TWICE-BAKED POTATOES WITH ROASTED GARLIC AND CHEDDAR

Steps:
- Preheat oven to 400 degrees F. Rub potato skins with oil, sprinkle with salt and pepper and rub potatoes to coat. Bake potatoes in preheated oven 50-60 minutes, or until soft. Do not wrap potatoes in foil. Remove potatoes from oven and slice skin off the tops. Scoop potato flesh into a large bowl, reserving intact skins. To potatoes, add all but two tablespoons of cheese plus egg, butter, roasted garlic and liquid smoke if using. Mash potatoes while gradually adding milk. Spoon mixture into skins and top with remaining cheese. Bake for an additional 15 minutes or until golden brown.
EASY CHEDDAR POTATO BAKE
This is a really great tater recipe, it's one I have been making for a long time, not only is it easy to make it's so good! You really don't have to have the exact amounts for this recipe, throw in another potato if desired, use as much cheese as as you like!

Steps:
- Set oven to 425 degrees.
- Butter a shallow baking sish.
- Thinly slice the potatoes, and place in the baking dish.
- In a small saucepan, heat butter, onion, salt, pepper, garlic powder and thyme until the butter is melted.
- Drizzle over potatoes.
- Cover, and bake for 45 minutes, or until potatoes tender.
- Remove from oven, sprinkle with cheese and parsley.
- Return to oven and bake for another 10-15 minutes longer, or until cheese is melted.

CHEESY GARLIC HERB ROASTED POTATOES
We really loved these simple cheesy herb roasted potatoes. It's a delicious side dish that would be fantastic with roasted chicken or a steak. The combination of herbs pair well together. The cheese on top is a yummy final touch.

Steps:
- 1. Preheat oven to 375 degrees. Line a high sided baking pan or dish with foil. Grease lightly.
- 2. Combine cut potatoes, melted butter, and other ingredients (except cheese) into a bag. Mix together until coated.
- 3. Arrange in pan or dish in a single layer. Sprinkle with salt and pepper. Bake for 45 minutes until potatoes are tender and lightly browned.
- 4. Add cheese all over the top of the potatoes. Bake until cheese is melted.
- 5. Let sit for 10 minutes and enjoy!

- Bake potatoes as directed; let stand about 10 minutes. Cut a lengthwise slice off the top of each baked potato; discard skin from slices and place pulp in a bowl. Scoop out potato pulp; add to the bowl.
- Mash the potato pulp with a potato masher or an electric mixer on low speed. Add sour cream, garlic salt, and pepper; beat until smooth. (If necessary, stir in 1 to 2 tablespoons milk to reach desired consistency.) Season to taste with salt and additional black pepper. Stir in 1/2 cup of the cheddar cheese and, if desired, chives. Spoon the mashed potato mixture into the potato shells. Place in a 2-quart baking dish.
