SLOW ROASTED TOMATO FARRO SALAD



Slow Roasted Tomato Farro Salad image

A tomato farro salad that is sweet from the slow roasted tomatoes, tangy from the feta cheese, chewy from the farro and bright from the lemon!

2 pints cherry or grape tomatoes, (halved)
1 tablespoon olive oil
1/2 tablespoon sugar
1 garlic clove, ( minced)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
2 cups cooked farro
½ cup crumbled feta cheese
½ cup pine nuts
¼ cup fresh herbs, (like parsley, chives, oregano, etc)
salt and pepper to taste
3 tablespoons lemon juice
2 tablespoons champagne vinegar
1 1/2 tablespoons honey
2 garlic cloves finely minced or pressed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Place the cherry tomatoes on the sheet and drizzle with olive oil. Sprinkle with garlic, sugar, salt, thyme and toss well. Roast for 1.5 to 2 hours, tossing every 30 minutes, until the tomatoes are super caramely and shriveled and sweet.
  • P.S. These keep great in a sealed container in the fridge for a few days if you have extra!
  • While the tomatoes are roasting, I like to cook the farro and toast the pine nuts. Cook the farro according to the directions (it's usually 1 cup farro to 2 cups liquid, simmering for about 30 to 40 minutes) and let it cool. If desired, you can toss it with a bit of olive oil so it doesn't stick together, but don't use too much since we toss the salad in dressing.
  • To toast the pine nuts, heat the nuts in a skillet over medium-low heat. Toss the nuts and shake the pan a few times until they are golden and fragrant, about 5 minutes. Don't take your eyes off them!
  • To make the salad, combine the farro with the tomatoes in a large bowl. If taking this to a party, I would combine it all cold and serve it cold. Toss in the feta cheese, pine nuts and fresh herbs. Add about ¼ cup of the dressing, tossing well. Taste and season with salt and pepper as needed. If needed, you can add more dressing, or serve the salad as is with the dressing on the side so people can use it themselves.
  • This stores great in the fridge for a few days!
  • In a bowl, whisk together the vinegar, lemon juice, honey, garlic, salt and pepper. Continue to whisk while streaming in the olive oil. This dressing stays great in the fridge in a sealed container for a week or so, so feel free to make a double batch if desired!

This is a truly seasonal salad, so make it soon, before the last fall tomatoes are gone. You'll find them at the farmers' markets, next to the tables full of peppers.

1 tablespoon sherry vinegar
1 teaspoon balsamic vinegar
1 small garlic clove, minced
1/4 cup extra virgin olive oil
Salt and freshly ground pepper
1 1/2 pounds red or red and yellow peppers, roasted
1 tablespoon slivered fresh basil
1 pound fresh ripe tomatoes, cut in wedges
1 head of leaf lettuce or romaine
2 ounces goat cheese, crumbled (optional)

Steps:

  • To make the dressing, mix together the sherry vinegar, balsamic vinegar, garlic, olive oil, and salt and pepper to taste.
  • Cut the roasted peppers into 1/2-inch wide strips. Toss with 2 tablespoons of the dressing. Add half the basil and toss again.
  • Remove and discard the tough outer leaves from the lettuce. Wash and dry the tender leaves and tear into bite-size pieces. Toss with the tomatoes and remaining dressing and basil. Line a platter or a wide bowl with the lettuce and tomatoes. Top with the peppers. Sprinkle on the goat cheese if using. Serve at room temperature or slightly chilled.

This delicious farro salad is made with fresh parsley, lemon juice, cherry tomatoes, and canned great northern beans.

2 cups water
1 cup pearled farro
12 ounces canned great northern beans, drained
½ cup halved cherry tomatoes
¼ cup freshly chopped parsley
¼ cup freshly grated Parmesan cheese
1 teaspoon lemon juice
salt and freshly ground black pepper to taste

Steps:

  • Bring water to a boil in a saucepan. Add farro and reduce heat, cover, and simmer until farro is tender and liquid has been absorbed, up to 40 minutes.
  • Fold cooked farro, great northern beans, cherry tomatoes, parsley, Parmesan cheese, lemon juice, salt, and black pepper together gently in a bowl and stir to combine.

1 cup farro
2 cups chicken or vegetable stock
2 yellow bell peppers
2 red bell peppers
12 cherry tomatoes
1/4 cup pancetta cut into 1/4 inch dice
1 preserved lemon, flesh removed and skin cut into 1/8 inch slivers
2 cups baby spinach leaves
1 Tbsp. extra virgin olive oil
2 Tbsp. white wine vinegar
1/2 tsp. anchovy paste

Steps:

  • In a medium saucepan place the farro and the stock and bring to a boil. Cover and reduce to a simmer. Simmer for 15 to 20 minutes until the farro is tender and the liquid is absorbed. Set aside. Cut the bell peppers in half lengthwise and place on a foil lined sheet pan. Broil the peppers for about 7 - 10 minutes or until the skins are completely blackened and blistering. Remove pan from the oven and place peppers in a bowl. Cover with plastic wrap. Reduce the oven temperature to 400 degrees and place the tomatoes on the sheet pan. Roast the tomatoes for 5 - 10 minutes until the tomatoes are soft. Remove from the oven and set aside. In a small non stick skillet, cook the pancetta until it is crispy and brown. Set aside. Peel the bell pepper and cut or tear into strips. In a small bowl combine the vinegar and the anchovy paste and whisk to combine. Drizzle in the olive oil. Season with salt and pepper. In a large bowl, combine the cooked farro, bell peppers, pancetta, preserved lemon, and spinach. Drizzle with the dressing and divide among 4 plates. Garnish with the roasted tomatoes and serve!
