This is a slow-roasted version of the stove-top tomato sauce, and it's jam-packed with flavor. 1 pound, 6 ounces cherry tomatoes
3 cloves garlic, smashed
1/2 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh thyme
2 teaspoons packed light-brown sugar
1 teaspoon coarse salt

Steps:

  • Preheat oven to 325 degrees. Mix together tomatoes and garlic in a nonreactive 9-by-13-inch baking dish. Whisk together oil, vinegar, thyme, brown sugar, and salt in a bowl. Drizzle over tomato mixture.
  • Bake until tomatoes are softened and caramelized, about 1 hour. Serve warm or at room temperature. Sauce can be stored in refrigerator up to 5 days; let cool before storing.

2 pints cherry tomatoes
3 garlic cloves, peeled and thinly sliced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1/4 cup packed fresh basil leaf, torn if large

Steps:

  • Heat oven to 400°F.
  • Combine all the ingredients except the basil in a roasting pan.
  • Roast for 20 minutes, stirring occasionally, until the tomatoes are just bursting.
  • Carefully transfer the tomatoes to a bowl and set aside.
  • Place the roasting pan on the stove over medium heat (or transfer the liquid to a small saucepan) and reduce liquid until slightly thickened, about 5 minutes.
  • Toss the tomatoes with the basil.
  • Drizzle some of the thickened balsamic sauce on each serving.

An amazing way to intensify the flavours of a tomato glut. A pile of soft and sticky tomatoes with a concentrated tomatoey flavour and a hint of garlic and balsamic vinegar.

500g cherry tomatoes, halved
6 garlic cloves, peeled and sliced into thin slivers
2 tbsps balsamic vinegar
4 tbsps extra virgin olive oil
freshly ground black pepper
2 tsps Maldon salt

Steps:

  • Preheat oven to 170C/fan 150C/gas 5. In a roasting tin or ceramic dish, layer the halved cherry tomatoes in a single layer, cut side up.
  • Slip the garlic slivers neatly into the tomato halves, amongst the tomato seeds. Make sure they are tucked well in so they cook inside the tomatoes, rather than risk overcooking outside the tomatoes. Drizzle with the olive oil and sprinkle over the balsamic vinegar, seasoning well with the salt and pepper.
  • Roast in the oven for 45 minutes, checking to ensure they do not burn. Reduce heat if they char too quickly. They should come out soft and slightly charred on the edges.
  • Either serve immediately with crusty bread to mop up the delicious garlicy juices or leave until cool and serve later. The longer they stand, the more intensified the flavour. Perfect as a starter with a green crispy salad on the side.

This recipe takes that sweetness, complements it with fresh herbs and a touch of heat from red pepper flakes, with some low-fat ricotta to smooth it all out. ½ pound tomatoes, roughly chopped

3 tablespoons chicken broth

½ teaspoon freshly ground black pepper
¼ cup julienned fresh basil leaves
2 tablespoons chopped flat-leaf parsley

12 ounces whole wheat linguine

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine all tomatoes, garlic, chicken broth, olive oil, balsamic vinegar, red pepper flakes, salt, and pepper in a large, glass baking dish; toss to coat.
  • Roast in the middle of the preheated oven, stirring regularly, until tomatoes are tender, about 45 minutes. Remove from the oven and stir in basil, parsley, and oregano.
  • When the tomatoes have been roasting for about 35 minutes, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, 5 to 7 minutes (cook for 2 minutes less than package directions.) Drain and return to the pot.
  • Add the roasted tomatoes and herbs to the linguine and cook over medium-low heat for 2 minutes. Add ricotta cheese and stir until melted and smooth.
  • Serve topped with Pecorino Romano cheese.

  • GET AHEAD Halve the tomatoes, placing them in a large roasting tray as you go. Halve the bulb of garlic across the middle and add to the tray. 8-10 fresh basil leaves, chopped
1 to 2 tablespoons of pure grape seed oil
1 clove of garlic or garlic powder
fresh cracked sea salt and cracked pepper

Steps:

  • Line the bottom of Pyrex pie plate with washed and halved tomatoes add chopped basil, oil, garlic, salt and pepper. Coat thoroughly. Stir gently 2-3 times during cooking. Sauce will thicken and caramelize a bit. Bake at 425 for a half hour - lower to 400 for remaining time. Let cool for a while. Sprinkle with parmesan cheese, and serve with corn chips which I prefer. It could also be served with pasta. Delicious!!!
