1/4 teaspoon salt
1/8 teaspoon white pepper
1/3 cup apricot spreadable fruit
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°. Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, 30 minutes. , In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens. Bake until golden brown and juices run clear, 30-35 minutes, basting several times with remaining apricot mixture. Let stand 5 minutes before serving.

1 Cornish hen (1 1/2-pound)
1 1/2 tablespoons olive oil
1 tablespoon dijon-style mustard
2 tablespoons mustard seeds
1/2 teaspoon crumbled dried rosemary
1 -2 garlic clove, minced
1/4 cup dry white wine
1/4 cup chicken broth

Steps:

  • Remove the backbone from the hen with poultry shears or a sharp knife, place the hen, skin side up, on a work surface, and press down the breastbone to flatten the hen.
  • In an ovenproof skillet roast the hen, skin side up, in a preheated 450°F oven for 10 minutes.
  • While the hen is roasting, in a small bowl whisk together the oil, the mustard, rosemary, the garlic, and salt and pepper to taste.
  • Remove the hen from the oven, spread the mustard mixture over the skin, and roast the hen for 15 minutes.
  • Transfer the hen to a preheated broiler and broil it about 4 inches from the heat for 2-3 minutes. Now put the mustard seed in with the mustard mixture and broil for 2-3 more minutes(this is so the mustard seeds won't burn).
  • Transfer the hen to a platter and keep it warm.
  • To the skillet add the wine and boil the mixture over high heat until it is reduced by half. Add the broth, boil the mixture for 1 minute, scraping up and brown bits, and add any juices that have accumulated on the platter. Strain the sauce through a fine sieve onto 2 plates. Cut the hen in half with a sharp knife, and arrange each half on top of the sauce.
  • Serve and enjoy!

1/4 cup honey
1/3 cup grainy mustard
2 cloves garlic, chopped
5 tablespoons vegetable oil
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
1 1/2 teaspoons ground cinnamon
2 Cornish game hens
Salt and freshly ground black pepper
1 lemon

Steps:

  • Mix the honey, mustard, garlic, 3 tablespoons oil, thyme and cinnamon together in a bowl and set aside. Remove the wing tips from the hens. Roll the hens in the marinade and marinate overnight.
  • Preheat the oven to 450 degrees F.
  • Season the birds inside and out with salt and pepper. Cut the lemon in half and squeeze over each bird. Put a used lemon half in the cavity of each bird. Truss the birds.
  • Set a rack in a roasting pan and brush the rack with several tablespoons vegetable oil. Place the birds, breast side down on the oiled rack. Roast for 30 minutes. Turn the birds breast side up, reduce the heat to 350 degrees and roast an additional 15 to 20 minutes or until the hens are cooked through and the skin is brown. Allow the hens to rest 10 minutes before serving.

4 Cornish hens with necks and gizzards, each about 1 1/4 pounds
2 tablespoons vegetable or corn oil
Salt and freshly ground pepper to taste
1 large onion, peeled
1/4 cup dry sherry wine
1 tablespoon red-wine vinegar
1 tablespoon honey
1 cup fresh or canned chicken broth
1 tablespoon tomato paste
2 cups green seedless grapes
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees.
  • Place the hens in a shallow baking dish without crowding. Rub hens with oil and sprinkle inside and out with salt and pepper. Cut onion in half. Place the halves cut side down around the hens. Arrange gizzards and necks around the hens.
  • Place baking dish on top of stove over medium-high heat. Turn the hens over in the dish to coat them with the oil. Brown them for a few minutes. Arrange hens on their sides, place in the oven and bake 15 minutes, basting often.
  • Turn the hens on the other side and continue baking 15 minutes, basting often.
  • Turn the hens breast side up. Bake about 10 minutes, basting often.
  • Transfer the hens to a heated serving platter. Cover with foil to keep warm.
  • Skim off the fat from the pan liquid. Place the dish on top of stove and bring the liquid to a boil. Add the sherry and vinegar and stir to dissolve any brown particles that may cling to the bottom of pan. Strain sauce into a saucepan and bring to a boil. Cook down by half. Add the honey, broth and tomato paste. Stir and add any liquid that may have accumulated inside or around the birds. Add the grapes and bring to a boil.
  • Cook about 1 minute, stirring. Swirl in the butter, add salt and pepper, if necessary. Pour the sauce over the hens and serve.

This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! Enjoy!!

1/2 cup soy sauce
1/4 cup Dijon mustard
1/4 cup packed dark brown sugar
2 tablespoons finely chopped peeled fresh ginger
2 tablespoons oriental sesame oil
3 Cornish hens, cut in half lengthwise, backbones removed
sesame seeds

Steps:

  • Whisk first 5 ingredients in a medium bowl. Transfer half of marinade to small saucepan; reserve. Pour remaining marinade into 15x10x2-inch glass pyrex dish. Add hens; turn to coat. Marinate 30 minutes to 4 hours in the refrigerator, turning occasionally.
  • Preheat the oven to 425°F Arrange hens, skin side up, on large brimmed baking sheet. Sprinkle with Sesame seeds. Roast until cooked through and brown, about 40 minutes. Transfer to platter. Pour pan juices into saucepan with reserved marinade. Bring to boil, stirring often. Simmer until sauce coats spoon, about 5 minutes; pour into bowl. Serve hens with sauce.

Steps:

  • Preheat oven to 375°F. combine first 4 ingredients in small bowl. Gradually whisk in oil. Rub cavities and outside of hens with mustard mixture. Season with salt and pepper. Place 1 large rosemary sprig in cavity of each hen if desired. Arrange in shallow roasting pan. Bake until cooked through, about 1 hour 15 minutes (cover with foil last 15 minutes if hens are browning too quickly). Let stand 5 minutes and serve.

1/2 pound red potatoes, cut into small chunks
Salt and fresh ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
  • Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
  • In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.

  • Cornish Hens ... Now, if you aren't familiar with this technique, your butcher will be happy to do this. Even those at your local grocery store - you just have to ask. To spatchcock a hen: turn it breast side down on a cutting board. Using heavy duty kitchen shears, cut along each side of the back bone; this runs right down the center from one end to the other. Then using the palm of your hand, flatten if out pushing down. There is a small breast bone or plate right in the center, which is easy to pull out. Then, flip it over (breast side up). At the end by the drumsticks, there is a flap of skin; you need to poke 2 small holes using a knife; and stick the ends of the drumsticks in them. This keeps them in place during cooking.
  • Again, if you uncomfortable doing this, have your butcher, or the guy behind the meat market do this; yes, they are willing and more than happy to help. Also, there are wonderful videos online too.
  • Marinate ... Add your hens to a glass 13x9 pan, and pour the marinate over the chickens. Make sure to rub the marinate over both sides. Cover with plastic wrap, and refrigerate/marinate at least 1 hour, up to 8 hours.
