ROASTED CHICKEN WITH TANGERINES AND OLIVES
Tangerine slices add sweetness and zest to this roasted chicken dish, which is great over couscous or alongside roasted potatoes.

- Preheat oven to 400 degrees. Pat chicken dry; arrange pieces, skin side up, in a roasting pan or on a rimmed baking sheet. Season with salt and pepper. Add tangerines and olives to pan. Roast 30 minutes.
- In a small bowl, whisk together tangerine juice and honey. Remove pan from oven, brush chicken with tangerine-juice mixture, and return to oven. Roast until chicken is golden and cooked through, about 10 minutes. Serve chicken with tangerines and olives.

- Preheat the oven to 425°. Set the chicken on a rack in a roasting pan and stuff the cavity with the garlic, rosemary and 4 of the tangerine halves. Tie the legs together. Juice the remaining 2 tangerine halves. Rub the oil over the chicken. Pour the wine and tangerine juice over the chicken, drizzle on the honey and season with salt and pepper.
- Roast the chicken for 20 minutes. Add 1 cup of the broth to the pan, cover the pan with foil and reduce the oven temperature to 375°. Roast the chicken for 40 minutes. Add the remaining 3/4 cup of broth to the roasting pan. Cover and roast for 50 minutes longer, or until an instant-read thermometer inserted in an inner thigh registers 165°.
- Transfer the chicken to a carving board and let rest for 15 minutes. Strain the pan juices into a saucepan and skim the fat. Carve the chicken and serve with the pan juices.

- Preheat the oven to 475ºF. In a mixing bowl, whisk together the Pernod, olive oil, orange and lemon juices, mustard, brown sugar, and sea salt. Season with black pepper, to taste.
- Place the chicken skin side up in a large roasting pan. Season with sea salt and black pepper. Then, add the tangerine slices, thyme sprigs, onion and fennel wedges, and the fennel seeds into the pan. Pour the sauce over the top of the chicken and gently toss everything together with your hands.
- Roast the chicken at 475º for 45 minutes. Turn the heat down to 400º and cook for another 10 minutes. Remove the roasting pan from the oven. Transfer the chicken, tangerines, onion, and fennel pieces with juices to a serving platter. Let rest 5 to 10 minutes before serving.
