While pulsing, slowly add the chicken stock and mix until smooth,
- Transfer the mixture into a large nonstick skillet over medium-high heat. Cook, stirring, until the mixture begins to bubble, about 5 minutes. Season with salt and pepper. Serve warm or at room temperature with tortilla chips for dipping.
ROASTED GARLIC AND WHITE BEAN DIP WITH ROSEMARY
The idea of adding a whole head of garlic to a dip might scare you, but compared to its bracing raw counterpart, roasted garlic is sweet and mellow. This dip is garnished with a sprig of sizzled rosemary that's for more than just looks: Frying the herb infuses the olive oil with its fragrance. Spoon the remainder over your finished bowl for a hit of rosemary you wouldn't get with just the minced leaves, then scoop it up with warm pita, cucumber spears, and carrot sticks.

- Roast the garlic: Heat the oven to 400 degrees. Peel off most of the garlic's outermost skin but leave the whole head intact. Trim about 1/4 inch off the top of the garlic to expose the cloves. Place the garlic on a large piece of aluminum foil, then drizzle 1 teaspoon olive oil over the exposed cloves and close the foil into a pouch. Bake for 40 to 50 minutes, until you can pierce the center of the head with a knife. Let cool slightly.
- Squeeze the roasted garlic cloves into the bowl of a food processor. Add the white beans, 4 tablespoons olive oil, lemon juice, rosemary leaves, black pepper, cayenne (if using), hot water and salt. Purée until smooth, then taste for salt, pepper, rosemary and lemon juice. Adjust as necessary. Transfer to a serving dish.
- Heat remaining 1 tablespoon of olive oil in a small heavy skillet over medium-high heat. When hot, add the remaining rosemary sprig - it should sizzle. Cook until brown and crisp, flipping once, about 1 minute per side, then transfer to the top of the dip as a garnish. Pour or spoon the remaining olive oil, now infused with rosemary, over the top of the dip. Sprinkle with cayenne for a little additional heat.
