CARIBBEAN ROASTED PINEAPPLE

1/2 teaspoon ground pink peppercorns
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
1 pineapple, peeled
1 tablespoon olive oil
1/2 cup heavy cream
2 tablespoons sugar
1 tablespoon white rum
1/2 cup crumbled gingersnap cookies

Steps:

  • Preheat the oven to 350 degrees F.
  • On a plate, mix together the peppercorns, allspice, cinnamon and salt. Sprinkle the spice rub evenly over the pineapple or roll the pineapple in it so it is evenly coated.
  • Heat a medium Dutch oven over medium heat. Add the oil and place the pineapple in the pan. Cook, rotating the pineapple regularly, until light brown all over, about 3 minutes. Cover the pan and transfer to the oven. Roast until tender to the core when pierced with the tip of a knife, about 45 minutes. Uncover and allow the pineapple to cool to room temperature in the pan.
  • Meanwhile, in a medium bowl, combine the cream, sugar and rum. Using a handheld mixer, beat on high speed until soft peaks form, about 3 minutes.
  • Slice the pineapple into 1-inch-thick rounds. Place 1 slice on each plate. Dollop with a spoonful of cream and a crumble of gingersnaps. Drizzle any remaining juice over the top.

6 slices fresh or canned pineapple
Butter flavored cooking spray
3 tablespoons dark brown sugar
1 cup heavy whipping cream, cold
1/2 cup confectioners' sugar
2 tablespoons white rum
Small bunches mint or leaves, for garnish

Steps:

  • Spray both sides of the pineapple rings with nonstick cooking spray. Rub the pineapple slices with the dark brown sugar.
  • In a small chilled bowl, beat the cold whipping cream with an electric beater until it starts to thicken. Add the confectioners' sugar and beat until it forms soft peaks. Add the rum and continue beating until medium stiff peaks form.
  • Heat a grill or grill pan until very hot. Spray the grill with more nonstick cooking spray. Brush the pineapple slices with butter and lay the pineapple in a single layer on the grill until browned, turning once, 1 to 2 minutes per side.
  • Add the pineapple and let roast until brown. Remove to a plate and allow to cool slightly.
  • Arrange the pineapple slices on a serving platter, then add a large dollop of the chilled whipped cream to each slice. Serve 2 pineapple rings per person. Garnish; with small bunches of mint or a few mint leaves.

1 golden pineapple-sliced into 1/4-inch slices
1 cup sugar
1 cup sweet wine (recommended: Gervertztraminer, mascato, rum)
1 vanilla bean-scraped
3 mint leaves
2 cups heavy cream
1/4 cup sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 cup toasted coconut flakes
1 9-by-9 inch baking pan
Aluminum foil

Steps:

  • In a stainless steel mixing bowl, combine pineapple slices, sugar, wine, vanilla bean and mint leaves. Place into baking pan and cover with foil. Bake at 350 degrees F for 30 minutes. Fruit should be slightly caramelized to the bottom of the baking pan and there should be fragrant syrup through out.
  • Whip cream to soft peaks. Add 1/4 cup sugar and spices. Continue whipping to stiff peak.
  • Serve slice of pineapple with syrup and dollop of cream. Sprinkle with toasted coconut.
