Ina Garten's Garlic-Roasted Potatoes from Food Network's Barefoot Contessa make the perfect classic side dish for any meal.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

In this recipe video, I show you how to make one of my favorite side dishes - Roasted Potatoes with Garlic and Parsley. The basic recipe is pretty simple, as you'll see in the video. The secret is to blanch the potatoes first, to help ensure that the inside is nicely cooked, while getting the outside golden brown and crispy. The addition of the garlic and parsley is a great way to add another layer of flavor and visually it looks really great.   • I love to roast potatoes. First, because they are potatoes, which are awesome. But second, roasting potatoes give you the opportunity to get a great contrast in flavor and texture, which crispy, caramelized, and seasoned outsides, and soft, tender centers. In this recipe video, I show you how to make a roasted potato that I finish with a mixture of garlic and parsley, called persillade in French. The garlic and parsley get an extra savory and herbaceous that makes these potatoes the perfect side for all kinds of meat and fish dishes. Hope you enjoy them as much as I do. RECIPE FOR ROASTED POTATOES WITH GARLIC AND PARSLEY Ingredients (for 4 servings) 8 - 15 new potatoes; about golf ball size Olive oil 2 - 3 garlic cloves 1/4 cup or a half handful of fresh Italian parsley· Recipe Overview and Keys to Success To make the best roasted potatoes you can, just follow these few things: You should blanch the potatoes before roasting them. Doing so will help ensure that you get the center full cooked through, while applying enough high heat to get the outsides nice and crisp. You can blanch them hours ahead of time. When searing the potatoes in the roasting pan, use high heat, and don't flip the potatoes until they have a nice golden brown crust; if you toss them in the pan, it will be hard to get them nicely browned For the garlic and parsley mixture, you want to chop them together, with a bit of salt, very finely. If cut to course, the garlic will be too strong, and won't be distributed among the potatoes just right. If needed, you can chop them in food processor instead of using a knife. Making Roasted Potato with Garlic and Parsley Cut the potatoes in half (you can do ahead of time and just keep them in water to prevent browning) Blanch the potatoes until they are just starting to turn tender Drain the potatoes off Pre-heat your oven to 400 degrees, and put a frying pan on the medium high heat on the stove top Add olive oil to coat the bottom of the pan, and once hot add the potatoes, cut side down Let the potatoes sauté for 5 - 10 minutes, or until they've become golden brown Flip the potatoes over, and move the whole pan into the oven to finish cooking - another 5 - 10 minutes While the potatoes are in the oven, chop the parsley and garlic together with a few pinches of salt until they are finely chopped and almost a paste Test the potatoes with a knife to ensure they are tender, remove from the oven and put them into a bowl Drizzle a bit of olive oil over them, toss in the garlic and parsley, season with salt and pepper and toss everything together and serve These potatoes are great with steak, chicken, pork and fish...just about anything really. ROASTED SWEET POTATOES WITH WALNUT PARSLEY & GARLIC



Roasted Sweet Potatoes With Walnut Parsley & Garlic image

1-1.2kg / 2.5 lb sweet potatoes (4-5 medium sweet potatoes), peeled and cut in halves or quartered wedges, depending on size
2-3 tablespoons of olive oil
1+1/2 teaspoons sea salt
1/2 cup raw walnuts
1 large clove of garlic, peeled and roughly diced
1/2 long red chilli, roughly sliced
Handful of fresh parsley (about 10 g / 0.5 oz)
Pinch of salt
Zest of 1/2 lemon

Steps:

  • Preheat the oven to 200 C / 395 F.
  • Line a flat baking tray with parchment paper. Place sweet potato wedges in the tray, inner side up, and drizzle them with olive oil. Sprinkle evenly with 1 teaspoon of salt. Place in the oven, middle shelf for 30 minutes. At a 15-minute mark, rotate the tray for even cooking.
  • In the meantime, place the topping ingredients in a food processor and grind into small crumbs. Set aside. If you don't have a food processor, you can chop the ingredients finely with a knife.
  • Once cooked, remove the sweet potatoes from the oven and season with a little more sea salt (about half a teaspoon or so). Sprinkle the walnut and parsley crumbs evenly over the top. You can garnish the final dish with a few whole parsley leaves and walnuts, if you like. Serve while hot.
  • Pre-roast the sweet potatoes for 25 minutes and store covered with cling wrap in the fridge. Reheat at 200 C for 5-10 minutes then sprinkle with the crumbs just before serving. You can make the topping ahead of time too and store in an airtight container.

3 pounds Yukon Gold potatoes
1 tablespoon salt
6 slices bacon, halved and cut crosswise into 1/2-inch pieces
2 tablespoons olive oil
salt and freshly ground black pepper to taste
½ cup grated Parmigiano-Reggiano cheese
2 cloves garlic, finely chopped
¼ cup fresh Italian flat-leaf parsley

Steps:

  • Place an oven rack in the bottom third of the oven and preheat oven to 450 degrees F (230 degrees C).
  • Place potatoes in a large pot and cover with cold water and salt. Bring to a boil; reduce heat to medium and simmer until potatoes are just tender when pierced with a fork, about 12 minutes. Drain.
  • Return potatoes to the pot; cover with a lid and shake pot vigorously, about 1 minute. Uncover and cool potatoes until easily handled, about 10 minutes. Peel potatoes and cut them crosswise into chunks.
  • Place bacon in a skillet and cook over medium-high heat, turning occasionally, until most of the fat has melted and bacon is tender, 5 to 7 minutes. Drain bacon slices on paper towels, reserving bacon fat in the skillet.
  • Brush the bottom of a shallow 10x15-inch baking pan with half of the bacon fat and olive oil. Sprinkle salt and pepper over potatoes and arrange in the baking pan.
  • Roast potatoes in the preheated oven until golden brown on the bottom, about 30 minutes. Remove potatoes from oven and reduce oven temperature to 375 degrees F (190 degrees C).
  • Turn potatoes over in baking pan. Top with bacon pieces, Parmigiano-Reggiano cheese, and garlic. Drizzle remaining bacon fat on top.
  • Return to the preheated oven and continue roasting until Parmigiano-Reggiano cheese is melted, about 15 minutes. Sprinkle with parsley and serve.

2 tablespoons fresh lemon juice
6 cloves garlic, grated
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 400-degrees F. Line a large baking sheet with baking parchment.
  • In a large bowl whisk together olive oil, butter, lemon juice, grated garlic, parsley, salt and pepper.
  • Slice potatoes in half and add to olive oil/butter mixture; toss to coat. Spread evenly on parchment-lined baking sheet.
  • Bake at 400-degrees F until done, about 35-40 minutes. Check doneness with a fork.

1/2 cup butter
8 red potatoes cut into quarters
1 small onion (diced small)
2 - 3 Tablespoons fresh parsley (chopped)
1 garlic clove minced
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees
  • Place the butter in a cast iron skillet on top of the stove. Add the onion to the pan. Saute on low just until the onion has softened, add the garlic, cook and stir 1 more minute. Add the potatoes, toss to coat well with the butter mixture. Place the cast iron skillet with the potatoes in the preheated oven. Bake at 375 degrees for 45 minutes (turning the potatoes with a spatula once halfway through baking) or until golden brown and softened. Season with salt and pepper, sprinkle with chopped parsley.
  • If using a baking dish - melt the butter in a saute pan, add the onion to the butter. Saute until onion is softened, add the garlic, stir and cook 1 more minute. Add the potatoes to the saute pan, toss to coat. Place the potatoes into a baking dish, place the baking dish into the oven, bake at 375 degrees for 45 minutes ( turning potatoes once with a spatula halfway through baking) or until golden brown and soft. Season with salt and pepper, sprinkle with chopped parsley.

1/4 cup olive oil
2 tablespoons mayonnaise
