This is a hearty meatless meal that my family enjoys. If you're not a fan of pumpkin, you can use butternut squash instead. -Wendy Masters, East Garafraxa, Ontario

1 medium pie pumpkin (about 3 pounds)
2 tablespoons olive oil
1 teaspoon salt, divided
1/4 teaspoon ground nutmeg
12 uncooked lasagna noodles
1/2 cup butter, cubed
1 cup chopped onion
3 garlic cloves, minced
1/2 cup all-purpose flour
4-1/2 cups 2% milk
1/4 cup chopped fresh sage
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Crushed red pepper flakes, optional

Steps:

  • Preheat oven to 400°. Peel pumpkin; cut in half lengthwise; discard seeds or save for toasting. Cut into 1/4-in. thick slices. Place in a single layer on two greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with 1/4 teaspoon salt nutmeg. Roast until tender, 30-35 minutes. Reduce oven temperature to 350°., Meanwhile, cook lasagna noodles according to package directions for al dente. In a large saucepan, melt butter over medium heat. Add onion; cook and stir until tender, 6-7 minutes. Add garlic; cook 1 minute longer. Stir in flour and remaining 3/4 teaspoon salt until smooth; gradually whisk in milk and sage. Bring to a boil, stirring constantly; cook and stir until thickened, 8-10 minutes. Remove from the heat; stir in Parmesan cheese. Drain noodles., Place 3 noodles in a greased 13x9-in. baking dish. Layer with 1/3 of the pumpkin, 1-1/3 cups sauce and 1/2 cup mozzarella cheese. Repeat layers twice. Top with remaining noodles, sauce and mozzarella cheese., Bake, covered, 30 minutes. Uncover and bake until golden brown bubbly 30-35 minutes longer. Let stand 10-15 minutes before serving. If desired, sprinkle with red pepper flakes.

750g Crown Prince pumpkin or butternut squash
2 tbsp olive oil
500g spinach, washed
1 tbsp butter, plus extra for greasing
whole nutmeg, for grating
6 fresh lasagne sheets
100g parmesan (or vegetarian alternative), freshly grated
1 medium onion, finely chopped
1 tbsp olive oil
1 celery stick, finely chopped
2 garlic cloves, finely chopped
400g can cherry tomato
2 tsp light muscovado sugar
500ml full-fat milk
6 peppercorns
½ onion
1 bay leaf
50g plain flour
50g butter

Steps:

  • Heat oven to 200C/180C fan/gas 6. Halve the pumpkin or squash, peel, deseed, then slice into 1cm slices. Toss with the oil in a roasting tin, season, then roast until tender and slightly charred at the edges. This can take up to 40 mins.
  • Meanwhile, make the tomato sauce. In a pan, soften the onion in the oil for 5 mins, then add the celery and garlic and cook for 1 min more. Add the tomatoes and sugar, then leave to simmer, uncovered, for 30 mins. Stir from time to time. You should be left with a thick purée. Season to taste.
  • Put the spinach in a saucepan with the water that still clings to it after washing, cover and put over a medium heat. Wilt the spinach for about 4 mins - you'll need to turn it over with tongs every so often to make sure it all comes in contact with the heat at the bottom of the pan. When completely wilted, leave until cool enough to handle, then squeeze the water out with your hands. Chop and put in a pan with the butter. Gently heat, tossing together so the spinach is coated in butter, then season with salt, pepper and a generous grating of nutmeg.
  • For the béchamel sauce, bring the milk to the boil in a pan with the peppercorns, onion and bay leaf. Set aside for 5 mins to infuse, then strain the milk into another pan. Add the flour and butter, then gently heat, whisking all the while, until you have a thick, smooth sauce.
  • Heat oven to 200C/180C fan/gas 6 and assemble the lasagne. Butter a large gratin or baking dish, roughly 1.4 litres in capacity. Put a layer of pumpkin in the bottom followed by a layer of tomato sauce. Lay lasagne sheets on top of this, cutting them to fit if necessary (you don't want any overlapping). Now add a layer of béchamel followed by a scattering of spinach and half the cheese. Top with more lasagne sheets, pumpkin, tomato sauce, more lasagne and a final layer of béchamel sauce. Sprinkle the remaining cheese over the top. Bake for 40 mins, or until the lasagne is golden and bubbling.

Delicious vegetarian lasagna with pumpkin, mushrooms, plenty of cheese and a really brilliant white sauce

0.7 oz dried porcini mushrooms (20g)
1 cup boiling water (240 ml)
14 oz cremini mushrooms (400g)
2 tablespoons olive oil
1/3 teaspoon nutmeg
salt and pepper to taste (about 1 teaspoon salt and ½ teaspoon black pepper)
3.5 lbs butternut squash or pumpkin (1.5kg) (with skin and seeds)
2 tablespoons olive oil
2 teaspoons dried / fresh sage (finely chopped)
½ teaspoon cinnamon
1/3 teaspoon nutmeg
salt and pepper to taste (about 1 teaspoon salt and ½ teaspoon black pepper)
3 tablespoons butter (40g/1.5oz)
1 small onion
4.5 tablespoons flour (40g/1.5oz)
2 cups milk (480 ml)
1 cup dried mushrooms soaking water (240 ml)
1 tablespoon lemon juice (or to taste)
1/3 teaspoon nutmeg
salt and pepper (to taste)
2 large eggs (lightly beaten)
7 oz 'yellow' low-moisture mozzarella cheese (200g) (or 2 handfuls of grated parmesan cheese (about 120g / 4.2 oz))

Steps:

  • Soak the dried porcini mushrooms in boiling water, set aside.
  • Wash the cremini mushrooms, cut into thick slices (about ¾ cm / ⅓ inch), mix with the oil and spices together. Arrange evenly on a baking tray lined with baking paper.
  • Preheat the oven to 200 °C / 400 °F / Gas Mark 6, no fan (you will need to bake the pumpkin and mushrooms separately) or 180 °C / 375 °F with fan (or using convection oven) (you can bake them at the same time).
  • Peel the pumpkin, using a tablespoon remove the seeds and fibers, cut into 1.5 cm / ½ inch cubes, mix with the oil and spices together, spread evenly on a second baking tray lined with baking paper.
  • Put the mushrooms and pumpkin in the oven (on separate baking sheets) and bake for about 25 minutes, until soft and lightly browned.
  • Strain the dried mushrooms, reserving the soaking water (important!), chop them finely.
  • While the pumpkin and mushrooms are in the oven - prepare the sauce.
  • Melt the butter in a medium pot, when it's bubbling, add the onion, cook for about 5 minutes until translucent. Add the flour, whisk it thoroughly, add the milk and mushroom soaking water gradually, after each addition (about 150 ml / 2/3 cup) mix thoroughly with a whisk, so that there are no lumps, the sauce should also thicken a bit. Remove the sauce from the heat, season with lemon juice, nutmeg, salt, and pepper to taste. Cool slightly, add lightly beaten eggs and whisk. The sauce will be rather thin, that's ok.
  • Remove the mushrooms and the pumpkin from the oven.
  • Finely chop the cremini mushrooms and mix with the porcini mushrooms together.
  • Decrease the temperature to 190 ° C / 375 °F / Gas Mark 5, no fan (if you have a convection oven reduce the temperature by about 20°).
  • Assemble the lasagna: Pour a little less than 1/3 of the sauce on the bottom of the baking dish (about 31x21 cm / 12 x 8 inch ). Place a layer of lasagna sheets on top, then arrange half of the pumpkin chunks, cover with another lasagna sheets layer, arrange evenly the mushrooms, pour the second 1/3 of the sauce, arrange lasagna sheets, then the rest of the pumpkin, then again lasagna sheets and pour the last 1/3 of the sauce. Sprinkle grated mozzarella cheese on top.
  • Cover with a piece of aluminum foil and bake for 30 mins, then uncover and bake for 10-15 min, until the cheese is golden.
  • Let stand for about 10-15 minutes before cutting into portions.

1 tablespoon minced fresh sage, divided
2 teaspoons salt, divided
1 teaspoon ground black pepper, divided
½ teaspoon ground nutmeg

1 ½ pounds sliced baby bella mushrooms
1 large onion, diced
2 cloves garlic, minced
3 cups pumpkin puree, divided
1 ½ cups heavy whipping cream, divided
1 ½ cups grated Parmesan cheese
cooking spray
12 lasagna noodles
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 dash ground nutmeg
1 dash ground cloves
2 tablespoons butter, cut in small pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix sage, salt, black pepper, 1/2 teaspoon nutmeg, and 1/2 teaspoon cloves together in a small bowl to make a spice blend.
  • Heat olive oil in a large skillet over medium-high heat. Add mushrooms, onion, garlic, and 1/2 of the spice blend; cook and stir until mushrooms are tender and all moisture has evaporated, about 5 minutes.
  • Combine 2 cups pumpkin puree, 3/4 cup heavy cream, 1/2 cup Parmesan cheese, and remaining spice blend in a bowl.
  • Grease a 9x13-inch baking pan with cooking spray. Arrange 4 lasagna noodles in the bottom so they slightly overlap. Cover with 1/2 of the pumpkin mixture and 1/2 of the mushroom mixture. Dot with 1/2 cup ricotta; sprinkle 1/2 cup mozzarella cheese on top. Repeat layers once more. Place remaining 4 noodles on top.
  • Combine remaining 1 cup pumpkin puree, remaining 3/4 cup heavy cream, 1 dash nutmeg, and 1 dash cloves. Spread on top of noodles. Sprinkle remaining 1 cup Parmesan cheese on top. Dot with butter. Cover with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Uncover and bake until bubbly, about 15 minutes more.

4 cups medium-diced pumpkin or winter squash
Unrefined coconut oil
Kosher salt and coarsely ground black pepper
1 medium onion, small diced
2 cloves garlic, chopped
2 1/2 pounds Swiss chard, stemmed, leaves chopped (16 cups packed)
2 teaspoons poultry seasoning
16 ounces cream cheese, room temperature
2 cups milk
1 teaspoon cayenne pepper
2 cups full-fat ricotta
2 eggs, whisked
2 cups grated Gruyere
2 cups grated Parmesan
9 ounces no-boil lasagna noodles, such as Barilla
4 ounces pesto, store-bought or homemade, recipe follows
6 cloves roasted garlic
1/2 cup toasted pecans
Zest and juice of 1 lemon
4 cups basil leaves
2/3 cup grated aged Gouda
Kosher salt
1 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the pumpkin to a large bowl, drizzle with 2 tablespoons coconut oil, and toss to coat. Sprinkle generously with salt and pepper and then spread in a single layer on a rimmed baking sheet. Transfer to the oven and roast, tossing once, until golden brown and tender, 50 to 60 minutes.
  • Meanwhile, add 1 tablespoon coconut oil to a Dutch oven over medium heat, and allow to melt. Add the onions and saute until tender, 3 minutes. Add the garlic and Swiss chard, and saute until wilted, 3 to 5 minutes. Stir in the poultry seasoning and sprinkle with salt and pepper. Set aside.
  • Add the cream cheese and milk to a medium saucepan over medium heat. Heat until the cream cheese has melted, about 5 minutes. Whisk in 1/2 teaspoon of the cayenne, and season with salt and pepper. Turn off the heat.
  • In a large bowl, combine the ricotta, eggs, 1 1/2 cups each of the Gruyere and Parmesan, and some salt and pepper. Stir to combine, then set aside.
  • Ladle 1/2 cup of the cream cheese sauce into a 9-by-13-inch flameproof baking dish, spreading with a spatula to cover the bottom. Add a single layer of noodles, and then layer with half of the remaining cream cheese sauce, half of the chard mixture and half of the pumpkin. Add a second layer of noodles, and then half of the ricotta mixture and all of the pesto. Add a third layer of noodles, followed by the remaining cream cheese sauce, chard and pumpkin. Add a fourth, and final, layer of noodles, and spread with the remaining ricotta mixture.
  • Cover the baking dish with aluminum foil, and transfer to the oven. Bake until the noodles are soft and the cheese is hot and melty, 55 to 60 minutes.
  • Remove the baking dish from the oven and turn on the broiler. Remove the foil from the baking dish. Top the lasagna with the remaining grated Gruyere and Parmesan. Broil until golden brown and bubbly, 3 to 5 minutes.
  • Let rest for 15 minutes before serving.
  • Add the garlic and pecans to a food processor, and pulse to a thick paste. Add the lemon zest, basil, Gouda and 1 teaspoon salt, and pulse to chop up the basil leaves; this will be very thick. With the motor running, drizzle in 2/3 cup of the olive oil; if you want the sauce thinner, add the remaining oil. Add the lemon juice, and pulse to combine. Taste and adjust the seasoning as needed. Refrigerate, covered, for up to 1 week.

Cut into chunks about ½ to 1-inch in size. Set aside. Reduce the heat on the oven to 350° F. In a small bowl, mix together the pumpkin and the next 7 ingredients (salt through maple syrup). Set aside. In another small bowl, stir together the ricotta, 2/3 of the chopped mozzarella, and ¼ cup of Parmesan. Set aside. Lightly coat a baking dish with cooking spray. Spoon 1/3 cup of the pumpkin sauce in the dish. Top with 2 lasagna noodles. Spoon ¼ of the ricotta mixture over the noodles. Top with ¼ of the butternut squash chunks. Top with 1/3 cup of sauce. Top with two more noodles, continuing to layer like this until all the cheese and squash is used. Add last 2 lasagna noodles, and remaining sauce. Dot the top with remaining chopped mozzarella and sprinkle with remaining Parmesan. Cover with foil. Bake for 50 minutes. Let stand, covered, on a rack for 20 minutes before serving. Enjoy!
