LEMON BASIL CHICKEN
Fabulous lemon basil chicken dish that is always a crowd pleaser! Quick and easy, this recipe never fails. Serve plain or over rice.

Steps:
- Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
- Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
- Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

BASIL CHICKEN SANDWICHES
"I got the inspiration for this recipe when I knew my parents and in-laws were coming to see our new home," shares Kerry Durgin Krebs of New Market, Maryland. "My mother-in-law has food allergies, my father-in-law has some very specific food preferences and my parents appreciate light meals. I created this chicken sandwich with fresh basil for our lunch."

- In a bowl, combine the pepper, salt and paprika; sprinkle over chicken slices. In a nonstick skillet over medium-high heat, cook chicken in 2 tablespoons salad dressing for 4-5 minutes on each side or until chicken is no longer pink. , Brush remaining salad dressing on rolls. Place basil leaves on rolls; top with chicken and red peppers. Sprinkle with Romano cheese.

ROASTED CHICKEN SANDWICH - SWEET BASIL

- Preheat oven to 400 Place chix in a roasting pan and then rub with 1 tbls of garlic, 2 tbls of the rosemary, and a pinch of S&P. Place the pan on the bottom oven rack and roast the chx for 45 mins, or until the skin is brown and the meat in between the thigh and breast is light pink. Seperate the meat form the bones and set asside reserving the bones fpr chx stock. In a large skillet, heat the OO over Med-high. Add the remaining tbls of garlic, the remaining tbls of rosemary, and the marinated onions. Saute the mixture for 5 mins or until the ingredients are lightly toasted. Add the chx meat and the white wine and bring to a boil and simmer for 30 secs of until deglazed. Add the tomatoes, caramelized onions, stock, balsamic vinegar, basil, and parsley. bring to a boil, decrease the heat, and simmer for 5 to 10 mins, until most of the liquid is reduced. Remove the skillet from the heat and swill in the butter.
SALAMI, MOZZARELLA AND ROASTED RED PEPPER SANDWICH
Steps:
- Use a serrated knife to cut the Italian sub roll in half. Place sub roll on butcher or wax paper and drizzle both sides with a really nice olive oil.
- Add mozzarella to one-half and sprinkle with salt. Next, add roasted red peppers, genoa salami, and a handful of fresh washed basil.
- Close the sandwich and tightly wrap the butcher or wax paper around it. Roll and cut down the middle. Serve immediately or wrap it up for later. The sandwich is good for 24 hours if refrigerated properly.
