ROASTED PINEAPPLE
This Roasted Pineapple dish is one of the simplest, most delicious ways to eat pineapple. It's shockingly good. Since the fruit is cooked, it's safe from mischief causing microbes making it a perfect treat for pineapple lovers on chemo. We use a little melted butter to bake the pineapple, but if you want to avoid dairy or prefer to eat vegan, brush the wedges with the same amount of melted coconut oil instead.

- Preheat the oven 400 degrees. Line a baking sheet with parchment paper.
- Lay the pineapple on its side and slice off the top and the bottom. Stand the pineapple upright and trim off the rind. Try to get as much of the 'eyes' off as possible. Slice the pineapple in half, then into quarters. Lay a quarter on the cutting board and slice out the tough core. Repeat with all the quarters.
- Slice each wedge in half and place on the prepared baking sheet. Brush each wedge with half the melted butter or coconut oil and sprinkle evenly with 2 tablespoons of sugar. Roast for 15 minutes.
- Flip the pineapple wedges and brush with the remaining butter or oil and roast for another 15 minutes.
- Serve warm or at room temperature.

PINEAPPLE-COCONUT ICE CREAM
This is a recipe I came up with while I was pregnant. I couldn't find a cooked custard-based ice cream with pineapple and coconut as the main ingredients as I couldn't eat uncooked eggs. This thick and creamy ice cream is a family favorite. I can't seem to make it fast enough!

Steps:
- Whisk egg yolks and sugar in a medium bowl until thick and light yellow. Set aside.
- Heat half-and-half in a small saucepan until small bubbles start appearing around the edges. Remove from heat. Slowly drizzle into the eggs and sugar, whisking until incorporated. Return to the saucepan.
- Heat custard over medium-low heat, stirring constantly, until it coats the back of a spoon or reaches 165 degrees F (74 degrees C). Do not boil.
- Remove from heat and refrigerate for at least 4 hours, or until temperature reaches 65 degrees F (18 degrees C).
- Gently whisk in heavy whipping cream, 2 tablespoons reserved canned pineapple juice, and cream of coconut. Transfer to an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Add crushed pineapple and flaked coconut near the end of the churning or it will all settle to the bottom. Transfer to an airtight container and freeze until firm, about 4 hours.

GRILLED PINEAPPLE WITH ICED COCONUT CREAM
Steps:
- To toast coconut, place shredded coconut in a frying pan over medium heat. Stir constantly until lightly golden.
- In a bowl, combine ice cream, nectar, and rum and mix until smooth consistency. Put into a container and place in freezer for 2 to 3 hours. In a grill pan over high heat (or outdoor grill), grill pineapple rings for 3 to 5 minutes. Turn over and grill for an additional 3 to 5 minutes. Remove to plate and set aside.
- To serve, place pineapple ring on plate with a scoop of Iced Coconut Cream. Top with any accumulated juice from pineapple. Sprinkle with toasted coconut.

Steps:
- Mix coconut milk and pineapple preserves in a bowl with a stick blender. This breaks up pineapple pieces in the preserves into a finer texture so they are not so lumpy in the final dish. You can do this in the blender if necessary, or if you like chunky bits of pineapple just melt the preserves in the microwave for 30 seconds.
- Mix in the cream of coconut. Cover the bowl and place in the refrigerator overnight.
- Freeze the mixture in an ice-cream maker according to the manufacturer's instructions.
- Once the mixture has finished churning, spoon into a container with a tight lid and put it in the freezer for at least an hour to harden before serving.

- Preheat the oven to 220 Celsius (425 Fahrenheit) and line a roasting pan with baking paper. Toss the pineapple, sugar spices and Tequila in a bowl and mix to combine. Pour into the baking tray and roast for 20 minutes. Set aside to cool.
- Place the milk and cream in a saucepan and bring to a boil. Add the vanilla bean and seeds and cover with a lid and set aside for 30 minutes.
- Return the milk and cream to the heat and bring to the boil again. While you are doing this combine the egg yolks and sugar in the bowl of an electric mixer fitted with a whisk attachment. Whisk the egg yolks and sugar until combined and lightly thickened.
- When the milk and cream has returned to the boil pour 1/3 of the mixture into the egg yolk mixture while the whisk is running at a low speed. This will temper the mixture to ensure that it doesn’t curdle. Then slowly pour the remaining milk and cream mixture into the mixing bowl with the whisk going all the while.

- Make the ice cream. Place the egg yolks and sugar in a medium heatproof mixing bowl and place over a pan of simmering water. Whisk with an electric hand whisk until the sugar dissolves, and then the mixture doubles in volume and is straw-coloured. Remove from the heat and gradually whisk in the chilled coconut milk, then the milk powder and finally the coconut liqueur. Cover and chill for at least 1 hour, until cold.
- Churn the chilled mixture in an ice-cream maker for about 30 minutes, or until the ice cream is thick. Transfer to a freezer-proof container and freeze for at least 1 hour, or until ready to serve. If you don’t have an ice-cream maker, freeze the mixture in a shallow container for 1 hour, then use a fork to break up the ice crystals. Freeze again for at least 4 hours, breaking up the crystals every hour or so, until frozen.
- Make the lime crumb. Combine the lime zest and caster sugar in a small bowl and leave to dry in a warm place for 1 hour.
- Make the crumble. Place the flour and ground rice in a medium mixing bowl, then add the butter and rub it into the flour until the mixture resembles breadcrumbs. Stir through the porridge oats, coconut, nutmeg and demerara sugar (loose and crumbled cubes), then stir through the egg white until the crumble starts to clump together. Heat the oven to 180°C/160°C fan/350°F/Gas 4.
