The sweet-sourness of the roasted grapes in this dead-easy dish complement the beautiful cheeses perfectly. Teamed with crispy sage, crunchy walnuts and hunks of fresh bread, this is an outright winner, every time.

1 kg black grapes, on the vine
a few sprigs of fresh thyme
1 tablespoon golden caster sugar
extra virgin olive oil
red wine vinegar
50 g Westcombe Cheddar cheese
75 g half-fat crème fraîche
250 g Tunworth cheese (or any good Camembert-style cheese)
1 bunch of fresh sage

Steps:

  • When the temperature on your wood-fired oven has reached roughly 220°C (check with your thermometer) and the smoke and flames have died down, start cooking (or preheat your regular oven to 220°C/425°F/gas 7).
  • Place the grapes in a large roasting tray, pick over the the thyme leaves, sprinkle with the sugar, then drizzle with 1 tablespoon of oil and a splash of vinegar.
  • Roast for 5 to 10 minutes, or until the grapes are just starting to catch and burst open, keeping an eye on them and turning when necessary.
  • Roughly chop the Cheddar into large chunks. Remove the tray from the oven and spoon over dollops of crème fraîche, scatter over the Cheddar chunks, then tear up the Tunworth and nestle the pieces in and among the grapes.
  • Pick the sage leaves, then drizzle with 1 tablespoon of oil and scatter over the top. Pop the dish back in the oven for 5 minutes, or until the cheese starts to melt.
  • Serve in the middle of the table with your favourite bread, a bowl of walnuts, and a lovely bottle of red.

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the grapes on a baking sheet and toss with the olive oil. Roast until the grapes burst and get soft, wilted and a little charred, 25 to 30 minutes.
  • Serve on peanut butter toast or crostini with cream cheese, or add them to a salad. Store in an airtight container in the refrigerator for up to 1 week.

1 package (8 ounces) cream cheese, softened
2 tablespoons orange marmalade
1 teaspoon sugar
8 sheets phyllo dough (14x9-inch size)
4 tablespoons butter, melted
1 cup seedless grapes
1 tablespoon honey
2 teaspoons coarse sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat cream cheese, marmalade and sugar until smooth; set aside., Place 1 sheet of phyllo on a parchment-lined baking sheet; brush with butter. Layer with remaining phyllo sheets, brushing each layer. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Spread cream cheese mixture over phyllo to within 2 in. of edges. Arrange grapes over cream cheese., Fold edges of phyllo over filling, leaving center uncovered. Brush folded phyllo with any remaining butter; drizzle with honey and sprinkle with coarse sugar. Bake until phyllo is golden brown, 35-40 minutes. Transfer to a wire rack to cool completely. Refrigerate leftovers.

olive oil
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
1 tablespoon balsamic vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine grapes, olive oil, chopped thyme, and chopped oregano together in a bowl and lightly toss to coat. Place grapes on baking sheet.

2 tablespoons red wine, such as Zinfandel, preferably from California
6 sprigs fresh thyme
2 tablespoons olive oil, preferably from California
Kosher salt and freshly ground black pepper
6 thick slices San Francisco sourdough bread
1 1/2 cups ricotta cheese
1 lemon, zested
Sea salt flakes

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the grapes with the red wine, thyme, 1 tablespoon of the olive oil and some salt and pepper. Place on a small baking sheet or baking dish. Roast until the grapes are tender, wilted and juicy, about 25 minutes.
  • Heat a grill pan over medium-high heat. Brush the bread slices with the remaining tablespoon of olive oil. Grill on both sides until crisp and lightly charred in some places, 3 to 4 minutes per side. Spread the ricotta evenly on the bread. Top with the roasted grapes and their juices. Sprinkle with lemon zest and flaky salt, then serve.

Whipped Goat Cheese Crostini with Balsamic-Roasted Grapes image

Everyone who knows me, knows I am a sucker for a cheese board. I love the combination of rich and nutty cheese with the delicate sweetness of fruit. Cheese boards are an entertaining staple for me, but when I want to change it up, I opt for this dish of creamy, velvety whipped goat cheese and juicy balsamic-roasted grapes with crunch from garlic-thyme crostini. Whether it's just you and a friend or you're entertaining a crowd, this dish is sure to be a hit!

1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more for greasing
3 cups stemmed seedless grapes (red or green)
Kosher salt and freshly ground black pepper
5 or 6 sprigs thyme, plus 1 teaspoon chopped thyme leaves, and whole leaves for garnish
1 baguette, sliced 3/4 inch thick on a bias
2 medium cloves garlic, grated
One 11-once log goat cheese, at room temperature
1 teaspoon honey
Zest of 1 lemon
1/4 cup heavy cream
2 tablespoons balsamic vinegar
Flaky sea salt

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Grease a rimmed baking sheet with olive oil and set aside for the crostini.
  • Toss together the grapes and the 2 tablespoons of the olive oil on another rimmed baking sheet; season with kosher salt and pepper. Top with the sprigs of thyme. Roast on the upper oven rack until the grapes blister, 10 to 15 minutes.
  • Meanwhile, whisk to combine the 1/4 cup olive oil with half of the chopped thyme, half of the garlic, a pinch of kosher salt and a few grinds pepper in a small bowl. Brush onto the tops of the baguette slices and place on the oiled baking sheet. While the grapes roast, bake the baguette slices on the lower oven rack for 5 minutes.
  • Combine the goat cheese with the lemon zest, honey, remaining 1/2 teaspoon chopped thyme and grated garlic and a few grinds pepper in a food processor. Process until well combined, about 1 minute. Stream in the heavy cream with the machine running and process until the goat cheese is aerated and fluffy, 1 to 2 minutes. Taste and adjust the seasoning with kosher salt and pepper.
  • Remove the grapes and bread from the oven and set the oven to broil. Flip the crostini. Remove and discard the sprigs of thyme from the grapes and carefully toss the grapes with the balsamic vinegar. Return the grapes to the upper oven rack and the crostini to the lower rack and broil until the grapes are caramelized and the bread is toasted, about 5 minutes -- watch closely, as broilers vary.
  • To plate, spread the whipped goat cheese in a shallow bowl, top with the grapes and drizzle with any juices from the baking sheet. Sprinkle with flaky sea salt, thyme leaves and pepper. Place on a platter with the crostini and enjoy.
