ROASTED PEARS WITH HONEY-HERB YOGURT
Steps:
- Preheat the oven to 400 degrees F.
- Quarter the pears lengthwise and remove the cores with a paring knife.
- Melt the butter in a 10-inch cast-iron skillet over medium-high heat, then stir in 1 tablespoon of the honey and the cinnamon. Turn off the heat and add the pears, turning to coat. Arrange cut-side-down and roast, turning once, until golden and tender, about 30 minutes.
- Meanwhile, stir the yogurt, mint, thyme and the remaining 2 tablespoons honey together in a small bowl. Serve the warm pears drizzled with some of the cooking liquid from the skillet, a dollop of the yogurt, and a small mint leaf.

Steps:
- Position an oven rack in the upper third of the oven, and preheat to 450 degrees F.
- Combine 1 cup water, orange juice, honey and vanilla bean pod and seeds in a small saucepan. Bring to a boil, stirring occasionally to loosen the honey. Turn off the heat, and leave the saucepan on the stove. (You may need to reduce the roasting juices a little more once the pineapple is cooked.)
- Arrange the pineapple slices in a broiler-proof 9-by-13 baking dish. Pour the orange syrup over the pineapple. Roast, basting occasionally, until the pineapple is tender and the juices have reduced, about 20 minutes.
- Set the oven to broil, and continue to cook the pineapple until it is a deep golden yellow and lightly brown around the edges, 5 to 10 minutes more.
- The roasting juices should be reduced and syrupy, measuring about 1/4 cup. If they are too watery, remove the pineapple slices with a slotted spoon to a medium bowl, return the juices to the saucepan and reduce the juices over medium-high heat until syrupy, about 1/4 cup.
- Divide the yogurt among 4 small bowls. Top with the pineapple slices, and drizzle with the syrup.

- Peel and core the pears. Slice each half into 4 or 5 wedges. Place them in a roasting tin in a single layer.
- Whisk together the honey and the water until the honey dissolves. Halve the vanilla pod and save one half for the yogurt. Scrape the seeds of the other half and stir them into the honey-water mixture. Add the lemon juice. Pour this mixture over the pears and stir well to coat the pears. Press the cardamom seeds with a knife to open them and place them in the tin as well.
- Scrape the seeds of the second vanilla pod half, place them in the bowl where you will later mix them with the yogurt. Place the empty pod halves into the roasting tray as well.
