Roasted garlic is great served with bread, crackers or apples. People can peel off a clove of the garlic and literally squeeze the garlic out of it's shell onto their bread or cracker. Delicious!

- Arrange heads of garlic on a baking sheet. Sprinkle garlic with olive oil. Bake for 40 minutes to 1 hour, when the garlic is soft and squeezable, it is ready. Remove, let cool, and serve.

- Remove cloves of roasted garlic from the head and mash with a fork until smooth and pasty. This can also be done in a food processor if you'd like.
- In a medium saucepan over MED-LOW heat, add butter and melt.
- Pour in heavy whipping cream and roasted garlic paste. Stir and heat to a simmer.
- Stir in Parmesan cheese and whisk until smooth.
- In a small bowl, combine 1 Tbsp heavy whipping cream and 2 tsp cornstarch (or flour), and whisk until smooth.
- Add the cornstarch and heavy cream mixture (it will be a thick paste-like consistency), whisking as you add it to remove any lumps and fully incorporate it into the sauce.
- Continue to whisk and simmer until sauce has thickened to a classic cream sauce consistency. This may take a few minutes, or it could happen quicker, it all depends on your stovetop and saucepan.

- Heat a medium, dry, heavy skillet (preferably cast iron) over medium. Roast garlic, stirring occasionally, until skins have darkened on all sides and cloves inside are soft, 12-15 minutes. Let cool.
- Peel away skins and discard; transfer cloves to a blender. Add parsley, mint, oil, lemon zest and juice, red pepper, and salt. Blend until a pesto-like sauce forms.

- Sauce can be made 5 days ahead; store in an airtight container and chill, or freeze up to 1 month.

- Cut off top of garlic bulb to expose most of the garlic cloves.
- Put the bulb in an oven-safe small dish or on top of a sheet of foil.
- Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
- Wrap or seal up the garlic bulb with foil.
- Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
- Take out of the oven and cool for 10 minutes.
- When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
- Add mayonnaise and sour cream, using a fork, stir until blended.
- Add pepper to taste, and salt if needed.

- To roast garlic Preheat oven to 350°F.
- Rub individual garlic cloves with olive oil, place in a small oven proof pan, and season with salt and pepper.
- Cover the pan with aluminum foil and roast for 45 minutes, or until garlic is soft and lightly browned.
- Peel garlic.
- Method for Sauce-----------.
- In a medium saucepan over high heat, combine the garlic, onion, and white wine, bring to a boil, and reduce by three-fourths.

- ROAST THE GARLIC: Heat your oven to 400F and add your garlic to a small oven-safe dish or baking sheet. Drizzle it with the oil lightly (or skip for oil-free). Sprinkle with a pinch of salt and cook for about 10-12 minutes, flipping once. You want it to be slightly browned but not burnt, so keep an eye on it. Usually, when you smell it, it's almost there!
- MAKE THE SAUCE: Next, throw all your ingredients in a blender and blend on high until everything is combined. If you're using the olive oil, blend it a little longer to emulsify everything. Taste and adjust seasonings as you see fit.

- Cut about 1/2 inch off the top of the garlic head, making sure that the tops of the cloves are open and exposed. Place on a square of aluminum foil, drizzle the top with olive oil, and lightly season with pepper. Wrap the bulb up in the foil.
- Bake in the preheated oven until the cloves are soft and the tops are brown and caramelized, 30 to 40 minutes. Set aside.
