ROASTED PEPPER SALAD WITH FETA, PINE NUTS & BASIL
Pretty to look at and delicious to eat, this roasted pepper salad is the perfect make-ahead dish for a summer get-together.

- Set an oven rack in the top position and preheat the broiler. Line a baking sheet with aluminum foil. Place the pepper halves on the prepared baking sheet and broil for 5-10 minutes, rotating the pan once, until well charred. Remove the peppers from the oven and place in a bowl; cover tightly with plastic wrap (so they steam) and let cool until luke warm.
- Peel the skin from the peppers (do not rinse under water) and cut into ¾-inch strips. Place back in the bowl; add the olive oil, red wine vinegar, garlic, 2 tablespoons of the basil, oregano, sugar, salt and pepper. Refrigerate for at least one hour or overnight.
- Heat a small skillet over medium heat. Add the pine nuts and cook, stirring frequently, until golden, about 4 minutes. Immediately transfer the nuts to a small bowl to stop the cooking process. (Pay close attention: they go from perfectly golden to burnt quickly.)
- Transfer the marinated peppers to a serving dish and top with the feta, olives, toasted pine nuts and remaining tablespoon basil (do not toss). Garnish with whole basil leaves if desired.

- Cook fettuccini according to package directions.
- While pasta cooks:
- Melt butter in large skillet. Saute garlic until fragrant. About 2 minutes.
- Add, red peppers, cream, feta and 1/4 cup parmesan.
- Saute for about 4-5 minutes until flavors meld.
- Using an immersion blender or regular blender - puree until almost smooth. A few chunks of red pepper is kinda nice.
- Add chopped basil - salt and pepper to taste.
- Drain pasta. Add pasta to sauce in skillet.
- Toss and top with additional fresh basil and grated parmesan.

- Combine roasted red peppers, 1 teaspoon Italian seasoning, oil, garlic, salt, and pepper in a food processor or blender Pulse til smooth.
- Grease a large skillet. Season chicken with remaining 1 teaspoon Italian seasoning. Cook chicken in your greased skillet over medium heat for 6-8 minutes on each side until cooked through and lightly browned on the outside. Transfer to a plate and cover to keep warm.
- Transfer red pepper mixture to the pan and stir over medium heat 2-3 minutes until hot throughout. Add heavy cream and stir until mixture is thick and creamy.
- Add chicken and toss in the sauce to coat. Garnish with crumbled feta cheese and fresh basil and serve.

- Preheat your oven's broiler. Place red bell peppers a few inches from the heat, and broil until blackened, turning frequently to roast evenly. Remove from the oven, cool slightly, and peel. Remove seeds, and chop into 1 inch pieces.
- Heat a skillet over medium-high heat, and spray with cooking spray. Add onions, garlic and celery, and saute with the cumin, coriander, cayenne pepper and salt until onions and celery are tender. Stir in the sour cream, Merlot, milk, soy sauce, lemon juice, feta cheese, roasted pepper, and mint leaves. Transfer portions of the soup to a blender, and process until smooth. - Saute 2 tbs onion or shallots in 2 tbs butter for 2-3 minutes.
- Add 2 tbs flour and stir into a paste with a wisk.
- Slowly add 2 cups of milk, while stirring constantly.
- Bring to a light boil.
- Stir in feta cheese.
- Set aside.
- Place 2 red bell peppers with a little olive oil on the oven rack closest to the broiler, and broil for about 7 minutes, til slightly charred.
- Add broiled red bell peppers to the sauce, and simmer on medium low heat for a few minutes.
- Put the sauce mixture with the bell peppers into a blender and puree.
- Add salt and pepper to taste.
- Serve over pasta, chicken or other dish of your choice and top with fresh mint or basil.

- Preheat the oven to broil on high. Roast the peppers, skin side up under the broiler for 7-10 minutes or until skins are blackened all around.
