Creamy Mashed Cauliflower Recipe image

Roasted garlic creamy mashed cauliflower is an easy low-carb side dish.

1 bulb garlic, roasted
1 large head cauliflower, chopped into florets
3 Tbsp avocado oil, or melted butter/ghee + more for serving
1/2 tsp sea salt, to taste

Steps:

  • Preheat the oven to 400 degrees F. Cut the top off of the garlic, exposing the tops of the cloves.
  • Drizzle 1 to 2 teaspoons of avocado oil or olive oil over the exposed cloves and wrap the whole bulb in foil. Roast 50 to 75 minutes, until garlic is deeply golden-brown and soft.
  • While the garlic is roasting, chop the cauliflower and add it to a pot of water. Bring the pot to a full boil and cook until cauliflower is very soft, about 8 to 10 minutes.
  • Strain the cauliflower, then transfer it to a blender (note: if you have a potato masher, you can mash the cauliflower in the same pot you used for cooking instead of blending it).
  • Add the avocado oil (or butter), sea salt, and roasted garlic to the blender and blend everything until cauliflower reaches desired consistency. Note: You may need to stop the blender a few times, scrape the sides and re-start.
  • Taste the mashed cauliflower for flavor and add sea salt to taste.
  • If desired, serve mashed cauliflower with 2 tablespoons of melted butter on top and/or a sprinkle of dried parsley.

1 medium head cauliflower, cut up into florets
3-4 garlic cloves, peel left on but end trimmed
1/2 medium sweet onion, sliced
2-3 tablespoons olive oil
salt and pepper to preference
2-3 tablespoons unsalted butter*
3 tablespoons heavy whipping cream*
your favorite cheese (cheddar, fontina, parmesan, cream cheese, #allthecheese)
crumbled bacon
sour cream
fresh herbs (thyme, chives, Italian parsley, etc.)
a squeeze of lemon

Steps:

  • Preheat oven to 450ºF.
  • Place cauliflower florets, unpeeled garlic cloves, and sliced onions on a large baking sheet. Drizzle it all with olive oil, sprinkle with salt and pepper to your preference, and toss with your fingers until the veggies are evenly coated.
  • Arrange the veggies in a flat layer on the baking sheet and place in the oven to roast for 20-25 minutes, or until the cauliflower is tender and you see those tasty browned edges.
  • After the veggies have finished roasting, squeeze the garlic out of its peels. Transfer the cauliflower, onions, and garlic to a high-speed blender, or food processor. Add butter and puree. (Another method is to place all of the veggies into a pot and use an immersion blender to puree the cauliflower mash.)
  • Then adding one tablespoon heavy whipping cream at a time, continue blending until desired mashed cauliflower lusciousness consistency is reached. Since cauliflower heads range in size, you might not need to use all 3 tablespoons of cream to reach a consistency of mash that suits your preference. Add don't forget those other optional ingredient add-ins!
  • If reheating is needed, transfer cauliflower mash to a pot and warm it over medium-low heat until heated through. Then serve it up babe!

1 medium head garlic
1 tsp olive oil
1 (2 1/2 lb) head cauliflower, (cut from core, cut into florets)
1/3 cup finely shredded parmesan cheese
2 Tbsp butter
2 Tbsp plain Greek yogurt or sour cream
1 tsp finely minced fresh thyme
Salt and freshly ground black pepper
Minced fresh parsley, (for garnish (optional))

Steps:

  • Preheat oven to 400 degrees.
  • Cut top 1/2-inch of garlic head to expose cloves. Lay garlic on a sheet of foil, drizzle with olive oil and wrap to enclose.
  • Roast garlic in preheated oven until cloves have softened and are just lightly golden brown, about 40 - 45 minutes.
  • Bring about 1/2-inch of water to a boil in a large pot. Place a steamer basic in pot then place cauliflower on basket and steam until very tender, about 10 - 13 minutes.
  • Remove garlic from skin (just squeeze each one upward to remove), place in a large food processor. Add cauliflower, parmesan, butter, Greek yogurt, thyme and season with salt and pepper to taste.
  • Cover food processor with lid and remove center insert of lid (since you're working with a hot mixture). Process mixture until smooth, about 1 minute, while scraping down sides as needed.
  • Serve warm with parsley if desired.

This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.

1/4 cup 1% low-fat milk, as required

  • Roast garlic in 350 ovens for about 40 minutes, covered with foil.
