16 to 20 fresh basil leaves
1/4 cup minced fresh rosemary
4 teaspoons minced garlic

Steps:

  • Place the first five ingredients in a blender; cover and process until desired consistency. Transfer to a small bowl. Stir in vinegar. Serve with bread cubes.

1 head garlic
2 teaspoons olive oil
kosher salt and ground black pepper to taste
½ cup mayonnaise
1 teaspoon lemon juice
½ teaspoon Worcestershire sauce
1 pinch ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim off the top of the head of garlic to expose cloves. Drizzle with olive oil. Sprinkle salt and black pepper on top. Wrap in aluminum foil.
  • Bake in the preheated oven until garlic feels soft when lightly pressed, about 1 hour. Unwrap and cool, 5 to 10 minutes. Refrigerate until chilled, 30 minutes to 1 hour.
  • Pull out individual garlic cloves with a sharp knife; place in a small bowl. Mash with a fork until creamy. Add mayonnaise, lemon juice, Worcestershire sauce, and cayenne; mix well until blended.
  • Refrigerate until flavors combine, at least 1 hour.

1 head garlic
½ cup olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Italian bread (to serve)

Steps:

  • Preheat oven to 350 degrees F. Slice the top off of the head of garlic, just exposing the top of the garlic.
  • Place the garlic, thyme and rosemary in a small, shallow baking dish and drizzle the olive oil over the garlic and into the baking dish. Cover tightly with foil and bake for 1 hour.
  • Remove from the oven, uncover and let cool until you are able to handle the garlic. Squeeze the roasted garlic out of the peel and discard the peels. Mash the garlic with a fork and whisk it into the olive oil-herb mixture. Serve with Italian bread. (Leftover oil can be stored in the refrigerator for up to 2 months. Bring to room temperature before serving.)

3/4 cup milk
4 ounces butter
1 cup self-rising flour
4 eggs
1 1/2 cups fresh corn kernels
1 1/2 teaspoons salt
1/2 teaspoon ground white pepper
Roasted Garlic and Parsley Dipping Sauce, recipe follows
Chopped parsley, for garnish
1/4 cup chopped parsley
2 tablespoons roasted garlic (about 6 cloves)
1 cup sour cream
3 ounces goat cheese
1 to 2 teaspoons finely chopped jalapeno
Salt and white pepper

Steps:

  • Fill a deep pan or deep-fryer with oil 3 to 4-inches deep, and heat oil to 365 degrees F.
  • In a medium saucepan, bring milk and butter to a boil. Add flour, and beat with a wooden spoon until it pulls away from the sides of the pan. Off heat, beat in eggs one by one until each one is completely incorporated. Fold in corn and season with salt and pepper.
  • Drop into hot oil using a small ice cream scoop or piping bag. Let fritters cook for 3 minutes or until lightly browned and crispy. Drain on paper towels. Serve with the Roasted Garlic and Parsley Dipping Sauce. Garnish with chopped parsley.
  • Place everything in blender or food processor and blend until smooth.

3 heads garlic, unpeeled
1 tablespoon olive oil
½ cup sour cream
¼ cup mayonnaise
1 green onions, chopped
1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
  • Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.

Yum yum yum. If you like garlic you will love this. If you don't usually like garlic, you might like this because the garlic is roasted, the flavor mellows and has a sweeter taste (like caramelized). Sour cream may be substituted with plain yogurt to cut some calories. This is great for dipping veggies such as artichokes, asparagus, or whatever, it's really versatile.

1 head garlic (whole bulb)
3 tablespoons mayonnaise
3 tablespoons sour cream
3 tablespoons olive oil
salt and pepper

Steps:

  • Cut off top of garlic bulb to expose most of the garlic cloves.
  • Put the bulb in an oven-safe small dish or on top of a sheet of foil.
  • Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
  • Wrap or seal up the garlic bulb with foil.
  • Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
  • Take out of the oven and cool for 10 minutes.
  • When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
  • Add mayonnaise and sour cream, using a fork, stir until blended.
  • Add pepper to taste, and salt if needed.

25 garlic cloves (unpeeled)
2 tablespoons plus 1 cup olive oil (preferably extra-virgin)
1/2 cup balsamic vinegar
2 1/2 teaspoons minced fresh rosemary

Steps:

  • Preheat oven to 350°F. Place unpeeled garlic cloves in baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool.
  • Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add vinegar and rosemary and puree herb mixture until smooth. With machine running, gradually add remaining 1 cup olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and refrigerate. Let stand 15 minutes at room temperature and whisk before using.)
