ROASTED PEAR SALAD



Roasted Pear Salad image

You can roast just about any kind of pear, but for this recipe I prefer the smaller and harder Seckel pears. Once roasted, they'll soften and become surprisingly sweet and floral, a perfect contrast to the salty blue cheese and slightly bitter endive.

Number Of Ingredients 16

4 ripe pears, halved and cored
2 tablespoons olive oil
2 teaspoons sugar
Salt
1/2 cup olive oil
1/4 cup pecan oil
3 tablespoons rice wine vinegar
1 tablespoon honey
1 teaspoon Creole mustard
1 shallot, minced
Salt
Freshly ground black pepper
5 heads Belgian endive, cored and leaves separated
2 handfuls mixed bitter green leaves
2 cups blue cheese, crumbled into chunks
1/2 cup pecans, toasted

Steps:

  • For the pears, preheat the oven to 425 degrees F. In a small bowl, drizzle the pears with the olive oil, sprinkle with the sugar and salt, and toss to coat well. Transfer the pears to a baking sheet and roast for 10 minutes, until golden brown. Allow to cool.
  • For the vinaigrette, whisk together the olive oil, pecan oil, vinegar, honey, mustard, and shallots in a small mixing bowl. Season with salt and pepper.
  • To assemble the salad, combine the endive leaves and bitter greens in a large serving bowl. Add the vinaigrette and toss to coat well. Wait until just before serving to top with the pears, blue cheese, and pecans.

2 large carrots (halved lengthwise, cut into 1/3-inch-wide pieces)
2 large parsnips (halved lengthwise, cut into 1/2-inch-wide pieces)
2 tablespoons extra-virgin olive oil
3/4 teaspoon herbes de Provence
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 5-ounce bag baby arugula
1 ripe pear (halved, cored, cut into thin wedges)
Apple Cider Vinaigrette (recipe follows)
1/2 cup chopped walnuts (toasted)
3 tablespoons apple cider vinegar
1 tablespoon honey
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the onions, carrots and parsnips. Add the oil, herbes de Provence, salt and pepper, toss to coat evenly. Scatter the vegetables on a large nonstick rimmed baking sheet and roast for 20 minutes. Turn the vegetables over and roast until tender and beginning to brown, 15 to 20 minutes longer. Set the vegetables aside.
  • In a salad bowl, combine the arugula, pear slices and roasted vegetables. Add the Apple Cider Vinaigrette and toss until coated. Sprinkle with the chopped walnuts and serve.
  • For the apple cider vinaigrette, in a medium bowl, whisk the vinegar, honey, salt and pepper until blended. Gradually whisk in the oil.

1 pound carrots, cut into 3-inch-long, 1/2-inch-thick wedges
1 small delicata squash, halved, seeds removed, and cut into 3/4-inch slices
8 figs, halved
1 pear, halved and cut into 1/2-inch wedges
1 head garlic, cloves separated and unpeeled
1/2 bunch fresh thyme, plus 1 tablespoon fresh thyme leaves, for garnish
3 tablespoons extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
1/4 cup aged balsamic vinegar
Maldon sea salt

Steps:

  • Preheat oven to 475 degrees. Place a rimmed baking sheet on the upper and lower third racks each.
  • In a large bowl, combine carrots, squash, figs, pear, garlic, and thyme. Add olive oil and season with coarse salt and pepper; toss to combine.
  • Remove hot baking sheets from oven and divide vegetable and fruit mixture evenly between them, spreading in an even layer. Return baking sheets to oven and roast, stirring occasionally, until golden brown and tender, about 35 minutes, rotating baking sheets from top to bottom halfway through baking.
  • Remove baking sheets from oven and drizzle with vinegar; shake to combine. Transfer to a serving platter; drizzle with olive oil and garnish with thyme leaves. Season with sea salt and serve.

1 large red onion, sliced
1 large red pepper, cut into strips
1 clove garlic, minced
1/3 cup KRAFT Sun Dried Tomato Vinaigrette Dressing, divided
10 cups baby spinach leaves
1/4 cup OSCAR MAYER Real Bacon Bits
2 Tbsp. pine nuts, toasted

Steps:

  • Heat oven to 450ºF.
  • Place first 5 ingredients in 15x10x1-inch pan. Add 2 Tbsp. dressing; toss to coat. Spread to evenly cover bottom of pan.
  • Bake 40 to 45 min. or until vegetables are tender and golden brown, stirring occasionally. Spoon into large bowl. Add spinach; toss lightly.
  • Top with bacon, nuts and remaining dressing.

3 tablespoons extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
1/4 cup white balsamic vinegar
Maldon sea salt

Steps:

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the vegetables in a large mixing bowl and toss with the olive oil, salt, and pepper, to evenly coat.
  • Spread the vegetables in one layer in a large roasting pan, and roast in the preheated oven for 45 minutes. Remove the roasting pan from the oven and allow the vegetables to cool for 15 minutes.
  • Place the vegetables in a large mixing bowl and toss with the fresh herbs, olive oil, lemon juice, and garlic. Season, to taste, with salt and pepper. Toss with the cheese and serve.

This is a great fall dish. Roasted veggies sit on a bed of spaghetti squash and are topped with a little melted cheese. Note: vegetables can easily be substituted. I have made this many times with whatever is on hand. However, when I can, I try to use mostly root vegetables in yellow and orange colors.

1 large spaghetti squash, halved and seeded
1 acorn squash, halved and seeded
1 large sweet potato
3 cups baby carrots
1 onion, diced
¼ cup honey
1 teaspoon ground cinnamon
1 pinch salt
1 pinch ground black pepper
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Coat a large baking sheet with cooking spray.
  • Place spaghetti squash and acorn squash, cut sides down, on baking sheet. Place sweet potato on baking sheet.
  • Bake until squash and sweet potato are tender when pierced by a fork, about 45 minutes.
  • Turn oven down to 350 degrees (170 degrees C). Coat a 9x13 baking dish with cooking spray.
  • Scrape strands from the spaghetti squash and place into prepared pan in an even layer.
  • Cut sweet potato into bite-size chunks; place into a large bowl. Scoop bite-size chunks of flesh from the acorn squash; add to bowl. Stir baby carrots, diced onion, honey, cinnamon, salt, and black pepper into squash mixture and mix well. Transfer squash mixture to the baking pan and spread evenly over spaghetti squash. Sprinkle Cheddar cheese over the top.
  • Bake at 350 degrees until cheese is bubbly and brown, about 45 minutes.
