ROASTED GARLIC MASHED POTATOES

1 bulb garlic
5 or 6 red potatoes
1 white onion, sliced
1 tablespoon olive oil
3 tablespoon melted butter, plus 2 tablespoons butter
1/4 cup sour cream
Salt and pepper

Steps:

  • Cut off the top of the garlic bulb, and roast in a preheated 350-degree oven in a ceramic dish for approximately 30 minutes.
  • Place the red potatoes in a pot of water and boil until tender. Drain and set aside. Take 2 potatoes from the pile, cut them into quarters and place them on a cookie sheet. With a fork smash them down until flat, brush them with a little bit of the melted butter, and cook in a warm oven until crispy and golden brown. Set aside to top the finished potatoes.
  • Saute the onions in the olive oil until the onions are translucent.
  • Place the roasted garlic, boiled potatoes, 2 tablespoons butter, and sour cream into a standing mixer fitted with a paddle attachment, and beat until thoroughly blended.
  • Scoop the potato mixture into a ceramic dish. Drizzle with the remaining melted butter and place in the oven until the top is browned. Push the "potato croutons" into the top of the potatoes and serve immediately.

1 medium head garlic
1 tablespoon olive oil
2 pounds russet potatoes, peeled and quartered
4 tablespoons butter, softened
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.
  • Bring a large pot of salted water to a boil. Add potatoes, and cook until tender, about 15 minutes. Drain, cool and chop. Stir in butter, milk, salt and pepper.
  • Remove the garlic from the oven, and cut in half. Squeeze the softened cloves into the potatoes. Blend potatoes with an electric mixer until desired consistency is achieved.

1 head garlic (roasted)
2 1/2 lbs russet potatoes
5 tablespoons butter
1/3 cup sour cream
2 ounces cream cheese
1/2 cup milk (heated)
1 lb fresh mushrooms (sliced)
1 shallot (chopped)
1/4 cup sun-dried tomato packed in oil (drained & chopped)
1 1/2 teaspoons thyme (chopped)
12 ounces mushroom gravy (add amount to taste)

Steps:

  • Preheat oven to 400°F
  • To roast garlic, slice bottom & place in aluminum foil with a little olive oil. (don't skip this step).
  • Clean & prick potatoes & put in oven with garlic.
  • Cook 35 minutes. Remove garlic. Continue to cook potatoes 20 minutes or until tender.
  • Hold hot potatoes with towel & split & scrape flesh into sauce pan.
  • Squeeze roasted garlic from the bottom to push cloves out & into potatoes.
  • Add 2 tablespoons of butter, sour cream & cream cheese. Mash. Season with salt & black pepper.
  • In large frying pan add 3 tablespoons butter. Add mushrooms & cook until browned. (4 minutes) Add shallot, thyme & dried tomatoes. (make sure you do not burn shallot).
  • Add mushroom gravy to pan & heat.
  • Gradually stir hot milk into potatoes until fluffy.
  • Transfer to bowl & pour gravy mixture on top.

3 heads garlic, split in 1/2
3 tablespoon olive oil
2 pounds potatoes, peeled and diced
1 stick butter, cubed
1/2 to 3/4 cup heavy cream
Salt and white pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the garlic on a pie pan and drizzle with olive oil. Season with salt and pepper. Place in the oven and roast for 35 to 40 minutes, or until tender and golden brown. Remove from the oven and cool. Squeeze or remove the garlic cloves from the head and place in a small bowl. Using a fork, mash the garlic until smooth. Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes.
  • Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. Remove the potatoes from the heat. Add the garlic and butter. Using a hand-held masher, mash the butter and garlic into the potatoes. Add enough cream until desired texture is achieved. The potatoes should still be sort of lumpy. Season the potatoes with salt and pepper.

2 pounds beef chuck roast (cut into 1" cubes)
salt and pepper, to taste
1 Tablespoon olive oil
4 carrots (chopped)
2 ribs of celery (chopped)
1 onion (diced)
12 garlic cloves (crushed)
1 Tablespoon tomato paste
1 cup cranberry juice (+ 1 teaspoon vinegar*)
14.5 ounces canned diced tomatoes
½ cup beef broth
1 teaspoon chopped fresh rosemary ((or 1/2 teaspoon dried))
1 teaspoon chopped fresh thyme ((or 1/2 teaspoon dried))
1 bay leaf
dash of ground cloves

Steps:

  • Sprinkle beef cubes with salt and pepper.
  • Press the SAUTE button on the Instant Pot.
  • Add oil into the pot. When the oil is hot, sear outside of beef cubes for a few minutes (we aren't cooking the meat, just searing the outside!). Set meat aside.
  • Add carrots, celery, onion, and garlic into the pot and cook for 4-5 minutes or until they vegetables start to get tender and turn golden brown.
  • Add in tomato paste with the vegetables and cook for about 1 minute.
  • Pour in the cranberry juice, scraping the bottom of the pot to remove any of the browned bits on the bottom (this will prevent the burn notice).
  • Add the beef back into the pot.
  • Dump in the tomatoes, beef broth, rosemary, thyme, bay leaf, and dash of cloves. Also add more salt and pepper to taste.
  • Place the lid on the Instant Pot. Turn knob to SEALING (not venting).
  • Press the PRESSURE COOK button and set timer for 30 minutes. Let pressure do a NATURAL RELEASE (for at least 10 minutes, but the longer you can let it sit, the more tender it will be!).
  • Throw away the bay leaf.
  • Serve beef stew over hot mashed potatoes (these Instant Pot Mashed Potatoes are our favorite!)

1 tablespoon olive oil
4 pounds potatoes, peeled and cut into chunks
½ cup half-and-half
4 tablespoons butter, melted
½ (8 ounce) package cream cheese, softened
¼ cup sour cream
salt and ground white pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place garlic cloves in aluminum foil and drizzle with olive oil.
  • Roast in the preheated oven until very soft, about 25 minutes.
  • Meanwhile, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.

2 lbs potatoes
1 head garlic
1 tablespoon olive oil
1/4 cup sour cream
4 tablespoons butter
milk or cream, if needed
salt
white pepper

Steps:

  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork, or force through a fine strainer.
  • If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
  • Peel and boil potatoes in salted water until tender.
  • Force the cooked potatoes through a ricer (recommended) or mash by your usual method.
  • Put the riced potatoes, garlic, sour cream, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth.
  • Add cream or milk to adjust consistency.

1/2 tablespoon coarse sea salt (to taste)
3 lbs red potatoes, unpeeled (washed and scrubbed)
3 tablespoons butter
2 tablespoons chive butter
1 large head of garlic, roasted and mashed
1/2 teaspoon black pepper, to taste
1/2 cup light sour cream (to taste)
1/4 cup milk
1/4 teaspoon garlic salt (to taste)

Steps:

  • In a large pot, add some coarse sea salt then potatoes. Pour in cold water to about 2 inches above.
  • Cover and bring to a boil. When it gets there, remove the lid and continue cooking until the potatoes are tender, about 17 to 20 minutes.

1 head garlic
2 tablespoons olive oil
5 pounds Yukon gold potatoes, scrubbed and quartered
4 ounces reduced-fat cream cheese
6 tablespoons margarine
½ cup skim milk
½ cup reduced-fat sour cream
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Remove outer skin from garlic head, leaving individual cloves intact. Cut 1/4 to 1/2 inch off the top, exposing all cloves. Coat top of garlic with olive oil and use your fingers to work it in. Wrap in foil and place in a baking dish.
  • Roast in the preheated oven for 45 minutes.
