Crunchy delicious roasted corn for snacking or salads.

10.8 oz frozen sweet corn
1 Tablespoon olive oil
¼ teaspoon sea salt
½ teaspoon smoked paprika or your favorite seasoning

Steps:

  • Preheat oven to 400 degrees.
  • Line a large baking sheet with parchment paper or foil.
  • In a medium to large bowl, mix all ingredients.
  • Pour corn mixture onto baking sheet and spread evenly to single layer.
  • Roast for 20-30 minutes until golden and crunchy. Stir once or twice while roasting.
  • Note: watch carefully after 20 minutes to prevent corn from burning. If corn is not crunchy enough, turn the oven off after roasting and leave the pan of corn in the oven for 15-20 minutes or as desired.

1 tablespoon butter
3-1/3 cups fresh corn or 1 package (16 ounces) frozen corn
1 plum tomato, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

4 tablespoons unsalted butter, softened
1/2 cup fresh oregano leaves, plus 8 sprigs
1 teaspoon salt
1/2 teaspoon freshly ground pepper
4 ears corn (about 2 1/2 pounds)

Steps:

  • Heat oven to 375 degrees. Place butter on a cutting board and sprinkle with oregano leaves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Chopwith a sharp knife until butter is smooth and the oregano and seasonings are fully incorporated. Transfer to a small dish and set aside.
  • Trim stems and discard tough outer husks from corncobs. Peel back remaining husks, being careful not to detach them from the corn. Discard corn silk.
  • Use a pastry brush to spread the herb butter evenly over the kernels and season with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Place 2 sprigs of oregano on each ear of corn and pull husksback up to enclose corn and herbs. Wrap kitchen string around the tip of the ear and tie.
  • Place corn on a baking sheet and roast, turning once, until corn is fragrant and tender, about 25 minutes. Remove string. Pull back the husks and tie them in a knot, if desired. Season to taste and serve.

This is a great recipe from Party Line with The Hearty Boys on the Food Network. It has gotten rave reviews each time I've made it. It would also be great with fresh corn kernels cut off the cob and sauteed with the butter mixture in a skillet.

6 ears corn, shucked
1 cup unsalted butter, at room temperature
1/4 cup fresh cilantro, chopped
1 lime, juice and zest of
2 teaspoons salt
3/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • Place butter in a mixing bowl.
  • Add the cilantro, lime zest, lime juice, salt and cayenne pepper. Mix Well.
  • Coat each ear of corn with about 2 tablespoons of the butter mixture & wrap individually in foil.
  • Bake for 20-25 minutes & serve.

2 lbs yellow petites potatoes, halved
1 tablespoon olive oil
1 cup unsalted butter, softened
1/2 cup oregano, seasoning paste
2 teaspoons roasted garlic, seasoning paste
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon fresh oregano leaves, roughly chopped

Steps:

  • Prehet oven to 425°F.
  • On a baking sheet, toss potatoes with olive oil and roast for 30-35 minutes or until potatoes are golden brown and fork-tender.
  • Meanwhile, combine the butter, oregano and roasted garlic pastes, salt and pepper in a bowl; gently mix with a fork. Divide butter mixture between 2 large pieces of plastic wrap and roll each into a log and chill in the refrigerator.
  • Transfer roasted potatoes to a serving dish and add 2 tablespoons oregano butter (save the rest for a later use) and toss to coat; garnish with fresh oregano and serve immediately.

8 ears fresh corn in husks
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, chopped
1 cup chopped fresh cilantro
½ cup olive oil
4 cloves garlic, peeled and minced
3 limes, juiced
1 teaspoon white sugar
salt and pepper to taste
1 tablespoon hot sauce

Steps:

  • Place the corn in a large pot with enough water to cover, and soak at least 15 minutes.
  • Preheat grill for high heat. Remove silks from corn, but leave the husks.
  • Place corn on the preheated grill. Cook, turning occasionally, 20 minutes, or until tender. Remove from heat, cool slightly, and discard husks.
  • Cut the corn kernels from the cob, and place in a medium bowl. Mix in the red bell pepper, green bell pepper, and red onion.
  • In a blender or food processor, mix the cilantro, olive oil, garlic, lime juice, sugar, salt, pepper, and hot sauce. Blend until smooth, and stir into the corn salad.

1 tablespoon fresh lime juice and zest of 1 lime
1/8 teaspoon cayenne, or to taste
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
8 to 10 ears Silver Queen or other white corn, in husk

Steps:

  • Combine butter, cilantro, lime juice and zest, cayenne, salt, and pepper.
  • Heat oven to 450 degrees. Leave husks on, but pull off any loose silk or dried husk. Roast 6 to 10 minutes, turn, and roast 6 to 10 minutes more, or until tender when pierced with a knife. Serve with cilantro-lime butter.
