1 pound fresh asparagus, trimmed
salt and pepper to taste
1 tablespoon olive oil
2 tablespoons butter
1 clove garlic, minced
2 tablespoons flour
1 cup low-fat milk
¾ cup freshly grated Parmesan cheese
salt and freshly cracked black pepper to taste
1 pinch lemon zest

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place asparagus on the baking sheet and season with salt and black pepper. Drizzle with olive oil and lightly toss to coat evenly.
  • Roast in the preheated oven until asparagus is tender-crisp, about 10 minutes for thin asparagus, or 14 minutes for large asparagus.
  • Meanwhile, melt butter in a saucepan over medium heat. Add garlic and stir for 1 to 2 minutes until softened, taking care not to burn garlic. Sprinkle flour onto butter and cook, whisking constantly until mixture is golden and thick, 1 to 2 minutes. Slowly whisk in milk and bring to a light boil until sauce starts to thicken, 2 to 3 minutes.
  • Sprinkle in Parmesan cheese and continue whisking until smooth. Season with salt and pepper. Remove from heat - sauce will further thicken.
  • Place asparagus on a serving platter and drizzle with cheese sauce. Garnish with lemon zest and serve immediately.

  • Preheat oven to 375 degrees.
  • Trim asparagus to remove tough, woody ends - discard ends.
  • On a baking sheet (line with aluminum foil or parchment paper for easy cleanup), lay down asparagus.
  • Drizzle asparagus with olive oil and lemon juice, mix around with hands to coat evenly.
  • Pour cheese and garlic powder over asparagus, mix with hands to evenly mix and coat asparagus.
  • Generously season with salt and pepper.

  • 1. Preheat oven to 350 degrees. Cut off white ends of asparagus, rinse and dry with a towel.

Steps:

  • 1. Lay asparagus in a single layer on a foil-lined cookie sheet.
  • 2. Drizzle about 2 tablespoons of olive oil on asparagus.
  • 3. Sprinkle with salt and pepper.
  • 4. Roast at 400 degrees for about 15 to 20 minutes or until tender.
  • 5. Remove from oven. Add Parmesan cheese.
  • 6. Return to oven for another couple of minutes for the cheese to melt in.

1 pound asparagus, trimmed
1 teaspoon olive oil
¼ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
1 fresh lemon, cut into wedges

Steps:

  • Place oven rack on top third of oven.
  • Preheat oven to 475 degrees F (245 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until barely tender, 2 to 4 minutes depending on thickness.
  • Place steamed asparagus on a rimmed baking sheet.
  • Drizzle with olive oil and roll asparagus spears in oil until they are coated.
  • Sprinkle with ground black pepper and Parmesan cheese.
  • Bake in preheated oven until lightly browned, about 5 minutes. Do not turn or shake asparagus.
  • Serve with lemon wedges.
