1 cup butter
¼ cup chopped fresh cilantro
1 ½ tablespoons fresh lime juice
1 pinch cayenne pepper
8 ears corn on the cob, unhusked
3 quarts cold water, or as needed to cover

Steps:

  • Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate 1 hour to blend flavors.
  • Peel husks back from ears of corn starting at the top, leaving the husks attached at the bottom of the ears. Remove all the corn silk and close husks over the ears again. Cover corn ears with cold water in a large bowl until husks are thoroughly soaked, about 20 minutes.
  • Preheat grill for medium heat and lightly oil the grate.
  • Place the corn in husks onto the hot grate and grill covered until husks are charred and the corn kernels are tender, 20 to 25 minutes, turning often. Strip off husks and serve corn with cilantro lime butter.

1 tablespoon chili powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Soak husked ears of corn in a bowl of water for 5 to 10 minutes. Mix lime juice, chili powder, salt, and black pepper in a separate bowl.
  • Remove corn from water and grill, turning often, until corn is golden brown on all sides, 3 to 5 minutes per side. Brush ears with seasoned lime juice as you turn the corn.

1/2 cup unsalted butter, at room temperature
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, pressed
Zest of 1 lime
1/4 teaspoon chili powder
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper, to taste
8 ears corn, unhusked
1 tablespoon canola oil
1 lime, cut into wedges

Steps:

  • In a medium bowl, combine butter, cilantro, garlic, lime zest, chili powder and paprika; season with salt and pepper, to taste. Set aside. Preheat grill to medium heat. Peel back outer husks, leaving them attached at the base of the ear; do not remove inner husks. Remove and discard silks; rinse corn and pat dry using paper towels. Brush corn with canola oil; season with salt and pepper, to taste. Add corn to grill; cover and cook, turning occasionally, until husks are slightly charred and corn is tender, about 12-15 minutes.* Peel down husks and spread with butter mixture. zest & juice of 2 limes
2 teaspoons ancho chili pepper
1 teaspoon chipotle pepper
4 cloves crushed garlic
1/4 cup freshly chopped cilantro (for garnishing, optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Place the corn (with husks) on the baking sheet.
  • Bake on the center rack for 45 minutes or until the corn is tender.
  • Allow the corn to cool for 5 minutes.
  • While the corn is cooling, make the chili butter.
  • In a small bowl, combine the butter, lime zest and juices, seasonings and garlic. Mix well.
  • Peel back the husks on the corn and use a pastry brush to brush the butter over the warm corn.
  • Garnish with freshly chopped cilantro, if desired.
  • If there is butter leftover, cover it and store it in the refrigerator for up to 1 week.

Sprinkle your corn on the cob with cilantro and cotija cheese and you have the best corn on the cob ever! And because you'll want to eat this corn on the cob year-round, I've included directions on how to cook corn on the cob in the oven too!

8 ears fresh corn (in husks)
1/2 cup butter (8 tablespoons), melted
1/4 cup honey
2 tablespoons lime juice
1 - 1 1/2 teaspoons chipotle chili powder
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
Freshly cracked salt
1/3 cup grated cotija cheese (or more to taste)
1/3 cup minced cilantro

Steps:

  • Whisk together Chipotle Honey Lime Butter ingredients in a medium bowl, set aside.
  • TO GRILL: Trim the silk from the top of each ear of corn (to prevent it from catching fire) and peel away the first layer of husks.
  • Pull down the outer husks of the corn to the base (but DO NOT REMOVE) and remove all of the silk. Fold husks back into place, and soak cobs COMPLETELY submerged in a pot of cold water lightly seasoned with salt for 15 minutes. (I place a second large bowl of water on the husks to keep them completely under the water because they like to float).
  • Meanwhile, grease grill and preheat to a medium (350 degees F). After soaking, remove the corn from the water and shake off any excess water.
  • Place corn on the grill, close the cover and grill, turning every 5 minutes, for 15 to 20 minutes, or until kernels are tender (outer husks will become quite charred).
  • When corn is cool enough to handle, (about 5 minutes) remove husks and brush with Chipotle Honey Lime Butter. You can also add Chipotle Honey Lime Butter to a shallow dish and add corn and turn to coat.
  • Sprinkle corn with Cotija cheese and cilantro and season liberally with freshly cracked salt. Serve immediately. For spicier corn, sprinkle with additional chipotle chili powder.
  • TO ROAST: Preheat oven to 350 degrees F.

6 tablespoons butter, softened
1/4 teaspoon chili powder
1/2 teaspoon lime zest
1 teaspoon fresh lime juice
1/2 teaspoon jalapeno, minced (or to taste)

6 ears corn, in the husks

Steps:

  • Place the butter in a small bowl, add the chili powder, lime peel, lime juice, jalapeño and salt and mix well.
  • Shape the butter into any form you like, cover and place in the refrigerator until shortly before ready to serve, at which time allow butter to soften.
  • Heat grill to medium-high.
  • Place corn (in husk) on the grill, rotating the corn so you cook on all sides, for approximately 15 minutes total.
  • Remove from grill and cool slightly (so you are able to peel the husk) and peel. Place corn back on grill over the same flame for about 4 minutes, once again rotating the corn for even grill marks.
  • Serve the corn immediately with the chili lime butter.
  • Cooking option: Place the corn (in the husk) on a plate and microwave for 5 minutes (21/2 minutes per side); when ready to grill, remove the husks and grill over a medium-high flame for about 2 minutes per side.

1/4 cup minced fresh cilantro
1 tablespoon lime juice

  • In a small bowl, mix butter, cilantro, lime juice and lime zest. Shape into a log; wrap in waxed paper. Refrigerate until firm, about 30 minutes. Wrap each ear of corn in a piece of heavy-duty foil (about 14 in. square)., Grill corn, covered, over medium heat until tender, turning occasionally, 15-20 minutes.
