- Add the roasted, salted cashew nuts to the food processor and process. It will start off crumbly then will start to clump and stick to the sides. Stop the food processor and scrape down the sides and then start it up again.
- While the machine is running, pour in the melted coconut oil.
- Keep processing until it reaches a smooth, creamy cashew butter consistency.

ROASTED CASHEW BUTTER
Cashews have a relatively sweet flavor and a fairly soft texture, and are used to make all sorts of dairy-free alternatives, such as milk, cheese and ice cream. They also make a delightfully creamy nut butter. Roasting the raw nuts before blending coaxes out the nuttiest flavor. Flax seeds, sesame seeds and poppy seeds are all great add-ins for crunch, but you could also stir in some tahini, which intensifies the flavor and adds even more creaminess.

- Heat oven to 350 degrees. Spread nuts in an even layer on a rimmed baking sheet. Bake until golden and nicely toasted, about 20 minutes, stirring halfway through. Transfer to a rack and cool completely, 30 minutes.
- Place nuts in a food processor and purée until smooth, about 8 minutes, scraping the sides and bottom of the bowl as needed (mixture may clump up, but will eventually become creamy). Season to taste with salt, if desired. Cashew butter will keep in an airtight container in the refrigerator for at least 3 weeks.

- Preheat oven to 350 degrees F.
- Spread your cashews out on a baking sheet and bake for 8-10 minutes or until cashews are lightly roasted. Watch carefully to ensure they don't burn
- Remove cashews from oven and let cool slightly until they can be handled.
- Add your cashews to your food processor or high speed blender and process until broken down into small bits. This usually takes under 1 minute.
- Add in your remaining ingredients and process until everything comes together. Your cashew butter will likely form into a ball at which point you'll break down the ball and continue processing. Repeat this process about 10 times until creamy consistency is reached.
- Cashew butter rarely gets drippy but the more you process it the creamier it will get. Feel free to stop whenever it's reached your consistency preference.

- Melt butter in microwave in microwave safe dish and stir in measured honey. You can melt in small bursts to avoid burning your butter.
- Pour cashews into a large mixing bowl. You are going to stir them around so have enough room.
- Pour butter honey mixture over cashews and gently toss to coat all pieces.
- Spread honey coated nuts on a flat baking sheet lined with parchment paper. (If you do not have parchment paper - you can instead butter the pan surface well.)
- If desired, sprinkle a bit of sea salt on the honey coated cashews. This can be repeated when they are removed from the oven if you want a saltier taste.
- Place cashews in an oven preheated to 325° F and cook for about 12-14 minutes - stirring every 4 minutes to promote even cooking. Don't let them burn - oven cook times can vary. Remove from over and let cool for 4-5 minutes. Take a spatula or wooden spoon and stir the cooling nuts. Don't eat them yet !! You will burn your tongue! This stir during the cooling process helps prevent some sticking together.
- When completely cool, your honey roasted cashews are ready to enjoy. Store them in an air-tight container on the counter for 4-5 days. If they last that long.

- Add the raw cashews to a food processor (not a blender!). Cashews are very dry, with a low oil content, so they do not blend up well in a blender, even a Vitamix. You will want to keep going until the cashew butter is soft and flowy, almost like a frosting.
- Process for 10 minutes or so, stopping every 3 minutes to scrape down the sides. The cashew butter will go through stages of thickness, and you will need to stop and push the cashews down the sides and break up the clumps a few times. NOTE: I have an 11 cup food processor. But if you have a smaller processor (like a 7 cup) or a less powerful one, you will likely have large chunks forming and have to break up the clumps many, many more times in the beginning than I did. Be patient and do not add any liquid! It will take several more minutes, but just keep going until it gets to the paste stage.
- Please refer to the actual post for step-by-step visual photos, it will help. Keep processing until it has a thick, creamy consistency, and then process even further until it is no longer stiff. Even when you think you are done, go more. It should drip off of a spoon. Again, if you have a small food processor, this could take several more minutes than mine did.
- Before using in my dessert recipes, make sure it has cooled off to room temperature, as it will be quite warm. Store in an airtight container in the pantry for up to 2 weeks or in the fridge for up to 2 months.
