Garlic and Herb Roasted Cherry Tomato Pizza with Caramelized Onions image

This homemade pizza dough is topped with crème fraîche, quick caramelized onions, mixed herbed cherry tomatoes, and finished with burrata cheese. Perfect for using up those garden fresh cherry tomatoes.

3 tablespoons extra virgin olive oil
1 yellow onion, thinly sliced
1 teaspoon honey
kosher salt and pepper
2 cups cherry tomatoes
1 cup mixed herbs, such as thyme, oregano, and basil
2 cloves garlic, minced or grated
1 pinch crushed red pepper flakes
1/2 pound pizza dough, homemade or store-bought
3 tablespoons crème fraîche
1/4 cup grated parmesan cheese
1-2 balls burrata cheese
fresh basil, for serving

Steps:

  • 1. Preheat the oven to 450 degrees F. Grease a large baking sheet with olive oil.2. Heat 1 tablespoon oil in a large skillet over medium-high heat. When the oil shimmers, add the onions and honey and cook 5 minutes, stirring occasionally until softened. Season with salt and pepper and continue cooking another 5-10 minutes or until the onions are golden and caramelized. Remove from the heat and let cool.3. In a medium bowl, toss together the tomatoes, remaining 2 tablespoons oil, herbs, garlic, crushed red pepper flakes, and a pinch each of salt and pepper. 4. On a lightly floured surface, push/roll the dough out until it is pretty thin (about a 10-12 inch circle). Transfer the dough to the prepared baking sheet. Spread the dough with crème fraîche, top evenly with onions, and then sprinkle with parmesan. Add the tomatoes, spreading them in an even layer.5. Transfer the pizza to the oven and bake for 10-15 minutes or until the crust is golden and the tomatoes are bursting. Break the burrata over the pizza and finish with fresh basil. Enjoy

4 plum tomatoes (about 1 pound), cut lengthwise into 1/2-inch slices and seeded
1/4 cup olive oil
1 teaspoon sugar
1/2 teaspoon salt
CRUST:
2 tablespoons olive oil
1 large onion, finely chopped (about 1 cup)
2 teaspoons dried basil
2 teaspoons dried thyme
1 teaspoon dried rosemary, crushed
1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
5 tablespoons sugar
1/4 cup olive oil
1-1/2 teaspoons salt
3-1/4 to 3-3/4 cups all-purpose flour
TOPPING:
1 cup whole-milk ricotta cheese
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 250°. In a bowl, toss tomatoes with oil, sugar and salt. Transfer to a greased 15x10x1-in. baking pan. Roast 2 hours or until tomatoes are soft and slightly shriveled., For crust, in a large skillet, heat oil over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Stir in herbs. Cool slightly., In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, oil, salt, yeast mixture and 1 cup flour; beat on medium speed until smooth. Stir in onion mixture and enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until almost doubled, about 1-1/2 hours., Preheat oven to 400°. Grease a 15x10x1-in. baking pan. Punch down dough; roll to fit bottom and 1/2-in. up sides of pan. Cover; let rest 10 minutes. Bake 10-12 minutes or until edges are lightly browned., In a small bowl, mix ricotta cheese, garlic, salt and Italian seasoning. Spread over crust; top with roasted tomatoes and mozzarella cheese. Bake 12-15 minutes or until crust is golden and cheese is melted.

1 whole head garlic
3 tsp extra-virgin olive oil
1 package (10 oz) refrigerated pizza dough, such as Pillsbury Refrigerated Pizza Crust
2 cups chopped baby spinach leaves
3/4 cup shredded mozzarella
1/4 cup grated Parmesan
3/4 cup halved cherry tomatoes
1 tbsp pine nuts
Fresh basil leaves

Steps:

  • Roast the garlic: Slice 1/2 inch off the top of the garlic head and place cut side up on foil. Drizzle with 1 tsp oil and sprinkle with water. Wrap in foil and bake at 350°F for 50 minutes. When cooled slightly, squeeze roasted garlic out of the skins. To grill: Heat Foreman's Grilling Machine to the highest setting or make a medium-hot fire on a gas or charcoal grill. Roll out pizza dough on a lightly oiled baking sheet. Cut dough in half; shape into two 10-inch square pizzas. Do not make a rim. Grill dough on one side until grill marks show, about 3 minutes. Remove from grill. Place dough, grilled side up, on a cutting board. Brush with remaining 2 tsp oil. Spread with roasted garlic; season with salt and pepper. Add spinach, cheeses, tomatoes, and pine nuts. Return to grill and cook for 3 minutes, or until cheese melts and crust is cooked through. Garnish with basil; cut pizzas in half to serve. To bake: Heat oven to 475°F. On a lightly greased baking sheet, form dough into a large pizza; arrange toppings. Bake 10 minutes or until crust browns. Remove from oven; garnish with basil; cut into fourths to serve.

2½ pounds mixed heirloom tomatoes, cored, sliced (¼") thick
3 tablespoons extra-virgin olive oil
¾ teaspoon kosher salt, divided, plus more
¼ teaspoon freshly ground black pepper, plus more
6 garlic cloves, peeled
½ cup (1 stick) unsalted butter
9 ounces Stoned Wheat Thins or other whole grain crackers
2 large eggs
10 ounces Taleggio cheese, rind removed, coarsely grated (about 1½ cups)
2½ ounces finely crumbled Parmesan (about ½ cup)
½ cup mayonnaise
1 tablespoon chopped thyme, plus ½ teaspoon leaves
1 small shallot, thinly sliced
Special Equipment: A (9"-diameter) springform pan

Steps:

  • Place a rack in middle of oven; preheat to 475°F. Arrange tomatoes on a rimmed baking sheet, covering entire surface (it's okay if they overlap). Drizzle with oil; season with salt and pepper. Roast until tomatoes begin to look dry on top, 25-30 minutes. Let cool.
  • Meanwhile, cook garlic and butter in a small saucepan over medium-low heat, swirling often, until butter foams and milk solids turn golden, 5-7 minutes. Strain garlic butter through a fine-mesh sieve into a heatproof measuring cup; transfer garlic and toasty bits to a cutting board. Finely chop and set aside.
  • Reduce oven temperature to 375°F. Pulse crackers and ¼ tsp. salt in a food processor until fine crumbs form (you should have about 2 cups). Add eggs and 6 Tbsp. garlic butter and pulse until mixture is the consistency of wet sand; set remaining garlic butter aside. Transfer to springform pan. Using a flat-bottomed measuring cup, press crumbs firmly onto bottom and 1½" up sides of pan. Bake crust until edge is just starting to take on color, 8-10 minutes. Transfer pan to a wire rack and let crust cool.
  • Mix Taleggio, Parmesan, mayonnaise, chopped thyme, remaining ½ tsp. salt, remaining ¼ tsp. pepper, and reserved chopped garlic in a medium bowl. Gently dollop half of cheese mixture over bottom of crust, then spread into an even layer with an offset spatula (don't press too hard or you will break the crust). Layer half of tomato slices over and press down to even out layers. Repeat with remaining cheese mixture and tomatoes. Brush remaining garlic butter over tomatoes. Top with shallot and thyme leaves.
  • Set pan on a rimmed baking sheet and bake pie until filling is bubbling vigorously and crust is browned, 60-75 minutes. Transfer to rack and let cool 1 hour before serving.
  • Do Ahead: Pie can be made 1 day ahead. Cover loosely and chill.

1 head garlic
3 tablespoons olive oil, divided
2 ½ lb Walmart Beefsteak Slicing Tomatoes
1 ¼ teaspoons kosher salt, divided
½ teaspoon freshly ground black pepper, divided
12 oz refrigerated pizza dough, rolled out to a 12 in circle
1 ½ cups shredded gruyère cheese
½ cup grated parmesan cheese, fresh
½ cup mayonnaise
1 tablespoon fresh thyme leaf, plus ½ tablespoon whole leaves, divided

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil.
  • Peel the outer papery layers off of the head of garlic. Slice the top ½ inch off of the bulb and place on a small square of foil. Drizzle the top with 1 tablespoon of olive oil. Wrap tightly in the foil and set in a ramekin or small baking dish. Set aside while you prepare the tomatoes.
  • Slice the Walmart tomatoes crosswise into ¼-inch rounds, discarding the stems. Arrange the tomato slices in a single layer on the prepared baking sheet, overlapping slightly if needed. Drizzle with the remaining 2 tablespoons olive oil and sprinkle with ¾ teaspoon salt and ¼ teaspoon black pepper.
  • Place the tomatoes and garlic in the oven and roast for 35-40 minutes, until the tomatoes are softened and dry looking on top and the garlic cloves are golden brown and soft to the touch. Remove from the oven and let cool while you prepare the remaining ingredients. Leave the oven on.
  • Lay the pizza dough round in a 9-inch springform pan and gently press against the bottom, letting the dough go about 2 inches up the sides. Using a fork, gently press the sides of the dough against the pan, and then prick the bottom of the dough a few times.
  • Bake for 8 minutes, until the dough is just starting to puff up and set. Remove the pan from the oven and let cool slightly.
  • Reduce the oven temperature to 375°F (190°C).
  • Gently remove 8 cloves of roasted garlic from the bulb. Roughly chop 6 cloves, and thinly slice the remaining 2 lengthwise.
  • Add the chopped garlic, Gruyère, parmesan, mayonnaise, remaining ½ teaspoon salt, remaining ¼ teaspoon black pepper, and chopped thyme to a medium bowl and stir until well combined.
  • Spoon half of the cheese mixture onto the pizza crust and gently smooth in an even layer. Using a spatula, transfer half of the roasted tomatoes onto the cheese and press very gently into an even layer. Repeat with the remaining cheese and tomatoes. Sprinkle the sliced roasted garlic on top.
  • Bake the pizza pie for 45-60 minutes, until the filling is bubbling and the crust is golden brown. If the crust is browning too quickly, cover the edges of the pan with foil. Remove from the oven and let rest for 1 hour.
  • Garnish with the whole thyme leaves, then slice and serve.
  • Enjoy!
