Easy Bombay Potatoes image

Easy Bombay Potatoes AKA Bombay Aloo - the best ever Indian Spiced Roasties. The perfect partner for any curry recipe or to spice up your Sunday Roast !

Number Of Ingredients 7

8 to 10 medium potatoes, peeled & cut into small chunks (I used Maris Piper)
½ tsp sea salt
1 tsp turmeric
2 to 4 tbsp rapeseed oil or vegetable oil
1 onion, diced
2 tsp black mustard seeds
2 tsp curry powder or paste or garam masala (I used Pataks Madras paste)

Steps:

  • Preheat your oven to 200°C / Gas Mark 6 / 390°F
  • Place the potatoes in a large saucepan and cover with water.
  • Add salt and turmeric before bringing your potatoes to the boil and then simmer gently for 5 minutes.
  • Drain your potatoes and toss them with the remaining ingredients. Make sure all the potatoes are well coated.
  • Place onto a large roasting pan and pop in the oven for 30 to 40 minutes until nice and crispy. Turning halfway through cooking time.

Slight twist to an old favorite. Chili powder gives the potatoes and onions in this recipe some zing! I make these for breakfast every Sunday, and my family loves them!

5 medium red potatoes, diced with peel
1 medium onion, chopped
1 tablespoon garlic powder
1 tablespoon kosher salt
2 teaspoons chili powder
¼ cup extra virgin olive oil
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
  • Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

3 1/2 tablespoons canola oil, divided
3 lbs small red potatoes, halved, about 8 c
1 3/4 teaspoons black mustard seeds
6 dried red chilies
2 teaspoons fresh ginger, minced
3 garlic cloves, minced
1/2 jalapeno, seeded and minced
1 1/2 teaspoons kosher salt
1 teaspoon turmeric
1/2 teaspoon garam masala
1/2 cup fresh cilantro, chopped
1/2 cup of fresh mint, chopped
1 tablespoon fresh lime juice
8 lime wedges

Steps:

  • Preheat oven to 400.
  • Combine 1 T oil and potatoes, tossing to coat. Set aside.
  • Heat remaining oil, mustard seeds, and chiles in a large skillet over med-high. Cook 1 1/2 min or til seeds begin to pop. Reduce heat to med-low. Add ginger, garlic, and jalapeno to pan; cook 1 min, stirring constantly. Stir in salt, turmeric, and garam masala; cook 1 min, stirring constantly. Add spice mixture to potatoes; tossing to coat. Arrange potatoes in a single layer in a 13x9 inch baking pan coated with cooking spray.
  • Bake at 400 for 40 min or til tender and browned, stirring every 10 minutes. Stir in cilantro, mint and juice. Serve with lime wedges.
