1 -2 fresh jalapeno, stems removed, and chiles halved and seeded
1/2 medium white onion, peeled
1 garlic clove, peeled
1 tomatillo, papery skin removed
1 avocado, peeled and cut into chunks
1 tablespoon lime juice (plus (to taste)
1/3 cup loosely packed cilantro leaf, chopped
1/2 teaspoon salt (plus (to taste)
1/4 cup water

Steps:

  • In a large, unoiled frying pan over medium heat, pan-roast the Jalapeños, onion, garlic, and tomatillo on all sides, 20 to 25 minutes total.
  • In a blender, whirl the vegetables with water until blended but still chunky.
  • Add avocado and lime juice; pulse until blended.
  • Add cilantro and salt, pulse to combine, and add more salt and/or lime juice to taste.

This is sublime guacamole! Be sure to make it fresh, right before you serve it and also make sure to use good, ripe avocados. I found this in the Chicago Tribune but it's a Wolfgang Puck recipe originally.

1 whole head of garlic
1 1/2 tablespoons extra virgin olive oil
3 medium fully ripe avocados, halved, pitted
1 lime, juice of
1/3 cup chopped fresh cilantro
1 shallot, minced
2 small jalapeno peppers, stemmed, seeded and minced
1 teaspoon salt
corn tortilla chips

Steps:

  • For the garlic: heat the oven to 375°. Place the garlic head on a sheet of heavy-duty aluminum foil; rub with the olive oil. Wrap the garlic securely in the foil; roast until tender, about 50-60 minutes. Remove from the oven; set aside to cool at room temperature.
  • Unwrap the garlic; halve crosswise with a serrated knife. Squeeze out the softened garlic pulp into a small glass bowl, or scoop it out with a teaspoon or small knife. Cover the bowl; refrigerate until ready to use.
  • Scoop the avocado flesh into a mixing bowl; pour the lime juice over. Lightly mash until still slightly chunky; stir in the cilantro, 1-2 T. of the roasted garlic, shallot, jalapeno pepper and salt. Serve immediately with corn tortilla chips.

No tomatoes in this guac - which makes it a great one for when fresh tomatoes aren't readily available. I often make it in the summer even when tomatoes are available as this is one of my favorite guacs - fair warning though, the garlic comes through loud and clear!! Course salt (I use sea salt) is smashed with the garlic and then combined with avocado, jalapeno and onions! Adapted from Rachel Ray

1 avocado
1 jalapeno, minced (seeds removed if you choose, I leave in cuz I like the heat!)
1/4 onion, finely chopped
1 garlic clove, chopped
1/2-1 teaspoon sea salt
1 lemon, juice of

Steps:

  • Halve avocado and scoop pulp into medium bowl. Add minced jalapeños and finely chopped onions.
  • Place chopped garlic clove on cutting surface and sprinkle with the sea salt (or other course salt). Using the side of a knife, mash the salt into the garlic until you have a paste.
  • Add garlic paste & lemon juice to avocado mixture and mash together with a fork until desired consistency is reached making sure to distribute garlic throughout.
  • Serve with tortilla chips! Store leftovers in tightly covered container in fridge - although best eaten right away.

6 garlic cloves
1 red bell pepper
1 poblano pepper
1/4 cup green onion, finely chopped
2 tablespoons fresh cilantro, chopped
2 teaspoons lime juice
1/4 teaspoon kosher salt
1 avocado, ripe, peeled, coarsely mashed

Steps:

  • Preheat oven to 450°F.
  • Wrap garlic cloves in foil, bake at 450°F for 15 minutes or until soft. Let cool slightly, remove skins. Place garlic in a medium bowl, mash with fork.
  • Preheat broiler.
  • Cut peppers in half lengthwise, discard seeds and membranes. Brush olive oil on peppers. Place pepper halves, skin sides up, on a foil lined baking sheet, flatten with hand.
  • Broil 15 minutes or until blackened, turning frequently. Place in a zip-top bag, seal. Let stand 10 minutes. Peel and finely chop.
  • Add peppers, onions, and next 4 ingredients to mashed garlic, stir well.

6 cloves garlic, unpeeled
6 medium-large ripe avocados (about 2 1/2 pounds)
1/2 cup coarsely chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice, plus more if necessary
Coarse salt
1 1/2 to 2 pounds tortilla chips or 2 baguettes, sliced on the bias into 1/4-inch-thick slices, brushed with olive oil and toasted
3/4 cup Mexican queso fresco or queso anejo, for serving
3/4 cup toasted pumpkin seeds, for serving
3/4 cup coarsely crumbled chicharron (Mexican crisp-fried pork rind) or 1/2 cup crumbled crisp bacon (from 2 to 3 medium-thick bacon slices), for serving

Steps:

  • In a medium dry skillet, roast garlic over medium heat, turning, until soft and blackened in spots, 10 to 15 minutes. Remove from heat. When garlic is cool enough to handle, peel and finely chop.
  • Halve avocados lengthwise and remove pit; scoop flesh into a large bowl. Add garlic, cilantro, and lime juice; coarsely mash until well combined. Season with about 1 teaspoon salt. Transfer to a serving bowl and press plastic wrap directly on surface of guacamole to cover; refrigerate until ready to serve. Serve on tortilla chips or bread slices with desired toppings.

  • Cut the avocados in half lengthwise. Carefully strike the pits with the edge of a sharp knife, then twist and loosen to remove. Holding each avocado half in the palm of your hand, use a butter knife to cut a grid in the flesh. Use a spoon to scoop the cubes of flesh out of the skin and into a medium bowl. Add the roasted garlic, tomato, cilantro, jalapeño, lime juice, and salt. Coarsely mash everything together, being careful to leave some chunks. Taste and add more salt and lime juice if desired (you can also add some of the jalapeño core if you want more heat; just add it slowly). Transfer to a bowl and serve with tortilla chips. If not serving immediately, place a piece of plastic wrap directly on the surface of the guacamole. Refrigerate for up to two hours; bring to room temperature before serving.

All of the seeds and most of the veins -- the extra hot stuff -- should remain in the core. Mince the flesh and reserve the core in case you want to add more heat to your guacamole. Try to minimize contact with the seeds and be sure to wash your hands well after cutting; definitely do not touch your eyes.
