GARLIC BREAD GRILLED CHEESE

Steps:
- Heat a large skillet over medium heat.
- Combine butter, parsley, Pecorino Romano cheese, and garlic in a small bowl. Stir to combine.
- Lightly coat 1 side of each bread slice with the butter mixture. Flip bread and top 2 slices evenly with provolone cheese and mozzarella cheese. Cover with remaining bread slices, buttered-sides up.
- Place sandwiches into the hot skillet. Cook until golden brown on one side, 3 to 4 minutes. Flip and cook until golden brown on the second side and cheese has melted, 3 to 4 minutes more. Cut each sandwich in half and serve.

ROASTED GARLIC RECIPE ON THE GRILL

- Prepare grill for indirect cooking. Aim for around 400 degrees internal temperature of the grill.
- Using a sharp knife, slice the top off of each garlic bulb (about 1/4 to 1/2 inches from the top), to expose the individual garlic cloves.
- Drizzle each bulb with about 1/2 tablespoon of olive oil (more or less depending on the exact size of the garlic bulb).
- Wrap each bulb with foil and place on the grill, indirect side, for approximately 40 minutes. Exact time will be based on the size of your bulbs. Test after 40 minutes using your finger. You're looking for a dark golden color and a caramelized look and the cloves should be soft to touch.
- Remove and serve immediately, or save for additional recipes.

- Spread outside of bread with mayonnaise.
- Brown in a skillet over medium-high heat until cheese is melted and bread is toasted, flipping halfway through. Cut and serve with tomato soup.

I just made roasted garlic on the weekend and had some left in the fridge so I threw some things together to help me make a dent in the leftovers. I make it on my health grill to avoid using fat but you could always make it in a frying pan with butter.

- Preheat the oven to 375°F. Set the oven racks to the upper third and lower third positions. Line a large baking sheet with parchment paper.
- Slice off the ends of the butternut squash and peel the skin using a vegetable peeler. Slice the butternut squash in half and remove the seeds. Dice the squash into 1/2-inch cubes. Toss the squash with about 1 tablespoon of olive oil. Spread the squash onto the baking sheet.
- Slice off about 1/4 inch from the top of the garlic bulb, exposing the cloves of garlic. If you sliced off large chunks of garlic and would like to use them, remove those garlic chunks from the papery skin and gently place them on top of the sliced bulb of garlic. Place the garlic bulb on top of a small sheet of foil and drizzle about 1/2 tablespoon of olive oil on top. Wrap the garlic up in foil and place it on a pie dish.
- Roast the squash for about 30 to 35 minutes, until the squash can be easily pierced with a fork. Roast the garlic for about 45 minutes. Let the squash and garlic cool to room temperature.
