2 lbs red potatoes
1 small onion, minced
3 -4 ounces diced prosciutto or 3 -4 ounces other ham
3 tablespoons cooking oil or 3 tablespoons butter (may mix)
1 -2 tablespoon minced fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Cook potatoes whole in salted water until fork-tender, 15-20 minutes.
  • Drain potatoes and chop coarsely.
  • Heat oil/butter mixture in a large skillet.
  • Add onions and cook until translucent.
  • Add prosciutto and rosemary and cook until it just starts to brown at the edges.
  • Add potatoes to pan and season with salt and pepper.
  • Cook potatoes 10-12 minutes, stirring lightly, or until they brown to your liking (adding a little oil or butter if potatoes try to stick).

Like this flavorful and fresh roasted vegetable dish that is sure to receive ooooh's and ahhhh's from your dinner guests. The little additons like the prosciutto, crushed red pepper and zesty Italian dressing give this roasted potatoe and corn side dish a healty helping of 'autumn-zing'.

1 lb potato (New or Red)
1/4 cup red onion, coarsely chopped
1/3 cup Italian salad dressing (Balsamic Vinegar Based)
2 ears corn
1 tablespoon olive oil
kosher salt
crushed red pepper flakes
1/2 cup prosciutto, chopped
2 tablespoons flat leaf parsley, coarsely chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Halve potatoes; toss in dressing with the onion - coat well. Place potatoes and onion in a large/wide baking pan.
  • Brush corn with olive oil; add to baking pan. Sprinkle vegetables lightly with salt and red pepper flakes.
  • Roast in oven for 20 to 25 minutes, or until potatoes are tender.
  • Cool just long enough until corn can be easily handled; cut corn off of the cobs.
  • Transfer potatoes and onions to a warmed serving platter; place potatoes cut side down. Top with corn and sprinkle with prosciutto. Garnish with parsley.

Number Of Ingredients 6

1 kg small potato (e.g chats)
100 g prosciutto (10 slices)
1/2 bunch fresh rosemary, cut into 4 cm sprigs
olive oil flavored cooking spray
salt
pepper

Steps:

  • Add potatoes to a saucepan and cover with water.
  • Bring to a boil and cook for 10 minutes or until a skewer comes out easily. Drain.
  • Preheat oven to 220 celcius.
  • Cut each slice of prosciutto in half lengthwise.
  • Wrap one slice of prosciutto around each potato and secure with a sprig of rosemary.
  • Place potatoes in a single layer in baking tray, spray with oil and sprinkle with salt and pepper.
  • Roast for 30 to 35 minutes or until golden and crisp.

I threw the ingredients together and it became a hit in our household. This side dish is easy to prepare and can easily be doubled for larger households. It also reheats fairly well for leftovers.

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 large green pepper, seeded and cut into chunks
15 ounces whole kernel corn, drained well
1 tablespoon vegetable oil
1/2 teaspoon Morton nature seasons seasoning blend

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a large casserole dish, mix Simply Potatoes Diced Potatoes with Onion, green pepper and corn. Drizzle with oil and mix to vegetables to coat evenly. Sprinkle Morton Natures Seasons seasoning blend over top and mix to distribute evenly. Spread evenly over bottom of pan.
  • 3. Place into oven and cook for 30-40 minutes, stirring occasionally so that all pieces get even browning. Serve with steak or other favorite meat.
