CREAMY CORN AND SHIITAKE MUSHROOM SOUP



Creamy Corn and Shiitake Mushroom Soup image

When preparing this Chinese classic, Vietnamese cooks, like their northern neighbors, often rely on canned creamed corn, once considered an exotic foreign import in Asia. The velvety sweet-savory result fuses East and West. Here in the States, fresh corn is plentiful, and making this soup with kernels cut from the cob yields bright flavors that aren't cloying. Neither cornstarch nor egg is needed to create a creamy texture. The natural starch in the corn provides it. Some cooks add a variety of embellishments to the soup, but I prefer to keep it simple, using only sliced shiitake mushrooms for their flavor, texture, and visual appeal. Make sure you use the sweetest corn possible, whether from your local market or farm stand, fresh or frozen.

Yield serves 6 to 8 with 2 or 3 other dishes

Number Of Ingredients 7

2 tablespoons canola or other neutral oil
1 yellow onion, chopped
6 cups corn kernels, cut from 6 to 8 ears, or 2 pounds frozen corn kernels, thawed
1 1/2 teaspoons salt
5 1/2 cups water
6 to 8 dried shiitake mushrooms, reconstituted (page 332), stemmed, and thinly sliced
2 tablespoons chopped fresh chives or thinly sliced green scallion tops

Steps:

  • In a 4-quart saucepan, heat the oil over medium heat. Add the onion and cook gently, stirring occasionally, for about 4 minutes, or until fragrant and soft. Add the corn, salt, and water, cover, and cook for about 20 minutes, or until the corn is very tender. Remove from the heat and let cool for at least 10 minutes before proceeding.
  • Position a coarse-mesh sieve on top of another saucepan. In batches, purée the soup in a blender or food processor until velvety smooth. Pour each puréed batch through the sieve, pressing on the solids to extract as much liquid as possible. Discard the solids. Add the mushrooms and set the soup aside until ready to serve. (The soup may be made up to 2 days in advance, cooled, and refrigerated.)
  • Reheat the soup over medium-low heat, stirring occasionally to prevent scorching. If the soup is too thick, thin it with water. Taste and add extra salt, if necessary. Ladle the soup into a large serving bowl or individual bowls. Sprinkle with the chives and serve immediately.

Mushrooms with Roasted Corn and Marjoram image

The combination of sweet, lightly smoked corn and rich, earthy mushrooms is one of the great flavor marriages of Mexican food. In this filling, inspired by one of my favorite salsa recipes in The Great Salsa Book, the fresh corn kernels are dry-roasted to capture the sweet corn flavor and infuse them with an appetizing, smoky perfume. Dry roasting is one of the great culinary techniques that give Mexican cuisine its distinctiveness and meaning, and one easily mastered at home. Very simply and effectively, it intensifies and concentrates flavors and imparts the smoky, primordial quality that is characteristic of so many Mexican dishes. Beyond corn, the technique is also used for garlic, tomatoes, and onions, for fresh and dried chiles, and for seeds and nuts.

Number Of Ingredients 15

2 medium poblano chiles, oil-roasted, peeled, cored, and seeded (page 154)
3 tablespoons (or more) butter
6 ounces portobello mushrooms (preferably small, with fresh, closed gills), cut into 1/4-inch-thick slices with stems
1 1/2 ounces shiitake mushrooms, stemmed, cut into 1/4-inch-thick slices
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup fresh corn kernels, dry-roasted (page 157)
1 tablespoon olive oil (preferably Spanish)
1 teaspoon chipotle puree (page 153)
1 teaspoon fresh lime juice
2 teaspoons loosely packed chopped fresh cilantro leaves
1 teaspoon chopped fresh marjoram
8 (5 1/2-inch) soft white corn tortillas (page 13), for serving
Garnish: Julienned fresh basil or toasted pine nuts (page 164)

Steps:

  • Cut the prepared poblano chiles into 1/4-inch-thick strips (rajas); set aside.
  • Preheat a heavy skillet large enough to hold the mushrooms in a single layer for about 2 minutes over medium-high heat. Melt the butter in the pan, then add the mushrooms, garlic, salt, and pepper, and sauté until the mushrooms are golden brown and caramelized, 6 to 8 minutes.
  • Remove the pan from the heat and stir in the corn, olive oil, chipotle puree, lime juice, cilantro, and marjoram. Serve immediately or keep warm in the pan until ready to serve.
  • To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the filling equally between the tortillas and top with salsa and basil. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Spoon on some filling, top with salsa and basil, fold, and eat right away.

Gorgeous glazed shiitake mushrooms and tender green bok choy sparked with ginger, sesame and hot pepper work beautifully against more staid flavors, so consider serving them next to a traditional roast chicken or turkey. They also are delicious draped over a pile of rice.

2 pounds baby bok choy
3 tablespoons vegetable oil
3 small dry red Chinese hot peppers
1 pound shiitake mushrooms (about 4 dozen), stems removed
Salt and pepper
4 garlic cloves, minced
1 tablespoon grated ginger
1 tablespoons sugar
1 teaspoon sesame oil
3 tablespoons tamari or soy sauce
6 scallions, sliced diagonally, for garnish
1 tablespoon roasted sesame seeds for garnish (optional)

Steps:

  • Bring a large pot of well-salted water to a boil. Cut off and discard stem ends of bok choy. Separate leaves, rinse and drain. Drop leaves into boiling water and cook for 1 to 2 minutes, until barely cooked. Immediately remove, rinse with cool water, drain and pat dry. Arrange leaves in one layer on an ovenproof earthenware platter, then set aside.
  • Put a large wok or cast-iron skillet over high heat. Add oil and heat until nearly smoking, then add hot peppers and shiitake caps, stirring to coat. Season lightly with salt and pepper. Stir-fry for 2 minutes. Reduce heat slightly and add garlic, ginger, sugar, sesame oil and tamari. Stir-fry for 1 minute more.
  • Spoon shiitake and pan juices over reserved cooked bok choy. Serve at room temperature, or if you prefer, reheat covered with foil for 10 to 15 minutes in a hot oven. Garnish with scallions and sesame seeds, if using.

4 ears corn, husked
4 tablespoons olive oil
2 cups (about 8 ounces) assorted wild mushrooms (such as chanterelle, oyster, and stemmed shiitake), thinly sliced
2 tablespoons chopped fresh thyme or 2 teaspoons dried
5 3/4 cups (about) chicken stock or canned low-salt broth
1 1/4 cups finely chopped onion
1 1/2 cups arborio rice or medium-grain white rice
1/4 cup dry white wine
2 cups stemmed baby spinach
2 tablespoons freshly grated Parmesan cheese
1 tablespoon unsalted butter
2 tablespoons chopped chives or green onion
Additional freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Place corn on baking sheet. Brush with 1 tablespoon olive oil. Roast corn until tender and brown in spots, turning occasionally, about 40 minutes. Remove corn from oven. Toss mushrooms with chopped thyme and 1 tablespoon oil on large baking sheet. Sprinkle with salt and pepper. Roast mushrooms until tender and beginning to turn golden, stirring once, about 15 minutes.
  • Cut corn kernels off cobs. Reserve 1/2 cup corn in small bowl. Combine remaining corn and 1/2 cup chicken stock in processor. Blend until almost smooth. Set corn puree aside.
  • Bring 5 1/4 cups chicken stock to simmer in large pot. Reduce heat to low; keep stock hot.
  • Heat remaining 2 tablespoons oil in heavy large saucepan over medium heat. Add onion and sauté 2 minutes. Add rice; stir 3 minutes. Add wine; stir until liquid is absorbed, about 2 minutes. Add 1 cup hot stock. Simmer until liquid is absorbed, stirring often. Continue adding stock 1/2 cup at a time until rice is tender but still slightly firm in center and mixture is creamy, simmering until stock is absorbed before each addition and stirring often, about 25 minutes.
  • Mix corn puree, reserved corn kernerls, half of mushrooms, spinach, 2 tablespoons Parmesan cheese and butter into risotto. Stir in 1/2 cup chicken stock to moisten if necessary. Season to taste with salt and pepper. Remove from heat. Spoon risotto into soup bowls. Top with remaining mushrooms. Sprinkle with chives. Serve, passing additional Parmesan cheese separately.

Steps:

  • Preheat oven to 325 degrees. With foil, line a baking sheet large enough to hold mushrooms in a single layer.
  • Sprinkle baking sheet with wine, olive oil, garlic and herbs. Place mushrooms on baking sheet, brown side up, then sprinkle lightly with salt and pepper. Place in oven and roast for 20 minutes.
  • Turn mushrooms over, roast another 10 minutes, then remove from oven. Serve mushrooms warm as a first course, side dish or on a salad. Or set them aside to grill before serving, to saute or to use in other recipes.

Steps:

  • Preheat oven to 400 degrees.
